6-8 TBSP OIL
1 CUP DICED ONION
1.5 TSP SALT
1 TBSP GINGER GARLIC PASTE
SPICE MIX:
1/2 TSP TURMERIC POWDER + 2 TSP CORIANDER POWDER + 2 TSP CURRY POWDER + 2 TSP CHILLI POWDER + 1.5 TSP KASHMIRI CHILLI POWDER + 1 TBSP DRY KASOORI METHI
1 CUP FRESH TOMATO PUREE
1 CAN CHICKPEA
1 BAG BABY SPINACH
1 CAN COCONUT MILK
1 HANDFUL FRESH CORIANDER
4-6 SLICED GREEN CHILLI

I learn so much from this channel. I've made base gravy maybe 20 times now and bring it to my parents on the weekends (we grew up eating Indian food together, their best friend owns Indian restaurants in NY for 40 plus years now) and they are so impressed with my skills. Really I just followed what Latif shows us. As of right now I can make convincing palak aloo, aloo gobi, vegetable korma and tikka. The phrase I know for this dish is chana palak, which I have not made yet, but I am going to make tonight and bring to my parent tomorrow. They are vegetation (I am not), so I love the to bring the non meat dishes to them.

I absolutely love Indian food and the moment I realised that you're basically using the same basic gravy (onion/garlic/ginger/salt/base-spice-mix/tomatoes) for a massive number of dishes my mind was blown. I've experimented a lot of the years, as long as you take your time with the onions and use enough fat the results are basically always good. I taste 0 difference when I throw the garlic/ginger mix in with the onions or after the onions have been caramalised, you just have to be careful not to burn them. At home that's fine as you're cooking at lower temps.
Has anyone tried freezing the gravy? Making batches with only the core spices (paprika, chili powder, cumin, coriander) and keeping in the fridge for a few days works fine.

I always make a big batch and freeze it in 1ltr portions, no issues at all
This has to be one of the best value home cooks in years, a tin and chickpeas is usually under £1, you can find spinach and fresh chillies for a similar price and tomatoes needn't be that expensive.

Latif's videos deserve more publicity. This chickpea curry is so simple yet awesome. Same goes for his other videos. No bs straight to business. Amount of tips and tricks I learned just by watching his videos are astonishing.
This recipe made me feel like I belong on Master Chef ha!! My family couldn't believe I'd cooked it!! Literally the best curry 🤤
I made this a 2nd time last weekend to take to a Christmas potluck party. It turned out quite differently to the first time (see my other comment from 6 months ago) and from how I saw Latif make it. The differences were: I doubled the size, and also I simmered it at the end for ~3-4 hours! Latif might say that "I bhuna-d it!" Since I was multitasking with work commitments I ended up getting to the point of adding the coconut milk in plenty of time, knowing that I couldn't do anything after that because of work. So I had it on simmer for that long. By the time I took it to the potluck, it was a deep, tan color. Plus it seemed thicker than before, which makes sense considering how long it had been heating. It got a massive two thumbs up from everyone at the potluck, and my wife told me that whatever I did differently this time, to make sure I did it again the next time. No pressure.

I love any recipe that has kasuri methi in it. There was a wonderful Indian grocer where I used to live. I had come across a recipe that called for kasuri methi, but had never heard of it before. I looked on the shelves of the market, but couldn't find any. When I asked the grocer about it, he said all he had was a bulk bag for the adjoining restaurant. So he got out a sandwich baggie and put a handful into it and GAVE it to me. I went back the next week and bought a 4 ounce box that had just come in. I really, really miss that market and the wonderful people there.

I’ve made this twice now and it was gorgeous both times. Swapped out a couple of ingredients because I didn’t have all of them and it was still great. The second time, used home grown baby kale instead of spinach and added some left over new potatoes - it’s definitely a recipe that you can adapt and it’ll still be very tasty. Thanks so much Latif, you really inspired me!

I made this last night, Latif. But i used dried chickpeas that I soaked and boiled. I also use a can of coconut from a cheap supermarket brand which wasn't as thick or flavoursome as I had hoped. But damn, it tasted good!

It's one of my favourites. Beautifully cooked by Latif....personally I love to eat food where I know nothing has been killed for my stomach pleasure. This curry is utterly delicious. I'm not a veggie or vegan, but I love the plant based food that India is so famous for. Latif's cooking is an absolute joy to watch and the food he cooks is devine.

Thanks Chef, the base gravy is similar to mine. I never use curry powder but rest of the ingredients are same, we add a pinch of sugar and squeeze lemon as garnish. Ma Sha Allah

Some years ago, before the big shake destroyed the building, we had our favourite indian Restaurant here in Christchurch,NZ. called The Raj Mahal. They had one starter which was a meal in itself, "Wada", sort of a deep fried spicy mashed potato ball. Any chance you have such a recipe and could do a video of same?
