Homemade Sweet fermented rice

  • [Ordinary People Fun Day] Jiu Niang, also known as mash, is a traditional specialty snack made by fermenting glutinous rice with koji. I chose round-grain glutinous rice, which is more sticky and softer. All utensils should be boiled and sterilized in advance. Make sure it is clean and free of oil.
    Method: 500 grams of glutinous rice, rinsed, soak for half an hour, drain the water, add 350 ml of water 0.7 times the amount of rice, and cook with a rice cooker
    Take 5 grams of the koji bought in the supermarket and use a rolling pin to roll it into powder
    After the rice is cooked, stir with clean chopsticks to dissipate heat
    Prepare 500ml of cold boiled water
    When the temperature of the rice is about 40 degrees, pour half of it with cold water and stir
    After seeing the water absorbed by the rice, pour the remaining water in half and stir
    When the temperature of the rice is 36 to 37 degrees Celsius, add the koji and pour the remaining water
    Stir evenly, cover with plastic wrap, protect from light and ferment
    Fermentation time has a lot to do with temperature. 36 hours or 48 hours to observe
    Wait until it’s fermented well and see that the center hole is full of juice.
