- A great Korean meal must always have one prominent feature: great banchan. Banchan is the foundation of the Korean meal, and it's the perfect expression of Korean sensibility and seasonality. Banchan is a spread of vegetables, meats, and small plates that are met to whet the appetite and also vary the meal.
In this episode of K-Town, host Matthew Kang goes to Jun Won, where he meets owner Jung Ye Jun and learns how they make banchan for their restaurant in Los Angeles, and also their standalone banchan store.

I'm an African American female who discovered Korean food 8 years ago and I am so addicted. I learned how to make a very small selection of the dishes thanks to wonderful Korean youtubers. However, I would so love to have access to this lady's banchan facility. That would be a dream come true.

I love this guy, because he is proud of his ethnic heritage. With all the racial hatred and tension going on in this country, we need more of people like him, who is proud of their ethnic heritage. This show is called K-Town btw, standing for KOREA Town, not Kentucky Town or whatever you were thinking of. I was disappointed in his interview and even the way he commented on her food. He just used the same descriptions over and over again. If he’s not fluent in Korean, why didn’t he find someone that speaks it fluently to translate ? And did anyone notice he used his fingers to grab the anchovies from the pan after she made it?!! Gross. Why didn’t he use chopsticks?!?!?
Matthew is so great - you can really tell he cares about food, but he isn't being pretentious about it.
Wait, did he just say the anchovies have been beheaded and guts removed? That must've taken so much effort.
TheSensation92 removing the head is easy I think, but I can't imagine removing the guts. Plus at the amount of anchovies to be worked on, must be really time consuming.

They have machines that can do it, just like shrimp. I seriously doubt someone is cleaning all those fish by hand.

One of my friends tried to visit this place when they were passing thru LA; it’s closed down now. 😭 The owners decided to focus more on the main restaurant.
It all looks so yummy. I have gotten into making Korean food. And the sides are amazing, just as good as the main dish. I am still learning.

I first discovered Korean food in the 90’s after I found H.O.T., a Kpop group. I remember being overwhelmed by the menu but every table around me had so many dishes - I asked the waitress if I could just have that. Imagine my shock when she told me I get all of them for free when I order an entree. And unlimited refills! That was the start of a beautiful love affair with Korean food.

I think Korean Cuisine has the most efficient way of daily homestyle food. It really save time, money and effort. It takes me awhile to understand what is Korean Cuisine. The closest to Korean Cuisine efficiency is Japanese Cuisine. Not the same mind you, just the closest that I can think off.

Thanks for including where she's from but it would be nice to know where in Korea that is. Also, if that makes a difference. There are some regions in S Korea that are known for amazing cooks. The women are highly sought after as wives because of how well they cook.
I only know the bare minimum from my omma. She's from Seoul and she says that a LOT of Korean immigrants from Korea here in the states are not from Seoul. Most people only know of Seoul here. So it would be cool to highlight other regions in Korea. Like I hear Busan has amazing seafood dishes because it's along the coast that's across from Japan.
Since the show is all about Korean food, it would be interesting to learn more about Korea too. Otherwise, you'll probably run out of material really quickly.

Mother-in-law has a vegan version. I am sure you can find it a Whole Foods, Amazon, et cetera.

Actually I am guilty of doing that as well. I just grew up saying the words "white people" in Chinese to refer to people not from the east. I heard my parents talking like that growing up so naturally I'm inclined to speak as they do. There is a stereotype in Korea that white people (europeans) can't handle spice well. I went to a restaurant in korea and they automatically assume I can't handle kimchi due to the spice or smell. I'm not even white, I'm just foreign (American). But back to your concern, yea he was singling white people out as not liking Korean food. Korean food is very pungent and most Americans don't like it (takes some time to get acclimated to it, and I speak mostly from my own experience as well as watching others living in Korea adjust). He probably naturally says white people but foreigner is a longer vocabulary. White people rolls off the tongue.

넌 외로운 꽃 - his dad speaks perfect English. So I'm guessing he grew up speaking English mostly. Most Korean Americans don't speak very good Korean if any at all. My brother sounds like an American when he speaks Korean.
I don't think there's a sense of shame. Actually I think because our English is that much better we do better in school in America. As much as you see a Korean face, he's ultimately American. He didn't grow up in Korea so you can't really expect him to speak perfect Korean. Even though it can be really difficult to listen to lol.
umiluv I'm a gyopo too & I spoke English all the time until I was in high school & was never sent to Korean school. I taught myself. Most Korean Americans just aren't committed to learning because they don't want to

Kavin - as a Korean American, I have to agree. I'd say Korean and Chinese food are near the bottom of my list of foods I want to eat. Japanese, Vietnamese, and Western foods are much higher for me. I even prefer Indian and Middle Eastern cuisine over Korean and Chinese food.
Even my omma doesn't eat Korean food for every meal. You just get tired of it. It's the same. Rice, banchan, meat, soup. Rinse and repeat. However, Korean and Chinese food occasionally is quite welcome. Just not ALL the time.
