      I thought the cameraman films it in the way he is told to, or he can get extra, and I assumed that the end result being good is thanks to the editor who edits the footage... sucks to be editor, they don't really seem to get credits for their work from people..

      @@jody024 It's tuna and they are farming them(Making them reproduce and killing off the full grown). Tuna is very plentiful, and farming does not endanger the species because they are not being removed from the environment.

      In fact farming tuna is actually equally as bad if not worse than wild caught tuna because farmers must deplete large amounts of pelagic school fish in order to feed their tuna species which leads to imbalances in the ecosystem

      Blue Fin Tuna in Japan are farm raised, and the stocks they get is from the wild. They get their tuna fry from the wild. and then grow them in captivity. Also induced breeding (getting babies from mated pair) is highly unlikely, so their only way to stock up is to depend on fisheries for frys.
      Imagine this, by catching young wild frys in the , lesser tuna fry grow up to be adult, lesser adult means that the population of breeding wild tuna will be lesser, and then this practice will cause a decline in population.
      Yes the tuna is farm raised, but not farm breed. It is equally damaging to the environment and species. Not to mention the tuna is an apex predator(higher on foodchain) and a whole lot more energy investment is required. This usually comes in the form of smaller pelagic fishes. Using these fishes is actually not sustainable as they usually consist of frys of other species. Which can be heavily depleted from the wild...
      so tldr: it is still bad, just stop eating tuna haha

    I was a commercial fisherman in the South Pacific primarily fishing for bluefin, yellowfin, albacore. From 2002-2022 these fish have become scarce. We used to fill the boat 80 tons with hand caught tuna in 4-8 weeks. Now it’s not possible. Love these videos. Appreciate them while they last because the fish won’t 😉

    I’ve tried it near the Tsukiji fish market. Bluefin tuna is out of this world.
    It’s nice that this is farmed.
    It’s also nice that in lots of Japanese cooking, this video for example, there isn’t wastage of different parts of the animal. In many styles of cooking in Asia it’s much more common to be eating the innards of animals and other less conventional parts.
    Conservation is important of course. I think people would still eat if even if it got even more expensive through fishing them with non commercial methods. Getting a complete ban of fishing them is pretty unlikely.

      That’s unfortunate.
      Though it’s incredibly expensive, some fisherman still catch them via rod and in many places such as where I live have strict licensing for fishing them and restricts the amount that is taken. I think that would probably be the better route.

      apparently they're farm raised, which doesn't mean farm bred. this just means they catch the tuna and then raise them for food, so it might not actually mean they're putting back any into the environment.

      @Neo Papa Hate to be a downer, but even fish that are bred and raised in farms aren't necessarily sustainable. In fact, farm raised predatory fish like tuna and salmon can be less sustainable than their wild caught equivalents, because they need to be fed other fish. This means that we're catching smaller fish, which could be eaten by people and are a more sustainable option, to merely feed other fish. There are also problems with pollution that are a result of farmed fish typically living in sheltered bays, producing lots of poop and pee, and causing eutrophication that can lead to an explosion of algae and ultimately kill other sea life by using up the oxygen in the water. This isn't to say that aquaculture can't be done sustainably, but it's important to consider these things when buying seafood.

      Im a sushi chef based in Los Angeles and you cant tell how many pieces of nigiri can come out of that fish. Different chefs will cut the blocks of tuna in different sizes. Theyll cut the fish per order to maintain freshness.

      I think they use the Yellow Fin is to relfect the more sustainable and affordable option. The comment regarding Blue Fin is that it is expensive and highly sought to the point of overfishing. The chef also talks about how he is offering a more affordable dining option.

      All bluefin tuna species have some yellow parts though, google yellowfin tuna and you'll see that's not it.

      yellowfin has a yellow stripe from head to tail separating its back and belly...bluefin has more of a gradient...both have yellow fins

    Beautifully done! 👌 The visuals and camera angles along with the beautiful picked music for the background. Felt like I was listening to final fantasy music while learning about tuna lol. Great work and love the video in a big fan of sushi so this video was great to watch. Hate reading subtitles though it takes away from the visuals it's not cause I'm lazy lol.

    I wonder if we turn bluefin tuna into jerky slices, I wonder hows the taste? I try making different fish jerky and most of them taste great not unless you don't like the fishy smell. I bet bluefin tuna as jerky would taste great based on their fat content. I tried salmon and man, taste heavenly . . .

      Tuna is based on how frsh its it. Shoyld be red and if sliced thun coukd be cooked on acid like leman and should melt on your mouth like butter just like flitet mignon. You dry it bood metabolizes making tune white just like cheap suhi and woyld be equivalent to anu dru fish. No point to make exoensive meat into cheap meat.
