What a great day! Sara's brother Dave came to visit us and we cooked the real Carbonara recipe (thank you Chef Dave!! @davebertagnolli)
Spaghetti alla Carbonara is a well-known dish, but most people we know get it completely wrong, either adding milk or cream or letting the eggs become scrambled. This recipe is the real thing. It was brought to Lazio from Umbria by coal men (carbonari), who came to sell charcoal to the Romans. Since then it has been adopted by the Romans and is famous worldwide. Enjoy!
Ingredients
* 500g Spaghetti or Spaghettoni (the largest spaghetti)
* 180g Guanciale (the cheek of the pork) or pancetta (Italian bacon) cut into small cubes.
* Water
* 2 large eggs
* 100g Parmesan cheese (or aged pecorino) freshly grated.
* Freshly ground black pepper

We have the same trouble here in BC, our pine trees are just to come back! They sprayed foray 48b, for the pine beetle that was killing the trees! It killed most of the birds, made a lot of people sick, decimated the bees! The pine trees trees are coming back now! You live in paradise guys! Beautiful!
So sad that it killed off the animal life.

Both versions of the carbonara look so good and I will definitely try them, maybe the bacon and zucchini together as someone else suggested. Already have made your tiramisu twice, both times successful! The second batch I added some chocolate dipped almond biscotti to the bottom layer. Everyone loved it!! Almost my same recipe but I cook onions with the bacon and add a sliver of fresh garlic. This is my favorite meal fro brunch , as we call it here......between breakfast and lunch. Great show today.

I will try both styles. Your bacon is leaner than ours in America so I will need to find panchetta. I love that their isn’t cream or milk. Thanks to Dave he is a good chef obviously. Loved the walk through the woods. I am still exploring the area around Torento to figure out where you are located. I knew so little about Italian geography that this has been so much fun.
