  • Making bread is magic. Making bread without using yeast seems to elevate that magic. To do that, you need sourdough starter (or try to catch wild yeast!). Here's a short video on how to care for that starter so it gives you years of enjoyment and delicious bread!

    Feeding sourdough starter
    1. Dump all starter into a bowl, then whisk to combine. (Alternatively, you can just mix it up in the jar, but I never can get it fully mixed.)
    2. IF YOU ARE USING IT FOR A RECIPE: measure out what you want to use and set aside. The bread or pancake recipe I use calls for 1 cup of starter; yours may be different.
    3. Whisk in 1 cup flour (regular all purpose is fine; I prefer unbleached) and 1 cup water until combined.
    4. Pour back into the jar (no washing required!) and let sit at room temperature, for 8-12 hours or so, until it's bubbly and kind of vinegar smelling. I'd cover it with a light cloth to keep any bugs out; the cloth will also allow any wild yeast that's present to come join the party.
    5. Cover well and refrigerate until you're ready to use or feed again!
