Voy a ser muy obvia al decir que mi versión favorita es la de Español Mexicano :P
No solo crecí con esa versión, sino que es uno de los dubs que tiene más emoción en esta escena. Lo único malo que podría decir sobre esto (pero ya estería exagerando) es que Shrek suena muy diferente a la versión original (aunque si consideras que Shrek tiene más o menos la misma edad que Fiona, que es una adulta joven de como de 20 años, no está tan mal que le pusieran una voz más joven a Shrek).

También crecí con el doblaje Mexicano y, en mi opinión personal, es la que mejor se adapta a la película entre tantas más (sin desmerecer a ninguna, todas tienen su parte buena y eso es de agradecer). Tiene más chispa, más picardía, más doble sentido, cosas que los otros países les falta un poquito ponerlo en práctica, pero eso ya queda a decisión de las personas que hacen doblaje y del país que venga. Pero, a pesar de todo, me encanta escuchar partes de películas en otros idiomas, ya que así aprendo algo del mismo y me entretiene escuchar el acento e idioma de otros países, me es muy interesante jeje. Saludos.
El doblaje mexicano y el original en inglés me gustan. Del original me gusta mucho la voz de Eddie Murphy. Le da personalidad a Burro y suena natural.
Tiene más fuerza su interpretación que la de Eugenio Derbez.
Con Shrek me pasa al revés. A mi gusto la voz de Alfonso Obregón fue mejor que la original, con Mike Myers.
Aunque Mike lo hace bien, su voz es aguda y se siente forzada. No sientes que realmente sea un ogro. Piensas que en el fondo sigue siendo humano (aunque al final lo era).
Con Alfonso sientes que cuando Shrek se enoja, se va a comer a Burro o algo así. Tiene la voz de un ogro. Te olvidas que es un ser humano.

I kinda find it funny to look at movies in different languages and find small but nice differences.
For example. in the english version, Shrek calls Donkey a "dense, irritating miniature piece of burden," in german the literal translation would be "you dimwitted, obtuse miniature cargo transportation animal."

I can imagine a Dreamworks representative explaining to every Shrek Dub actor *"Okay, instead of saying in your language, you're going to say Bye-Bye in english for no reason whatsoever"*
The priority is to look like they are moving the lips according to the sounds. Especially if you consider that Shrek has a big mouth and besides that at the moment he says "bye bye" he's right in front of the camera.
I know I'm 2 years too late but bye bye is a well known enough English phrase in most countries, hearing a character say bye bye is pretty much like saying OK no one will get confused with bye bye.
And not every dub says bye bye.
