…is there a reason you can’t cold-proof pretzel dough? It’d probably make the shaping process easier, and slowing the proofing might help avoid over-proofing so you keep a tighter crumb.

Lol I remember I was making cinnamon rolls and by the time the dough had risen/proved to the size it should be I had NO energy to continue making them so I panicked(bc as we know it just…keeps growing until you bake it) so I just put plastic wrap over it and put it in the fridge overnight while I slept. It…was almost overflowing when I got to it and I can’t imagine how large it would’ve gotten if I hadn’t put it in the fridge

I mean, I’ve made pretzels. My recipe says to mix the salt in with the dough (1 tsp) with the yeast. And my pretzels have risen every time.

This was so hard watching them do this! 😂 I mean Ethan was on to something by letting the dough rest, but you have to put it in a warm wet environment, and 2 you have to put it in a buttered/oiled bowl with a towel or saran rap to cover the dough. But I cringed when they didn't let the yeast proof. You always have to combine water, yeast, and sugar in a seperate bowl until the yeast is proofed enough. I know they aren't professionals, but I'm sharing tips. I make homemade breads/cinnamon rolls/beignets/etc with my grandparents. And every single time, they always do these things.
That's really cool! If I may ask, what's your favorite and least favorite thing to make with them? Cause It sounds nice to have a healthy relationship with your grandparents and making food seems like a fun way to spend some time with them :D
