Homemade Chocolate Covered Almonds - a Tasty Thursday video

  • Chocolate, almonds, maybe a sprinkle of salt . . . what's not to love? Yes, this is a bit messy. But the results are so very much worth it. Roast some nuts, melt some chocolate, and start tossing! (watch out, though, you won't be able to stop eating them!)

    Chocolate covered almonds (makes a lot!)
    8 oz raw almonds
    8 oz bittersweet chocolate (Ghiradelli makes a great chocolate for this!)
    cocoa powder (optional)
    sea salt (optional)
    1) Roast almonds (325 for 15 minutes, or until just starting to brown.) Let cool completely.
    2) Chop chocolate into small bits (or if it's a bar, whack it on the counter a few times until it's in small bits) and melt in a double boiler, stirring until smooth.
    3) Toss almonds in chocolate until coated, then roll in cocoa powder if desired and sprinkle with sea salt. Let cool, then toss in chocolate again. Repeat until desired thickness of chocolate has been achieved.
    The mess is worth it.
