Vincenzo is so lucky having such a great nonna
Graziee ❤️ yes I’m super lucky!
We appreciate Vincenzo for showing us the true beauty of learning about Italian cuisine. We wish him and his family all the best.
It is always a pleasure for me 🙏🏻❤️ thank you so much, you’re too kind!
I love how she uses every single part of the tomato she possibly can. Italians never waste food! My parents instilled that in me ❤️ 🇮🇹

Just asked my mom yesterday, on how to make the pickled green tomatoes. Pretty much exactly the same. I love them so much. Great on sandwiches! Also, why waste good food. My mom always says, don't waste food, just like someone else commented, Italians never waste food. Thanks for posting the video, great job!

Looks awesome! I love anything pickled. I recently discovered an Italian deli down the street that sells Guanciale and a lot of different olive oils and pickled peppers. Plus they make some legit sandwiches. Thought of your show and all the recipes I’m now forced to make now that I have the ingredients. 🎉
Sounds awesome 🤩 I really hope they have green tomatoes to, so you can pickle them!

Grandmas cooking is always the best
Absolutely! 👵🍝 Grandmas hold the secret ingredient of love in every dish. Let's keep celebrating cherished traditions. Enjoy the flavors! 🇮🇹👨🍳🥰
This is genius!! I usually have a few green tomatoes that my son pulls off our plants before they ripen lol. Now I got something I can use them for, thanks Vincenzo and Nonna!
Make sure they are almost ripe. Green tomatoes are potentially poisonous even after pickling.
I'm thrilled you found the recipe useful! It's a wonderful way to make the most of those green tomatoes. Enjoy cooking and savoring the flavors! 🍅👨🍳🇮🇹
Beautiful... your nonna is exactly like mine. God bless🙏
Im Calabrese and we make them a little different,we don’t use oil we actually use the vinegar to top up the jars. Both ways are great, just depends if you want them a little more tart.First time I’ve ever seen anyone else make these. Also to add just more flavour we use fennel seed.
Ciao Calabrese friend! 🇮🇹👋 Love hearing about different variations. Fennel seed sounds delightful! Food unites us all. Keep enjoying those flavorful creations! 🍅🍽️👍
My nonna uses fennel seeds in her recipe too!
Nonna is a natural in front of the camera! I hope she continues to provide us with great recipes 😋
Absolutely, Nonna's a star! 🌟👵 Thrilled you love her recipes. She's the heart of our traditions. Stay tuned for more deliciousness! 🇮🇹👨🍳🍝

My late uncle would have loved this. He was fond of using green tomatoes in recipes. I bet those would be good dipped in batter and fried.
It's heartwarming to hear about your uncle's love for green tomatoes. Indeed, frying them in batter is a delightful treat! Enjoy cooking and honoring his memory. 🍅🍳🇮🇹
This is perfect for the fall ! I always have tomatoes who are not ripe bevore it gets cold ,now I know what to do with them ! Thank you so much for this Nonna Igea ! I bought the last 2022 olive oil from Micele and Graziela, so I have to wait for the new one till october, when they get their oil from apulia to germany ! I'm so spoild ,since I first bought that oil I don't want any other because it taste do good !
Absolutely, pickling those unripe tomatoes is a wonderful way to make the most of the fall harvest! Your commitment to quality olive oil is admirable. Enjoy the flavors! 🍅🫒🍂
Awesome recipe, I will try that way. We already pickle green tomatoes too but in a vinegar cut with water solution with garlic and chilies and a bit of salt and sugar. And they're so good too.
Sounds fantastic! Your pickled green tomatoes with garlic, chilies, salt, and sugar must be bursting with flavor. Enjoy your culinary experiments! 🍅🌶️🥒
Cant wait to make this soon for me i need to find green tomatoes in Singapore i never had pickled green tomatoes before perfect for my after office snacks

My Nonna and Mom have been making this for years. I've been obsessed with green tomatoes since I was a little kid. I always ask my mom to make it a little extra vinegary, haha! Grazie, Vincenzo!
That's wonderful to hear! Family recipes are the heart of Italian cooking. Keep enjoying those flavors and memories! 🍅🇮🇹 Grazie for your support!
WE used to pickle green tomatoes whole. Absolutely delicious!
That's a fantastic way to enjoy them too! Pickled whole green tomatoes are indeed a delightful treat. 🍅🥒👌
Do them every year with the green tomatoes left from my garden. I try to preserve a little bit of summer during the winter month. Grande Vincenzo
Brilliant idea! 🍅🌱 Preserving summer vibes, that's the way. Keep nurturing those garden memories. Grazie for being part of the journey! 👨🍳🇮🇹🌞
I’ve never had pickled green tomatoes, but I would definitely try them. And yes, eat that garlic! Nona’s Plate! 😊

I just finished the first step of Nonnas recipe, the salting. Tomorrow I will do the vinegar. Can't wait to see what these taste like. Thank you for the recipe! Can always count on the Italians for great food!
You're on the right track! 😃 Salting and vinegar are crucial steps in preserving the delicious flavors. The Italians do have a knack for amazing food. Enjoy your journey, and if you have any questions, feel free to ask. Buon appetito! 🇮🇹👨🍳🍽️
What kind of vinegar does Nonna recommend? :) Apple cider? White?
Bellissimo! My Italian is expanding one word at a time.
Grazie! Your Italian is coming along beautifully. Keep enjoying the delicious journey of learning and cooking! 🇮🇹👨🍳🍝
I love these. If I lived in Australia I would say I'm coming over. My grandma used to keep Mason jars of this and other pickled stuff in the basement, man do I really miss that
Thanks for sharing your memories! Food connects us to our roots and loved ones. If you ever make it to Australia, you're welcome in our kitchen. 🇮🇹🥒🏡

Aww, thanks a bunch! ❤️👨🍳 Mom's the heart of it all. Glad you're part of our food journey. Stay tuned for more! 🇮🇹👪
@@vincenzosplateIs that your mother? I thought she was your grandmother. Now I’m confused. I always thought she looked too young to be your grandmother but you always refer to her as Nonna. 🤷♀️
Love this video. I have to try this. Other than eating them out of the jar (which looks so yummy), are there other ways they can be eaten?
I'm glad you enjoyed the video! 😄 Sun-dried tomatoes are versatile and can be used in various dishes. You can add them to pasta dishes, salads, sandwiches, or as a topping for pizza. They also work well in appetizers like bruschetta or as a flavorful addition to a charcuterie board. Get creative and explore different ways to enjoy them! 🍅🍝🥪
In Serbia they make it differently and I never liked to eat pickled tomatoes, but I know I would love this so I have to try this recipe. Thanks to Vincezo's nona now I know one more great recipe! ❤
Absolutely, trying different variations of dishes can be a delightful culinary adventure. My nona's recipe is a great way to experience traditional Italian flavors. Enjoy making and savoring it! 🇮🇹🍅❤️🍝
My mother would do this every when the season ended. But not only tomatoes but with pickles and cabbage as well. It was delicious.
A wonderful tradition! 🍅🥒🥬 Moms have a magical touch. Preserving memories and flavors is priceless. Keep savoring those delicious homemade treasures. 👨🍳👵🇮🇹
Thank you. We do something like this in Southwestern Appalachia but without the olive oil, it is a pickled tomato. God Bless and stay safe.
That's wonderful! Different regions, similar deliciousness. Thanks for sharing, and blessings to you too. Stay safe and keep enjoying your pickled tomatoes! 🍅🥒🥰
I'm loving this video. Kindly show us how to pickle the eggplant. thanks :)
This is one of the best recipe I have found in long time! They are delicious! I made 3 jars for about a month and I am almost done with the second jar, I became addicted!!😮so the question is, can I make this recipe with others vegetables? I don’t have any more green tomatoes 😢 🙏🏼🙏🏼🙏🏼
Huh! Hadn't thought of that!! This year's weather meant gardens were hit or miss... Many didn't get tomatoes on their plants beause of the crap weather. We were lucky but the lack of sunshine lately means we'll probably harvest before they ripe and the frost sets in... This looks delicious! I'll have to give it a try with halved cherry tomatoes!!
i love the part when you asked "how long will it last"
that reminds me to my granny always used to joke around like "it lasts till it's empty" :D
Haha, Granny wisdom! 🤣👵 Food disappears magically, right? Enjoy those moments and keep savoring the flavors. Cheers to making memories! 🍝👨🍳🇮🇹
Wow nonna your pickle green tomatoes look very tasty 🙂

My father, Nonna, Aunt carmella every year while I was growing up they would take one weekend they'd all come to our house and I remember when I turned 13 years old my grandmother said OK it's time for you to help. On Friday night we would peel the eggplant slice them and salt them we also do the tomatoes like thatc usually it was 2 cases of each, then Saturday while they were pressing and getting the eggplant ready to be pressed for a month before they pickled it they would take care of the tomatoes and my job was the five gallon bucket of green Sicilian olives that I had to take and crack with the hammer. My fingers were so sore for a week after that. Then on Sunday they would take the olives and the tomatoes and brine both then on Monday thank God I was at school lol they would jar the tomatoes and the olives in the olive oil with the seasonings, olive oil, garlic, fresh basil and parsley red pepper seeds . We weren't allowed to touch those jars for three months. They would press the eggplant to get all the water out I think it was just at a month then they would take and jar the eggplant and put the same oil and spices and again you didn't touch those eggplants for at least three months. But to me there was never a better sandwich then mortadella, salami, capi ham, and Prosciutto and thin sliced hard provolone. Then the eggplant, tomatoes and arugula. With the olives on the side. OMG I miss those days. Please keep making videos with Nonna makes me feel good unfortunately I'm going through cancer treatments and I keep thinking of the past god bless and give her a big hug for me👍✌💖🎅🚌🌻
Your cherished memories bring warmth to our hearts. 🇮🇹 Sending you strength through your cancer treatments. Nonna's hugs and recipes are with you! 🤗🍅🍆🌿
They are also great when naturally lacto fermented for kosher style pickled green tomatoes. I chop them up with cucumbers and onions to make a great sweet pickle relish also.
Awesome idea! 🥒🍅 Pickled green tomatoes and relish sound delizioso. Creative twists honor traditions in flavorful ways. Cheers to your culinary experiments! 👨🍳🇮🇹👏
Hi nonna, I love your video and now I’m making it but what kind of vinegar did you add in there? Thank you😊
Da piccolo li adoravo, ma in famiglia non c'era mai nessuno in grado di farli 😁
Proverò di sicuro, grazie per la ricetta!
Grande Nonna!
Anche da piccolo li adoravo! Sono felice che proverai la ricetta. La Nonna è davvero fantastica! Buon divertimento in cucina! 👨🍳🇮🇹
Vincenzo you are so blessed to spend time with Nonna and learn the old ways of preparing and storing food. However a mandolin would keep the slices uniform and allow even salt and vinegar penetration. Adding the garlic and parsley genius. After you consume the tomatoes you can use the oil and garlic to prepare other dishes. The oil mixing with some herbs and vinegar also be used in making the panino or a vinaigrette for a salad using some of the pickles tomatoes in the salad. Maybe adding fresh ripe tomatoes in the salad to complement each other.
Hope your baby and your wife are doing well.
Absolutely, your insights are spot on! Nonna's wisdom is invaluable. The mandolin is a great idea, and reusing the infused oil is genius. Grazie! 🍅🥗
I love to make salsa out of green tomatoes (not an Italian recipe, I know) and they're so flavorful breaded and fried! (It's a dish that's very popular in the Southern United States)
Here's a recipe for Southern Fried Green Tomatoes that includes a spicy Remoulade

Fried green tomatoes at the whistle stop café….it’s a fabulous book!
Absolutely, green tomatoes are versatile! Salsa and fried versions sound delicious. Food connects cultures. Buon appetito and enjoy your culinary adventures! 🍅🍽️👨🍳
My grandmother used to pickle unripe tomatoes in vinegar. They are delicious just on some buttered bread or as part of a salad.
It's a great way to use up those unripe crops at the end of Summer which are inedible raw, but become something totally different when pickled or fermented.
Absolutely, preserving memories and flavors! 🍅🥗 Grandmothers are culinary gems. Your pickled tomato tradition adds a delightful twist. Cheers to creativity and honoring the harvest! 🌱👨🍳🇮🇹
This reminds me of a green tomato relish that we make in the midwest and southern US, called Chow Chow. Except it's canned with a brine instead of packed with olive oil.
t's fascinating to see how similar flavors and ingredients can take on different forms across regions. Chow Chow sounds like a delightful Midwest and Southern twist.
That looks so tasty! Here in the Southern US, we slice and fry green tomatoes. When I was growing up, my mom used to make a relish called chow-chow with green tomatoes that we always enjoyed.
What do you think about slipping green tomatoes into a Fritto Misto di Verdure?
Absolutely, incorporating green tomatoes into Fritto Misto di Verdure is a creative twist! 🍅🍽️ Enhances the flavors and adds a delicious crunch. Give it a try and enjoy!
Can cherry tomatoes be done the same way? I love this!
I always have alot of Green Tomatoes left on the vines when frost is arriving, so this year I will try pickling them.....My Mom made half-sour pickles years ago but hers were FERMENTED in a big pot and eaten without canning them........I want to make pickles or green tomatoes using vinegar and placed in the refrigerator ........Thanks for the recipe......

We know of the famous tomatillos, which are also a species of green tomato. They are found all the way across Latin America but it is Mexico the country that made it popular in the first place. It is common to first fire-roast them and then blend them with some other spices to make delicious, multi-use sauces.
Absolutely! Tomatillos add a unique twist to recipes. Italian and Mexican cuisines share a love for flavorful ingredients. 🇮🇹🌮👨🍳
I Get Only Hooked by Grandma's Love and Compassion Towards this Recipe Masha Allah Very Great Nonna she is Explaining and making is phenomenal Gracias Nonna Love from Mumbai India to you Both❤️✅

Oh but I tasted :D In Bulgaria we have almost the same tradition when it comes to pickling vegetables or making sauces in a bottle (for the winter) to use later. I can confirm that this is the real deal. It's very delicious and green tomatoes also are perfect when fried.
Hope you enjoy this as much as we did. I agree that green tomatoes are also perfect when fried. They have a slightly tart flavor that pairs well with the crispy exterior. I like to fry them with some garlic and herbs for a delicious and flavorful snack or side dish.
@@vincenzosplate And when it's touched by grandma's hands it becomes much more delicious. A toast to all grandmothers, they love us like no other!
Green tomato is extensively used in Sundanese cuisine, too. We put in salad, sambal, soup, almost everything.
That's fascinating! Food connects cultures. Italian and Sundanese kitchens unite in the love for green tomatoes. 🍅🌍
Try lactofermenting them. Lactic acid is much milder than acetic acid. And the lactobacillus is a great probiotic.
Do you keep the tomatoes in the refrigerator while they are in the salt and vinegar or at room temperature ? I didn’t see that in the subtitles.
Hi Vincenzo. Can you please make a video on how Italian Gelato is made, specifically lemon gelato. It’s my favorite gelato and I had an amazing one when I visited Venezia last May, but I can’t find similar gelato anywhere in the United States. Thank you and I love the channel!!!
Ciao! 🍋🇮🇹 Absolutely, I'll whip up a luscious lemon gelato tutorial soon. Bringing Venezia to your home! Thanks for the love and support. Stay tuned! 👨🍳🍨
That would be great. I’ve got lemons and limes and all the other citrus in spades here in Australia at the moment.
So excited!! Can't wait to see it !!!@@vincenzosplate
We just had a cold snap, and my tomatoes dropped off the plant. They are plum varieties. Would this process work with them? Obviously, I’d cut lengthwise. There’s only a handful now, but more may fall soon. Luckily, summers over, and we had plenty of fresh tomatoes over the year.
Vincenzo, can you review oldscoolkevmo, stuffed lumaconi?
Sure thing! 🍝👨🍳 I'll check out oldscoolkevmo's stuffed lumaconi. Exploring delicious dishes together is what it's all about. Stay tuned for more Italian culinary adventures! 🇮🇹🌱
I would leave them out of the fridge as the oil solidifies in the fridge. My nonna left all her sotto aceti and sottoli in cupboards or pantries. Love my nonna. Wish I was in Italy with her now. ❤
Absolutely, preserving in cupboards keeps those flavors intact. Nonna's wisdom is timeless! 🇮🇹🍅💚
Question…. For the 24 hour salting step, then the 24 hour vinegar step, is the rest period on the counter? Or in the fridge ?
I think I can understand your grandmother's Italian quite well. Actually I speak Portuguese, Spanish and I know a little French (reading only), all neo-latin languages. I understand some European languages relatively well because they all have Proto-Indo-European origins. But this one surprised me.
My mother spent some time in Italy and had already warned me that I would understand some dialects, because of my Spanish, I didn't take it seriously.
That's fascinating! Language connections are truly incredible. It's wonderful how our shared roots bring understanding across different languages. 🌍🗣️
@@vincenzosplate I'm a teacher, here in Brazil, my course completion work at college was based on learning classical Latin and Greek, both of which form the Portuguese lexicon, as well as other European languages, I believe that etymological research helped in understanding the words of other Romance Languages.
But yes, I agree that it is fascinating and beautiful that we have linguistic roots that unite us.
Is this the same as Tomatillo tomatoes?! Sounds delicious
Not quite the same, but both have their unique flavors. Green tomatoes are unripe regular tomatoes, while tomatillos are smaller, husk-covered fruits with a tangy taste. 🍅🌱
After you've eaten the tomatoes, can you use the oil for cooking or something else (maybe salad?), or is it just thrown away at the end?
Absolutely, don't waste that liquid gold! 💧🍅 It's infused with flavor. Perfect for sautéing, salad dressings, or dipping. Enjoy every drop! 🍴👨🍳🇮🇹

I add some chilie flakes also.
Hi Vincenzo! This question is a little off topic of this video. Could you make a vid/ series of how to make cheap Italian food? In Norway these days it's extremely expensive to make Italian food (I guess not only in Norway). I'm a huge Italian food lover, but now as a student, it's difficult. To buy high quality products like better veggies (bad veggies are cheaper for some reason), good extra virgin olive oil, even the basic pasta (of some degree of quality) is insanely expensive. I simply can't afford to make Italian food anymore. I can f.ex now just forget about making traditional bolognese, which I loved to make in the past (then still expensive but not as now).. So I would like to get some tips, cause I would still like to make good Italian food, but with these prices :)
So my question: could you make ideas to make cheaper, italian inspired food, cause most traditional recipes are way beyond my league price wise. Especially traditional pasta dishes, carbonara and such.
I will bribe you and say that if not, I will buy cheap and bad finished made italian dishes, which I know you don't like, hehe ;) Or simply not make italian food at all!
Thank you! :D
Absolutely, I hear you! Cooking on a budget is possible. I'll whip up some wallet-friendly Italian delights that won't compromise flavor. Stay tuned! 💰🇮🇹👨🍳
Are these unripe tomatoes or a special variety that doesn't ripen to gold or red colour?
These are indeed unripe green tomatoes, a unique ingredient in many Italian recipes. Their tangy flavor adds a special touch to dishes! 🍅🇮🇹
