I'm 37 yo and like most the experts here on CZcams say, with aging, the metabolism process becomes slower and slower so I need to keep up fast. I lost weight way faster when I was in my early 20s then now. I can't even lose 1kg in one month now 🥲 my weight getting worse after post partum. My son is 2yo now so I want to be back on track!

Hi! Thanks for a great video! While roasting veggies I believe you said it doesn’t matter about the smoke point and to just use fats that are solid at room temp? So would you think using ghee, butter, or coconut oil on veggies in the oven even at 425 degrees Fahrenheit? Any suggestions? I used to use olive oil yikes, I just didn’t know it oxidized.
I recently used avocado oil when making mayonnaise. Green mayonnaise! Yay! 🤷🏻♂️ Tasted fab.

I unfortunately cannot afford to buy separate foods in my household so I eat what my partner eats. He is super health conscious and an incredible cook 😃❤ so when I say carbs at dinner, it's very calorie mindful and only whole ingredients with a carb as a base, like wholewheat pasta, egg noodles, wild brown rice or potatoes. Which would then have a healthy dose of veggies, meat and fats...
So I'm wondering if I perhaps limit my carb intake to nearly zero during the day and only consume veggies proteins and fats then will the carbs during dinner be ok?

I think you missed Hearts of Palm! My palm pasta from Trader Joe’# only has 2 grams of net carbs. It’s delicious with some Rao’s Arabiata and some Trader Joe Burrata cheese.

Grapeseed oil is very high in polyunsaturated fats, which are inflammatory. Coconut oil and Avocado oil, as well as tallow and ghee, are better choices for cooking fats.

I cook (fry) my eggs in a butter-olive oil mix. I cook my homemade Chicken strips in a small amount of Olive or Avocado Oil... Is that high temp cooking?

Concerning oils and high-temp cooking ... I use Olive and Avocado oils on medium heat on the stove and at 400°F (204°C) in oven. Am I oxidizing the oils at these temperatures?
Extra virgin Avocado oil has a smoke point of 482.
With that being said I do not eat fried food anyway.
As I said in the video, smoke point is not the same as the point the oil oxidises. I would probably use a solid cooking oil for those temps instead 🩷

I’m curious about the avocado. We stopped buying them months ago because Carb Manager tracked one whole avocado as having 12 total carbs. I try to stay under 20 total carbs a day. Is Carb Manager wrong with the total carb count?
You are correct that avocados have that many carbs, but a lot of it is fiber. I generally recommend staying under 50g a day of total carbs, or 20g net.

Ghee, tallow, coconut oil etc. Anything fat solid at room temp naturally.
Ghee for a buttery flavor is great. I use coconut oil when I don't want intrusive flavor. Isn't Kait amazing! 😎

Your body with excrete sodium and magnesium if you consume too much so you can’t overdo them. Potassium is the one you can, which is why it is much lower in Sodii. You get most of the potassium you need through food - avocados, salmon, etc.
@@HealthCoachKait i'm off the carnivore diet for now - and back to dealing with inflammation , the problem i had was dizziness and tight lower back muscles , what is a guideline to balance "potassium , magnesium , salt , and electrolytes ? would love to get back on the carnivore or keto if i could not feel so bad ... the only benefit was the big improvement in inflammation - which was incredible

Yes. Don’t heat too much or the protein in it burns. Ghee you can heat more because the protein has been removed 🙂

The second half of my comments disappeared, so....! Anyway, I have heard bad things about tuna, do I need to be careful? Is broccoli a no-no? What do you consider 'low temp' cooking? Favorite = steak & asparagus.
Tuna is fine! Just buy it in springwater if it’s canned. Broccoli is also good 🙂
The issue with tuna is not carbs but the difficulty in consuming fish which have not been contaminated by metals in the sea. I used to eat a lot of tuna and now I only eat it sparingly for this reason.
I stick to sardines. Tuna is known for having a lot of mercury.

Can you tell us the difference between carbs vs net carbs? I know the difference in calculating them.
Total carbs in grams - grams from fiber = net carbs
For example: a certain food has 5g of carbs but 2g come from fiber, equaling 3g net carbs
Since fiber is not used for energy, it is not processed like other carbs & therefore not causing a rise in insulin.

What about vegetarian keto diet?
Extremely difficult to get enough protein and also keep carbs low enough. Not impossible but I don’t recommend it.
Eating a steak or protein doesn’t kick you out of ketosis?
No. Not unless you are really insulin resistant (or diabetic) and you are not eating it with adequate fat. Too much lean protein can be converted to glucose if someone is VERY metabolically unhealthy AND they don't have it with enough fat. If both these are taken into consideration then no.
