How to get the BEST Crispy Chicken Wings! | Oven Baked Chicken Wings Recipe

- The crispiest chicken wings baked in the oven. The skin is deliciously crisp and salty, with tender meat on the inside. No deep frying required!
Smother in sauce (yes, they still stay crisp even with the sauce on) to make bbq wings, buffalo wings or sticky Asian-inspired wings. Or eat as they are - they're totally moreish without any sauce!

Crispy Chicken Wings Ingredients:
2.2 lbs (1 kg) chicken wings
2 level tbsp aluminium-free baking powder (It has to be baking powder NOT baking soda - see further notes on baking powder below
½ tsp salt make sure it's regular table salt
½ tsp pepper
Instructions
1. Preheat the oven to 120C/250F and place a rack on a large baking tray.
2. Cut each wing at the joint so you have a mini wing and a drumette.
3. Dry the wings with paper towels, then place in a large bowl and add the baking powder, salt and pepper. Toss to combine. Note - it's important to dry the wings first so they only get a light coating.
4. Place in a single layer on the rack, skin side up. It's fine for them to be touching. Discard any remaining coating once tossed together.
5. Place on the lower shelf of the oven for 30 minutes.
6. After 30 minutes, turn the oven up to 220C/425F and rotate the tray for even cooking. Cook for a further 45-50 minutes until the wings are lightly golden and crispy.
7. Take out of the oven to cool slightly before serving.

PSA: if your internal oven temp is a true 450F there’s no way even jumbo wings will survive those last 45-50 minutes. Her control knobs must have been way off. Set at 400F and flip them over at 30 minutes. Visually check every 10 minutes and remove when golden brown. Internal temp for dark meat perfect at 175F. They keep cooking on cooling rack even once removed from oven. Wings can go from perfect to burnt in just a few minutes at 450F. Just lower temp slightly and check often - most over knobs are just not accurate. Once over cooked and dry there’s no amount of sauce that can fix that

@Mir Most built in oven temps are off. That’s why I use a separate thermometer with temperature probe.
A lot of people don't like slimy uncooked chicken some think is "juicy".

We made these tonight and they were fantastic. Just make sure the wings aren't touching each other, and I recommend adding a few more spices like onion powder and paprika.

Thanks so much for your recipe. I made them tonight for the Super bowl. I was nervous because they were still slightly froze, but I coated them with teriyaki sauce towards the end and cooked a bit longer and they were a hit. Will definitely use this recipe again.

Some of the recipes I've changed a little to improve the taste. For instance, for french fries which call for no oil, I spray them with olive oil and season them with salt and pepper. They come out great! It makes the best toast I have ever eaten. The recipe I use calls for lightly buttering both sides of the bread. It calls for cooking at 400 degrees for 5 minutes on one side and then 2 minutes on the other side. This time has a lot to do with the kind of bread you are using...so keep an eye on it. Also, the fans in this Ninja are a lot stronger than other air fryers. So lay a metal spoon or something on the bread to keep it from flying around. It's a little extra work to use your Ninja as a toaster but it is worth it!

I just loosely followed this, I had to sub the baking powder for cornflour. Turned out perfect. I used up my Berbere powder that I've had for over 10 years on this, and it was delicious.

Thanks for the tip on using aluminum free baking powder. I didn’t have that the first time I made these and found that the taste of aluminum was definitely present. The aluminum free baking powder made all the difference. These are real.y good!

Tried this recipe yesterday. Can confirm they turned out crispy (the first time I've been able to make crispy wings) and delicious! They also held up to the Frank's red hot sauce I put on mine as well.
Perfectly simple - we add paprika or curry powder to the mix & sometimes honey glaze and sesame seeds 10 mins before the end cooking time.

Vegetable Oil ( Seed Oil ) is Not Healthy and Is the major cause of chronic disease . Chk Chris Knobbe MD for clarification. Natural Saturated fats are healthy but this way of making wings is so much easier.
According to the description, the initial temp is 250 on a lower rack for 30 mins... I know it's been a while for some, but I hope this helps.

For anybody reading along, baking soda DOES work for baked chicken wings.
Baking powder will have some extra starches that will help remove some moisture... but both baking powder and baking soda use a bicarbonate to raise pH. Increased pH means browning reactions happen faster.
High pH washes are how pretzels get heavily browned outsides, while keeping a fluffy inside. You're essentially doing the same thing here. Increasing the pH of the skin, causing it to brown/crisp faster than the inside, leaving a crispy skin and moist insides.
If you ONLY have baking soda, you're fine to use it. However, your wings will come out much better if you add a starch (like corn starch or flour).

7/16/23: I need something more in seasonings than just salt and pepper. I would put some garlic and onion powders, a bit of cayenne and some paprika. Thanks for the tip on the baking powder for the crispiness. I'm gonna give it a try.

Just made these. I didnt have baking powder, but corn starch can be used as a sub. The texture came out perfect this method. My only thing is, for most people, you may want to add a little more seasoning. I used her measurements and it came out bland af. And i even added a little more than she said. But its crispy and juicy
Good recipe. Do not cut corners on this one! I didn't have paper towels so I did not blot the wings to get the moisture out. Don't do this, the baking soda salt and pepper mixture will clump up on the moist parts of the wings and wont distribute evenly. I also didn't use a wire rack so the bottoms of the wings turned out not as cooked as the top. I am either going to buy a wire rack which I think is the best option so heat can flow evenly or I will flip them halfway through so they get cooked on both sides. Thanks for the recipe! That is a NEFF OVEN. They have been making those slide away door ovens for many years. The initial cooking temperature is stated at 120C in the description. Press more under the title to get to it.

I’ve made these twice now, and they really are the closest in taste and consistency to deep fried wings that I’ve ever had. Now we just need a tasty butter substitute to mix with Frank’s Red Hot sauce to make the wings even healthier.

Second.. I use a very similar method but use 2/3rds flour + 1/3rd baking powder, which gives you a nice crunchy coating and less of that odd baking powder mouth-feel.
Baking soda is a meat tenderizer.not for wings but,1/4 teaspoon does a great job with Asian recipes with cornstarch.beef,pork and chicken.the baking soda tenderizes and the cornstarch seals the moisture in!!

Order of spices doesn’t matter as long as wings are properly dried. I do baking powder first. Spice rub second. Perfect every time. It’s a simple recipe - can’t mess this one up

Only thing I noticed on all these recipes is it says to start at 250 F for 30 minutes, then turn up to 425F for 45-50 min. This is where i get confused, do you take the wings out after the 250F, 30 minutes and wait for the oven to heat up to 425F and then put them back in OR do you just turn the tray around and leave them in the oven and turn the oven up to 425F? To make it simple do you leave in or out after the 1st step?
