My kids would also flip for an Octonauts Fish Biscuits recipe. They love both Octonauts and Babish’s channel. 😊
I like the steamed then baked method. A gentle steam gets them cooked especially the skin. Then cooled till needed later (or second step immediatly). Then they can be blasted in a very hot oven (or fried) to crisp the skin. No need for baking soda or salting or overnight drying.
Alton Brown's method. Works great!
That sounds great. But I'm lazy, so I just chuck them in the oven, and eat them with rice and a nice asian sauce with soy sauce, garlic, ginger, chili (all grated with a microplane), and rice vinegar

I air fry wings. As for seasoning: if I'm just putting dry seasoning on, I just toss them in a steel bowl, if I'm putting BBQ sauce on I grab my wok, put it on high, and toss the wings and sauce in at the same time and toss them around till they're evenly coated and the sauce has caramelized.
I air fry my wings too. But I usually just season them with smoked paprika, cilantro powder, black pepper, grated garlic, and salt.
Its almost impossible to make bad wings on an air fryer lol, but after years of trying, seasoning them with these is a staple for sure.

the gochujang sauce is genius because it's almost like a master sauce in korea. jeyukbokkeum (stir fried pork) and dakkalbi (stir fried chicken) both use a variation of this sauce and it's absolutely delicious!

Absolutely amazing. If anyone wants to take it to the next level, follow his oven recipe. After you take them out of the oven at 250, throw them on a HOT charcoal grill with offset heat, throw a chunk of wood over the coals and they will be perfectly crispy, tender, and smoky. I've never had better wings.

I grew up with BBQ sauce on wings, but nowadays wings are a way to add a few frequent flyer miles on Heatonist. Pico Rico (the 3 sauce from season 20) and Adobo Loco (7 sauce on season 21) are both awesome.

I've done the baking method with dried out wings. If you set your oven at 350 they still crisp up but your oven doesn't smoke.
wings single handedly gave me a use for my air fryer, its perfect to double fry, 20 minutes at 200 degrees, chill, then 400 degrees till crisp

If you keep the melted butter and sauce separated, you can roll the wings in the hot butter, then in the cooler sauce. Even a water-thin hot sauce will adhere to the wing every single time. I always tell people this method because I never see anyone talk about it on recipes.
2:55 oven method is probably the one I'm going to try today. I do have the deep frying parts, but the cleanup seems worse, I'd have to buy more oil, and I want to test the crisping in the oven anyway. However 1:55 has critical prep that should not be ignored.

Word of caution: Don't use wire brushes to clean barbeques. The wires do come out and can wreak havoc in the body. There are plenty of safer alternatives out there.
I'm glad someone else mentioned this! The wires left on the grill can easily get stuck in the meat.
A potato cut side down or and onion the same way if you like that flavor! (You cannot taste the potato, 😉)

The best way to Grilling wings is toss dried wings in 1/2 of your favorite seasoning 1/2 corn starch, tiny whisked to combine, set aside for minimum 30 minutes, then grill, the seasoning/cornstarch creates this amazingly crunchy outside that can soak up sauce the with out falling apart
Actually used your wing trick and it worked really well. I did salt and baking powder and baked at 450 for 45 minutes. Then I tossed my wings and clarified butter and everything bagel seasoning. They were still crispy.
So what you’re saying in the first half is to just buy an at home deep fryer so to make it safe and that’s the best way to do it.

Happy medium I've found for smaller batches of wings: they're GREAT in the air fryer and take less time than the oven
The end result is WAY better than the oven. You can do wings for 2 in less than 20 minutes.
Air Fried wings are some of the best wings I've ever had. They skin is crispy, the meat is tender and juicy, they're amazing!

A lot of restaurants in Buffalo do their wings very different ways. Sometimes that used to cooking methods in a row in order to get a certain flavor. A common one is smoke then fry.

My favorite method is Kenji’s double fried even though it’s rather time consuming and doesn’t work with large number of guests. Would certainly try a Korean sauce
imho, kenji's double fry works iff you do all of the first round of frying ahead of time. though it's still time consuming.

Try this: Get Frank's Wing Sauce (not the normal Red Hot), use it as a marinade for a few hours, then grill the wings. The sauce works as a brine then caramelizes. You won't go back to drowning your wings in wet Frank's, I promise.

DO NOT DEEP FRY IN A SHALLOW, OVERFILLED PAN OVER AN OPEN FLAME like you see Babish doing.
It's a wonder he hasn't been seriously burned or worse with a set-up like that. Make sure the level of the oil is at least 2-3 inches or more below the rim of the pan. Or better yet, get a dedicated deep-fryer unit with built-in safety features, like thermostats, electric heating, and an insulated-handle fryer basket. At least he isn't deep-frying with the handle sticking out from the stove... this time.
Babish here says deep frying at home is 'scary.' But it doesn't have to be, if you do it right.

NOTE: When you're doing the baking method. MAKE SURE to buy aluminum-free baking powder. The aluminum gives a weird bitter taste to the wings. I tried the same recipe one with and one without and the ones that had aluminum were inedible.

How do you know its aluminum free? Does it say clearly on the packaging?
@@shelbyf3529 it seems the ones that are aluminum free say so, from what i can tell, as long as it doesnt have a clear "aluminum" element or compound in it, it's aluminum free. rumford and clabber girl (the 2 most common) seem to have aluminum in them
edit: additionally most, if not all, double acting baking powder has aluminum in it, specifically sodium aluminum phosphate, as thats what gives it the "double acting" properties

I love air frying my wings now, though it gets just as smoky as oven baking for me.
Personal favorite; add a teaspoon or two of yellow curry powder to the salt/baking powder mix when you dry brine.

You should make a video of going to The Botanist distillery, and they can show the process of how they make their gin!
Ask someone who worked in kitchens doing large batches you still have to watch the temperature. If you can wait a few between batches that is best. Definitely had to put things back in because they weren’t done before

You can also fry them. Preferably in lard or tallow.. cause it’s much healthier than hydrogenated oils. Then put them into the oven at basically as high as you can get it for a few minutes to make them crispy. If they’re frozen at the start then boil the them, then fry them, then put them in oven lol
@babish - if you put the wings on the rack, & then put the rack on top of a broiling pan, they won’t smoke up the kitchen when cooked in the oven.
Figured that out when trying your Lemon Pepper Wet method from Atlanta.
I do the same thing but I deep fry after the first oven trip. I do 325 for 15.
I bake my wings first, then fry them for about 3 minutes at high in the deep fryer for that nice crispy crunch and moist interior.
toss them in baking powder first for extra crispy skin.
I'm surprised it wasn't mentioned but i highly recommend air frying almost fool proof and much quicker than an oven or grill i eat wings almost everyday out of it.

The Botanist gin is _very_ herbaceous. If you're into making herbaceous cocktails, it's great, but straight up, it's pretty intense.
I'm going to have to try the Gochujang butter sauce...
I'd also like to submit a suggestion to try wings with Xian hot oil. (Mikey Chen has a great recipe for this.) And the oil will allow the wings to stay crispy for a longer period of time.

While this is amazing to know, and I have personally been seasoning/flavoring my own chicken for years, but local grocer has a full service meat department where all spices/sauces are free. AKA plain wings and any of the dozen or so pre-seasoned wings are all the same price... it's nice.
I can even pick out my own roast and tell them what spices I want, and they just do it.
