    This beautiful double layered cheesecake is naturally colored with butterfly pea powder and made with part Greek yogurt. It is creamy, irresistible, and so easy to make! Butterfly pea powder is made from the blue, butterfly pea flower that is grown in South East Asia. It has an earthy taste like matcha green tea powder. It has been gaining popularity for its ability to turn purple when an acid is added and turn back to blue when something basic is added.

    Ingredients:
    For crust:
    65 g. or 3/4 c. graham cracker crumbs
    13 g. or 1 tbsp. granulated sugar
    35 g. or 2 1/2 tbsp. unsalted butter, melted
    For filling:
    285 g. or 1 c. + 3 tbsp. full-fat cream cheese, softened to room temperature
    50 g. or 1/4 c. granulated sugar
    4 g. or 1 tsp. lemon juice
    2 g. or 1/2 tsp. vanilla extract
    185 g. or 3/4 c. plain whole milk Greek yogurt
    75 g. or 1 1/2 large egg.
    4 g. or 1 1/2 tsp. butterfly pea powder

    wow I HAVE to try making this! Do you have to use a springform pan or can I use regular pan?

      I highly recommend a springform pan to help with removal of the cheesecake. Hope you like it!

      @@gastronomygal482 Thank you for your response! :) Unfortunately I don't have a 6 in Springform pan. Do you think it will work for a 7 x 2.88 in Springform pan?

      @@katherinenguyen6064 you can definitely do that! I would recommend multiplying the ingredients in the recipe by maybe 1.3 to 1.5 since your pan is a bit wider. The bake should be approximately the same then. Or, if you are fine with a shallower cheesecake, you can just make more of the cheesecake crust and keep the cheesecake filling recipe the same and reduce baking time by about 10 min. Hope this helps!

      Hi! I used Kirkland Whole Greek yogurt from Costco. Any Whole milk Greek yogurt such as Chobani would work.

      Hi! The temp is 375 F for 10 min for the crust. Then bake the cheesecake for 55-60 min. At 325 F. You can also turn on the captions for cooking instructions :)
