3 Korean Side Dishes Series #13 - Vegan (반찬, BanChan) | Aeri's Kitchen

  • Today, I will share 3 delicious Korean vegan side dish recipes with you.
    The fist vegan side is gluten free zucchini Jeon called “AeHoBak Jeon (애호박전)” using grated potato instead of flour.
    The second vegan side is cooked bok choy seasoned with soybean paste called “CheongGyeongChae DoenJangMuChim (청경채 된장 무침)”.
    For the last vegan side-dish, I will show you how to make soybean sprout japchae called “KongNaMul JapChae (콩나물 잡채) in Korean.

      @@aeriskitchen yes, i'm plant based for health so i eat ''vegan''. my favorite dish... there are so many, japchae, tteokbokki, kimchi-jeon, yachaejeon... actually any dish i can make plant based is wonderful! i have three daikon radishs in my fridge that my niece grew on her farm and was considering my options on how to use them, i'm leaning toward radish kimchi. 😁

    1. Right before filming this video, I got hurt for my finger and had to stop bleeding several times. You will see the bandage and cooking gloves (when I squeezed the bok choy) in this video. 😅 I'm okay now. I just wanted to tell you that it was a good decision not give up and make it work..so I could share this video with you today.
    2. I hope you enjoy watching Vicky too. I no can longer see her 😭 but I have other cute chipmunks friends in our yard. I might share some of the other chippies' clips too.
    3. Our boys said hi to you. (These side dishes were a little too spicy for Logan, that's why we skipped the taste testing for this video.)

      Yes, it was not easy to make her feel secure to come near me because she was very ~~~~ cautious. (She has few spots of scar on her body, so I guess she had a tough life...which makes more sense for surviving in the wild life.) Soon, after finally we got closer, she disappeared. 😭 I just hope she is safe and happy somewhere. Thank you for your sweet comment about my voice, my little sister... continuously pray for your mom.. Have a great weekend. 💕

    Thank you for these recipes Aeri. A year ago I discovered that I am severely gluten intolerant. So recipes like this help me to enjoy delicious Korean food 😊.

    하나 같이 맛있어 보이네요~~ 저도 전 뒤집는다고 후라이팬 흔들어 전 올렸다가 완전 실패만 했어요ㅜㅜ 도대체 어떻게해야 완벽하게 뒤집어지는지 ㅎㅎ 가족들이 한국음식도 잘 먹겠어요~ 애리님은 서양식, 한국식 음식 모두 능숙하게 잘 만드실것 같아요~~😍👍

      All these 3 side-dishes I shared in this video taste best in short time.. I recommend to eat the zucchini Jeon in the same day (That's why I made small portion for the recipe.), to keep the boy Choy side and the Japchae in the refrigetator and eat it in 1-3 days. You can serve the bok choy side cold but reheat the Japchae on a pan or microwave before serving..

      LOL Vicky!!! I prepared a feast for you (peanuts, sunflower seeds, almonds, pecans, walnuts, etc...), so pretty please COME BACK !!!!! hehe... I heard somewhere that most of the time, male chipmunks don't come to human beings...but female ones are more human friendly... It took very long time for Vicky to come to me, but she was pretty good once she felt more comfortable... so based on that, I thought Vicky is a girl.. lol However, you are right... there are times that I question if she is really a girl or not.. because she seems very strong and chases away all other chipmunks when they come near for the peanuts.. lol Btw, Bryson strongly insisted that I have to add that blooper cut for flipping pancake.. lol When he said... it is the way to cut the pancake in half, I had to laugh and laugh... yep.. sweet and funny boy ~~ 😍
