The Best Pickled Green Tomatoes

  • Hey every one come along with us in the OMG homestead kitchen showing how we can our pickled green tomatoes. I'll also show an easy way to store green tomatoes.

    Pickled Green Tomatoes Recipe
    5 lb green tomatoes
    2 medium onions
    1/3 cup pickling salt
    3 cups cider vinegar
    1 3/4 cups sugar
    1 teaspoon ground turmeric
    1 teaspoon celery seed
    1 tablespoon mustard seed
    optional - red bell peppers or hot peppers
    Cut ends off of tomatoes and discard. Slice tomatoes into 1/4 inch rounds or bite-size chunks. Peel onions and slice into 1/4 inch pieces. Add tomatoes and onions to a stock pot or bowl and sprinkle with 1/3 cup pickling salt. Gently toss to coat well. Refrigerate overnight or if you’re in a hurry you can cover with ice and let stand for four hours.
    In a large pot combine the vinegar, sugar, turmeric, celery seed, and mustard seed. Bring it to a boil and then reduce it to a simmer. Drain the vegetables in a large colander and rinse lightly.
    Pack pint size, sterile jars with the vegetables. If desired, add a few thin strips of sweet or hot red pepper. Fill each jar with spice liquid leaving 1/2 inch headspace. Wipe rims and place lids on jars then secure with rings. They should be fingertip tight. Hot water bath for 15 minutes.

    Hi there and hope all is well and cheers from Canada. Has been some time since I was lost by seeing the recommendation and came over for a watch. I am not a fan of green tomatoes but many people back in eastern Quebec where I grew up absolutely love them and this was a great watch nonetheless and gotta say once again you guys have one of the great channel names on CZcams hats off to Your for the foresight and the branding you do towards it. Many channels 10 times larger than you are not at that level yet of foresight so keep up the amazing work

    Last year I tried something different with green tomatoes. Down South we love both fried green tomatoes and fried dill pickles. I made thin sliced dill green tomatoes. I dredged them in leftover fish fry (corn meal) and fried. Yummy!

      My daughter and I visited Batesville Ar this summer and ate at Freds fish house and I've been trying to find this recipe ever sence. Thank you so much for this video, none of my canning books had a recipe for the sweet green tomatoes. Again thank you so much.

    I'm new to canning and this summer have used your recipe over and over. My family thinks these are the best thing they ever tasted. I use this for my bread and butter pickles adding garlic, red, yellow and orange bell peppers, peppercorns and onions. We eat a whole jar almost at a sitting. I love your calm voice.     I have green tomatoes that I am going to can. I like yours because it is like bread and butter pickles. We have gone to Jo-Jo’s restaurant in Mt. View many times over the last 20 years. Their pickled green tomatoes are really good too. Thanks for sharing!

      @@OzarkMountainGoats I think we went through Mountain Ho.e yesterday on our way ho.e from the VA clinic in Fayetteville. And we always stop in at Bee Vee's Flea Market to look for goodies.
      We love it here.

    I used your recipe last year and canned 12 quart jars. Oh my gosh! I have one jar left. Because of death in the family, I didn’t get to make it to the tomato farm in Warren, Arkansas. So, I will cherish my one jar until next year.

    I'm new to canning and will try this. It is still a couple months left in my growing season here in NE Arkansas, but it looks like i will be canning my green tomato's this weekend. I have a squirrel problem so I either can them now or I loose my small crop. I only harvested 10 ripe tomatoes from 16 plants this year. I'm looking forward to squirrel season this year.

      @@OzarkMountainGoats Doing the last batch today. I pickled habaneros with green marconi peppers too. Very pretty but my fiance can't stand hot peppers. :P It's wild this time of year how Walmart sells out of lids and jars. Had to buy a case of new jars just for the lids. It's crazy.       Thank you so much. We have had pretty good luck wrapping them like that. Wrap individual green tomatoes in newspaper: Layering wrapped tomatoes in a box, no more than 2 layers deep. Place the box in a dark, dry spot and check weekly for progress. It usually takes 3-4 weeks for the tomatoes to ripen, but check frequently and remove any fruits that show signs of rotting.     I’m so glad I found you folks and this recipe! I’m from Waldron Arkansas and years ago we would go down to Mena Arkansas, to the Fish Net Restaurant and they served pickled green tomatoes and this recipe is close to what they had. They would also sell jars of this to take home, but they have since closed and I couldn’t get it anymore. So sad! I’m am so excited as I just picked the last of my tomatoes this weekend and I am going to try it. Thanks so much! Are you still putting up new content?

      Thanks so much for comment. They are very good and we have a restaurant in Mt Home called Fred's that sell a good pickled green tomato. We will be putting up more content later. We have had a few family members that have been sick that we are helping. Plus we both had covid that threw us both for a loop.     Hi, I'm from Greenbrier Arkansas and this is the recipe video I was hoping to find, thank you. Only question is, how hot is the hot water bath, boiling, simmering? My grandmother used to always make pickles every year and they were so good...

      rawzone1 - Hi, and thank you for your question! The water in your canner should be boiling for a hot water bath. Once mine starts to boil I back off on the heat a little bit but keep the water at a constant, steady boil.

    I've never heard of this but think I will try it as I have more green tomatoes after making Salsa Verde out of them. What a great idea using a pitcher to pour the brine instead of ladling it! Thank you!

    Have you made green tomato mincemeat?
    I am going to try this recipe tomorrow as we have 20 gallons of green tomatoes to deal with. I also make green tomato pie and green tomato salsa.

Is the mincemeat something you would add to like a mincemeat pie? My mother use to make those. I can see where the green tomato salsa would be yummy. Are you going to video it?     Hello from NJ! Love this great tutorial. I've never worked with green tomatoes and I do have quite a few that I wonder If I can do anything with. First question is can I use Roma tomatoes as well with this recipe, and secondly, can I use underdeveloped tomatoes? Underdeveloped meaning about a third or half the size of a full grown.       Hi and thank you! Yes, you can use Roma tomatoes. If your underdeveloped tomatoes are about to be lost due to a frost or freeze, I would definitely give it a try. You can pickle just about anything so I’m sure it would work. You would probably just have pieces that are firmer and more dense. Good luck! 😊 ~ Josie

      Hello, here in the states people eat green tomatoes all the time. We eat them fried, in salads and pickled. My wife (Josie) when we first was married over 40 years ago didn't care for tomatoes but now loves them. We eat green tomatoes every year as hundreds of thousands of other people here do that never have had an issue. I would suggest trying them in small quantity if your not custom to eating them. But I think you'll find they are tasty. Thank you for commenting and be safe!

    Why ice? I grew up eating pickle green tomatoes, we treated them as and used the same brine as cucumber pickles.

      The recipe I learned from and follow recommends an overnight salt brine in the fridge but says tomatoes can be iced for 4 hours if short on time. The ice brine helps keep the green tomatoes from being so mushy.

    I love this video! You make it so easy to understand. I am new at all this and I have a question for anyone's input. After finishing my water bath, the liquid in my jars is cloudy. What am I doing wrong, and are they safe to eat?

    I make chow and green tomato salsa but I am going to make your recipe. If I use white vinegar instead of apple cider would that change the flavor. If it would then I will use apple cider.       Hi ~ I’ve mostly noticed that the shelves at our 2 closest Walmart’s are not very well stocked. It seems paper products and cleaning supplies are the worst. Meat prices are pretty high as well.     Hi Josie, quick question. In your vinegar with the spices, do you add any water? My husband won’t eat it if there is a strong vinegar taste. Most all pickling recipes I use call for a dilution. just curious. Thanks

      Benz crazy - Hi and thank you for your question! Yes, the pot I’m using is a canner with a rack inside. That happens to be my favorite brand and it’s called Victorio. It has a very thick bottom which prevents scorching/burning and I actually bought a second one!       The recipe calls for sugar. They are not naturally sweet. If you follow the recipe they will be as sweet as sweet pickles.

      Rose McCluney - The recipe I have states that the vegetables need to be refrigerated overnight in the salt brine. I believe that’s to pull excess water out of the tomatoes. By covering them with ice and letting it stand for 4 hours, it eliminates that step and makes the process go quicker. Thanks for watching and leaving feedback!

      When canning, always leave one inch of headspace. That means only add water to within one inch of the top.

      5 lb green tomatoes
      2 medium onions
      1/3 cup pickling salt
      3 cups cider vinegar
      1 3/4 cups sugar
      1 teaspoon ground turmeric
      1 teaspoon celery seed
      1 tablespoon mustard seed
      optional - red bell peppers or hot peppers
      Cut ends off of tomatoes and discard. Slice tomatoes into 1/4 inch rounds or bite-size chunks. Peel onions and slice into 1/4 inch pieces. Add tomatoes and onions to a stock pot or bowl and sprinkle with 1/3 cup pickling salt. Gently toss to coat well. Refrigerate overnight or if you’re in a hurry you can cover with ice and let stand for four hours.
      In a large pot combine the vinegar, sugar, turmeric, celery seed, and mustard seed. Bring it to a boil and then reduce it to a simmer. Drain the vegetables in a large colander and rinse lightly.
      Pack pint size, sterile jars with the vegetables. If desired, add a few thin strips of sweet or hot red pepper. Fill each jar with spice liquid leaving 1/2 inch headspace. Wipe rims and place lids on jars then secure with rings. They should be fingertip tight. Hot water bath for 15 minutes.
