- Soup in Ecuador is so diverse, depending on the region if you're in the coast, the Andes, the Amazon Galapagos, but also it is one of the most important meals and that is because it is comforting, it is refreshing, it can be fulfilling and it can also cure a hangover.

Hi I'm Ayngelina and my full time job is my site BaconisMagic.ca it's all about the best food around the world and how to make it at home.
In 2010 I left a job in advertising, 5 year relationship and sold all my possessions to travel the world. In the last ten years I've had some crazy experiences and even owned a restaurant in Toronto at one time. And prior to 2020 I had been based in Cuba.
When the world shut down I returned to Canada and decided to teach myself video. I wanted to share more than just words and photos but to show people the adventures I have learning about food around the world.
I'm not married. I have no kids. But I do have a lot of local friends who help me discover the best local tips.

Great video as always. Us ecuadorians really love soups! We would call the one made with unripe banana “Repe”, and the other one next to it “Sopa de arveja” or pea soup.
The toasted bow tie is very typical to have at home made by moms. Ensumacao just as Encocao are actually spelled like that, no need for an extra D in there. In 40 years I haven’t had the mocho lamb soup yet!
I enjoy watching you eat almost as much as I enjoy eating mysel! Haha.
Oh I am so pleased, I feel like I just scratched the surface for soups, there are so many in Ecuador.
Vey good, you are missing caldo de mondongo, fanesca, caldo de pata de vaca y yaguarlocro which are some of the most unique and delicious Ecuadorian soups.
Oh you are right! These will be on my list for part 2!
For part two I would suggest one of my favourite, Sancocho de hueso blanco, in Guayaquil, it’s a meat broth with green platain purée, lots of lemon and encurtido from red onion. It is so soft, and very different from the other soups made with verde.

Yummy 😋 Ecuadorian soups 🍲 viche from manabi it’s delicious the best 🤤 parihuela in Ecuador its sopa marinera but some people called parihuela wich is a soup from Peru 🇵🇪 but taste totally different … I love caldo de pata 🍲 caldo de gallina uff sancocho loveeee it and locro de papa, 🥑 👌👌

You’re moving that’s so exciting! There are so many great places in Cuenca for quality food at affordable prices. I think it’s the best city in Ecuador for this.
@@ayngelina Yup! Officially here full time as of March 30th. And completely agreed! The food is one of the main reasons we chose Cuenca. It's phenomenal. Also, wanted to add, it's been driving my husband nuts that he couldn't figure out a soup he tried and loved. On review of your video of the different soups he figured out it was Caldo de Bola 😁
Wait he doesn’t love encebollado??? Has it had it on the coast? I know Ecuador is small but I only eat seafood on the coast, especially as in the Andes they often use catfish in it instead of tuna.
@@ayngelina So far we've only tried encebollado in Cuenca at a couple of places and it was pretty fishy tasting. I'm sure there are good spots for it but we've not found them yet hahaha
Noooo encebollado is not to be eaten in the Andes! Please try it on the coast, put some lime on it and let me know what you think.
I never eat seafood in Cuenca, I don’t care what anyone says about it coming in fresh, as someone who grew up on the coast I only trust other people who grew up with seafood to know how to cook it.
Most places leave the feet on the Chicken. Unlike the usa. So many differences and so fun. ~☆ crab in soup mmmmm tasty ~

Locro is my favourite in the Andes and encebollado on the coast.
Ecuador es el país de las miles de sopas, somos el segundo país con más cantidad de sopas en el mundo entre 4000 sopas se estima que tenemos, solo China nos gana, por eso es que creo que ningún ecuatoriano puede saber toda la gastronomía de Ecuador, es demasiado!

Encebollado is my favourite but whatever you do, DO NOT eat it in the Andes. You must have it first on the coast. The Andes has its own delicious soups and while you can find encebollado there it won't be as good as sometimes they use catfish.

A lot of the seafood in Peru is actually from Ecuador, it's better quality

Do you can compare ecuadorian food vs peruvian food? Thank you
You will find some similarities with southern Ecuadorian food and northern Peruvian food. And some dishes may be similar but they have evolved differently due to ingredients. While Peru and Ecuador look small they are quite large and diverse so the food you find on the coast is different than the Andes, different than the Amazon.

I don't know if it's one of the most important but it is one of the tastiest and one of two in Latin America that really embraces spice.

Tome su sancocho, pero agarre con cuidado el choclo para que no se queme. Hay caldos donde nadan bolitas y bolones, patas, papas, mellocos, yucas. Hasta el almuerzo más barato empieza con su sopita.
