    😋Thank you, very interesting! I made a smaller kefir cheese 8 month ago fully matured at room temperature, previous trial problems were desiccation, but that time I managed to solve it with a daily vaporization of salty water with a perfect taste at the end. Available in French.

    This is awesome, I would like to try it. I have a question though, you mentioned that it's possible to leave the cheese outside the fermentation chamber if you don't have one (which is my case 😅). So you leave it outside on the counter? For only 24 hours or until you see the Geotrichum candidum appear on the top (in that case, how long could it take)? Is it possible to leave it outside without covering with ash?
