  • LEARN HOW TO MAKE COCONUT CHICKPEA BASMATI RICE RECIPE
LAY HO MA!! This rice dish is a real treat. It's incredible fragrant, salty, sweet, smokey, and absolutely delicious. Join me and learn how to make this beautiful coconut chickpea fried rice recipe. Let's begin.
    Ingredients:
    1 cup basmati rice
    1 cup coconut milk
    1/2 red onion
    1/4 cup hazelnuts
    1 cup broccolini (chopped)
    1 tbsp coconut oil
    1 cup canned chickpeas
    1/2 tbsp garlic powder
    1 tsp chili powder
    1 tbsp smoked paprika
    2 tsp turmeric
    generous pinch of salt
    1/2 cup shredded coconut
    few sprigs cilantro
    Directions:
    1. Place 1 cup of basmati rice into a small sauce pan. Wash and drain the rice a couple of times to get rid of the excess starch
    2. Toast the rice for a couple of minutes on medium high heat. Then, add in 1 cup of coconut milk
    3. When the milk starts to bubble, give the rice a good stir to make sure nothing is grabbing the bottom of the pan. Then, cover and cook on medium low for 15min
    4. Dice the red onion, coarsely chop the hazelnuts, and chop the broccolini
    5. After 15min, turn the heat off and let the rice steam further for 10min
    6. Heat up a non stick pan on medium heat. Add the coconut oil
    7. Add the red onion and chickpeas followed by the garlic powder, chili powder, smoked paprika, turmeric, and salt
    8. Add in the hazelnuts and broccolini
    9. Sauté for 3-4min
    10. Add the shredded coconut. Sauté for another couple of minutes and taste and adjust the seasoning if needed
    11. Plate the rice and add the coconut chickpeas on top. Garnish with some freshly chopped cilantro

As an Indian I typically approach South Asian recipes as put forward by non-South Asians with a healthy dose of skepticism. They usually fall short on flavor and while I appreciate the easy, quicker cooking time, they don't quite hit the note. But this recipe was hands down a family favorite. We all love it and thank you for not making it a weird flavorless version. I follow a bunch of your recipes and none of them have managed to disappoint so far. Your videos are also so on point without useless banter and that 'salesman voice' that many videos tend to have.

Not sure if a 1:1 ratio or f rice to coconut milk is working for me. Just mush, added more water to get closer to 2:1 ratio of liquid to rice. Also in the video, that looks like 2 cups of rice?

    • @snlarini99
      @snlarini99 Před rokem

@@7skeptic7 I thought it was 2 cups at first and then concluded it's a 1/2 cup measure hence 2 dips = 1 cup. As for coconut rice, rice (and oats too) soaks up water better than milk (dairy or non-dairy) so playing around with the ratios of milk to water is a good idea. When I used to make coconut rice, I did use a mix of coconut milk and water. Also when I cook white rice, I use 1 cup rice and 1 3/4 cups water. I tried 1 1/2 cups water like said recipe and I got chalky underdone rice. And it was Tilda (premium brand)! Hope that helps :)

A few weeKs ago, CZcams suggested your channel. Almost didn’t check it out since I normally would rather read a recipe than watch a video (but you are kind enough to provide both). I wasn’t even sure it would be entirely vegan, but I am so glad I did. My husband died two months ago. I lost some interest in cooking and eating. But thanks to you, I am doing both again and loving it! Your recipes are perfect...healthy but still fun, cooking from scratch but not too complicated. So many people who develop recipes are more about their egos and showing off, but you are all about the food, letting it speak for itself while sharing your joy in creating and eating it. I can’t thank you enough. You thought you are just providing recipes but you’ve given me anew lease on life, helping me cook with confidence, ease, and joy...and then enjoying every mouthful.

For those reading comments, I didn't have hazelnuts, so used almonds. Veggies were a little dry and all my flavor was sticking to the pan; I just added a couple tblsps of water. I was needing a little kick tonight so I added about 1/4tsp of red pepper flakes and a squeeze of fresh lime juice. Also used brown basmati rice so had to add a little more milk and cook a few minutes longer. De-lish!!

But since I am game to trying new things, I plunged ahead, and looking at the finished product, thought, well it does look like his at least. I dished up a bowl for myself, and tentatively took a small bite ....and It was delicious!!! Thank you so much! I will be making this again and again!

I just made this for dinner and it was delish! My husband loved it. One hint though when cooking the rice with coconut milk. I think the coconut milk you used for cereal is what is meant. I used the full fat thick stuff from Native Forest and the rice couldn't absorb it. I managed to save it though and my husband couldn't tell. Great dish! He wants me to make it again. Thank you Yeung Man!

I made this today and it's definitely a hearty meal, but I personally would omit the hazelnuts for my own taste. I'm not a fan of hazelnuts in salty dishes, but I decided to give it a try anyway and I felt that the hazelnuts seemed to take over. If an individual particularly enjoys hazelnuts, it's great and filling meal.
