Revisiting Sifting with the Fellow Shimmy Coffee Sieve | Coffee with April

  • This week, we're revisiting sifting when brewing filter coffee. Sifting can change the cup profile of brewed coffee quite considerably, and this week we test the Shimmy Coffee Sieve from Fellow.
    The Shimmy is a simple design intended to help the user remove very fine coffee particles in brewed coffee, specifically those 200µm or below. It is thought that these particles are responsible for undesirable flavours in brewed coffee as well as contributing to a reduction in flow rate due to paper filter clogging.

    I have one of these, and I don't use it every day, but I do use it at least once or twice each time I try a new coffee. It tones down some of the unevenness in conical brews, I think. Whether it makes the cups better is subjective, but it's certainly interesting!

    I consistently get sweeter and cleaner coffee, vs wo on the same grind, temp and dwell time.

    20 grams ground, then sifted...about 2 grams in fines were removed by sifting and then of the remaining 18 grams, 12 of the 18 were used in the brew. Do I have this correct?

      That is correct, however, you would be better off using less coffee initially.

    I know english isn't your mother tongue but you're pronouncing sieve wrong.

      Idk if it’s “wrong.” Just a difference in accent. Like how some people say en-velope, and some say on-velope when pronouncing “envelope.” Or like Canadians saying “aboot” when pronouncing “about”
