GREEN JELLO SALAD
Ingredients:
1 cup water
1 (6 ounce) package lime flavored jello mix
1 (20 ounce) can crushed pineapple, drained with juice reserved
1 (8 ounce) package cream cheese, softened
1 (8 ounces) Cool Whip or similar topping, thawed
1 cup chopped walnuts
Instructions:
Place the jello mix in a large mixing bowl. Bring the water to a boil and add to the mix, stirring until dissolved. Stir in ½ cup of the reserved pineapple juice. Refrigerate until thickened but not completely set (approximately 1 hour).
Add the softened cream cheese to the thickened jello and mix until incorporated but chunky. Fold in the whip topping, pineapple and nuts.
Pour contents into a glass serving dish and refrigerate 4 hours or overnight.
AMBROSIA SALAD
A southern fruit salad popular in the 70's. Great for family/holiday gatherings
INGREDIENTS:
1 (15 oz) mandarin oranges (drained)
1 cup fresh pineapple, diced
1 cup green grapes, sliced
1 cup mini marshmallows
½ cup shredded coconut (unsweetened) can toast if desired
1 cup sour cream (can sub drained Greek Yogurt)
1 ½ cups heavy whipping cream
Whole Maraschino cherries, for garnish
⅓ cup Toasted pecans
DIRECTIONS:
Whip the cream to medium stiff peaks. Stir in the sour cream.
Stir in mini marshmallows and shredded coconut.
Add the pineapple and grapes. Lastly, fold in the oranges so they hold their shape while mixing.
Cover and chill 4 hours or overnight
When ready to serve, top with maraschino cherries and toasted pecans
