Recipe:
1000g Sugar
100g Corn syrup
2 cups (475 ml) water
1 teaspoon vinegar
Target temperature: 271°F (133°C)

Let it cool for 10 minutes than poor it into containers unless you have good high heat containers. This also works if you cut it in half

I am confused as to why he called it cotton candy when it's dragon's beard.

It's not, though. Well, authentically, it's made out of hard honey. And even if it was sugar, wouldn't be the same since cotton candy is made out of heating the sugar and spinning it while this is more of just pulling it a lot. It doesn't taste like cotton candy at all.

I am from Hong Kong. Dragon's Beard is still found here. It is eaten with chopped peanuts wrapped inside. A box of 6 little pieces is about 1.5 USD, sold mostly at street stalls. I used to love eating them because of the cuteness, sweetness and funny texture. But now I find them a bit too sweet for my taste, and can eat up to maybe 2 or 3 pieces per day. I still buy them from time to time though just to remind myself of the look and feel of such classic candy, which is getting rarer these days. Thanks for making a video about Dragon Beard, and introducing one of my (and many more Hong Kongers') favorite food growing up to the world. I actually have never thought about how the silly strings are made, and now I learned.

helpful hint: if the sugar strands start to get too stiff, heat up your flour a little bit in the oven, it'll help keep the strands pliable

This video just took me back 22 years when I used to live in Macau/HK. There used to be this pulled cotton candy cart right outside by the TurboJet ferry terminal in HK. It's probably not there anymore lol. Good times... The elderly man sold them in a tiny plastic box with like 6 or 8 cubed-shaped, pulled cotton candy with like a peanut or black sesame filling. I don't really remember exactly, but it was definitely a treat when you're only 6 yo.
They only sell this at my country during Chinese New Year... or at the temple. Lol and guys please try this is so good I'm not even kidding

I’ve been trying to make this for the past 2 weeks and every time I try it either breaks while pulling and falls apart, I burn myself while trying to make it or a piece would break off and cut me…. I ruined a good saucepan and I broke my candy thermometer and I had to buy a new one…. YOU MAKE THIS LOOK SO EASY!!!!!

For anyone who doesn't have access to a scale, you can use 1180 ml of sugar, and 1/3 cup of corn syrup and one tsp of vinegar

Don't even need the corn syrup. What you're looking for is a mixture of glucose and fructose. Table sugar is sucrose, which is glucose and fructose bound as a single molecule. Adding an acid (the vinegar) breaks the link in sucrose and creates inverted sugar, aka a mixture of glucose and fructose, aka corn syrup. So basically, you could do this recipe using corn syrup alone, or you could use only table sugar (sucrose), and convert it to glucose+fructose using an acid. Vinegar is used as the acid, but you could also use lemon juice, citric acid or cream of tartar.
