    Tipper, I just want to thank you. I’ve been battling some illnesses and demons the past few years including living in a nursing home at 45-47 years old and your videos never fail to make me feel better. Whether they give me inspiration for when I get to living independently again, like this one, or when you all go walking in the woods it’s a brief moment to not be indoors at least in my head. And they all bring pangs of nostalgia. I hope to one day hear you speak or at the very least meet you, Matt, and the girls. Hope you guys have a wonderful fall and coming holidays. Kenny W

    In Italy, there is something called “ sotto aceto” (under vinegar). Various hard vegetables such as sliced carrots, bits of cauliflower, peppers , asparagus etc are blanched and put in a jar with vinegar, salt and garlic. You can add hot peppers. I guess you can process them, but Mom just stored them in the fridge.They are usually served as an appetizer. It’s always a cheerful thing to bring out summer vegetables in the dead of winter.

    I just love your videos! My heritage from my grandparents and parents is Appalachian from the hollers of Kentucky. Fall harvesting was something my Papaw spoke of, his favorite time of year. Then my grandmothers would can, freeze and “put up” all the bounty from their gardens. Thank you for keeping the “old ways” alive! Your videos are a blessing! As well as your daughters videos!

    my hubby loves hot pickled green tomatoes. i put in green tomatoes and hot pepper. i quarter my tomatoes and cut the ends off my peppers. i heat up my vinegar and use a little pickling salt. and pour it over my jarred tomatoes. put the lids on. then water bath them. for pints 10 minutes 15 minutes for my quarts. my hubby loves them in soup beans and when i fix oyster or salmon stew...he will cut them up and put in his stew. i havent did no canning this year...usually never go without canning. but this year , havent been able. i am out of my sweet lime pickles, chow chow and salsa. i still got plenty of hot pickled green tomatoes though

    I lived in Japan for ten years. Shishito peppers are always eaten green. They make the most delicious tempura.

    Looks lovely! I did pickled Mexican flavored jalapenos this year. I sliced them and soaked them in lime overnight. Then water bath canned with a brine, oregano coriander and cumin seed.

    Just keep talking Miss Tipper, that’s what has drawn the majority of us folks to your channel is your colorful language, along with so much more. Anyone that doubts anything you say on here should meet you in person as Robbie Lynn & I have on several occasions now to witness that you are the same genuine person on and off the channel. We say Appalachia just like you do along with many other words you use like okrie and yes mam we push the Buggy in the Grocery Store to lol 😂 👍🏻👍🏻 We get that a lot on our channel to where folks say that we have an accent down south to like you mentioned, but to us it’s just the way we were raised to talk like you said about y’all.     I used to have an old buddy who would pickle and can his late vegetables like this, but he added a boiled egg or two and maybe a piece of sausage in a pint jar. That's what he brought for lunch when we were cutting wood or playing like we were hunting. It sure looked good when I was eating sardines.

    The tiny 1/2 cup mason jar, works great for a fermentation weight, in the wide mouth jars. My hot peppers are bubbling away, waiting to be wizzed up in the blender, for hot sauce.

    I canned green tomatoes a few months ago. I sliced mine. I made two different brines. One dill & the other sweet, like a bread & butter brine. They taste like pickles. We use them for sandwiches.

    A lady I knew saved all her dill pickled juice kosher and all. She pickled her jalapenos by slicing them and boiling the pickled juice and canning them. They were soooo delicious 😋

    We love pickled peppers and onions i make them here all the time 🙂 I will try your recipe I have never tried it with tomatoes . I make mine with 3 parts red wine vinegar and 1 part red wine
    We love the strong vinegar taste 3 cloves garlic 1heaping teaspoon of crushed hot pepper that comes in a jar it already has salt so i don't add salt and it is so good i do it with the onions like that and the little sweet peppers that same way.

    When I've pickled cucumber I've always heated the viniger up to almost boiling point then put in with the cucumbers that are sliced up and let set overnight to cool down then I'll have a jar in fridge to eat you can put dill or whatever you like in it

    This is similar to our refrigerator dill pickles. I will definitely give this a try next year. You mentioned the bread and butter pickles, we do refrigerator pickles with them and it is so much faster and easier. I think they taste better also. Both the dill and the bread and butter pickles last in the fridge through the winter no problem. Don't forget to label the hot ones before you give them out for Christmas or your ears might be ringing !!! Thanks for the video.

    I didn't know this could be done so easily. Of course I am a single man and will par it down to a quart. I'm always getting veggies that expire before I can use them. Planning ahead I can have a good mix and have some done.

    My Dad , raised and fed in a German Community, ate everything vinegar. He filled a small curitt with hot chili's and topped it off with vinegar. The object was to flavor the vinegar and reuse the chili's. Used it on fried potatoes, eggs, meat...

    I make mine the same way. I usually pickle thick slices of cucumber with chunks of onion. Eat them with most meals. Awesome video!

    Hi Ms. Tipper! I've never canned anything but you always make it look like so much fun! I don't have a decent place to grow veggies. Shade everywhere here.     Those yellow peppers in the store are called Peperoncini peppers. We had them on our salad bar I. My Restaurant. Love them!!!

    Looks wonderful! Thanks for sharing! I used to boil a brine and cold pack. And turn them upside down until cool then they would pop when I turned them over. Did pickles and peppers. I even got a blue ribbon at a county fair! The kids loved the pickles! I never tried fermenting! My Dad and Aunt did in a crock!

    I've never pickled or really canned anything, it wasn't something my mom did, so we did not grow up knowing that it was something we could or should do. My sister and I made and canned some bread and butter pickles a very long time ago, we only did it the one time because as you mentioned they were an all day process, though I will say they turned out quite delicious. Your peppers look amazing, maybe I'll just buy a mix of peppers and try making a small jar since they don't really need to be water bathed or pressure canned. Thanks for sharing all that you do, your content is always so interesting,

    Our garden is all done. I picked the last of the tomatoes. I’m from PA, is had a very dry summer. But we were able to get a lot of vegetables from farmers that we live near. That was a blessing.

      @@CelebratingAppalachia Yes, the weather has been great. This past weekend was really cool ( cold ). In the 30’s on Saturday night. We didn’t have frost but about 3 hours from here they did. I guess a storm is coming tomorrow night. We are trying to get up as many leaves as we can before it gets here. Thank you for sharing your lives with us. You all are very interesting to listen to and watch. I’ve learned a lot already. Can’t wait to learn more.

    The jars did look so pretty! I haven't tried pickled peppers with dried beans. Going to have to try it! I imagine you could put some raw onions in with the peppers as well.

    Your jars of peppers are so pretty! I remember as a child, visiting my Grandma, that she always had a small bottle of tiny peppers of all colors sitting on her kitchen table. I was somewhat fascinated by them, even though I didn't eat them. The colors were so pretty!

    We planted some of the seeds from the small colored peppers that come in a bag in the produce section this year. They tasted different to me, and I didn't like them in a salad like the original peppers, but after your last video I decided to pickle them. I made the hot brine with apple cider vinegar, sugar, kosher salt and water and poured it over them in the jar with garlic cloves and red pepper flakes. I didn't ferment them but put them in the fridge and we love them! They will get hotter the longer they sit!

    Just picked a huge birthday bag of peppers and came back to this video tonight.. got a huge amount of Tabasco peppers so I’m gonna try to ferment for the first time and make hot sauce! Thank you for your wisdom and recipes! Can’t wait to try these peppers!

    Will definitely try this recipe next year, I ferment veggies but never tried adding the vinegar to it. A mixture of cauliflower, carrots, peppers, garlic and dill fermented is delicious, fermented green beans with garlic and dill are delicious as well, and if Matt likes some spice, red pepper flakes work if you don’t have fresh peppers, I do sauerkraut in quart jars with a fermenting lid and I put garlic and red pepper flakes in it, thanks for sharing this recipe

    Oh tipper I am so glad I found this video of pickling Peppers. My Dom & Dad always pickled the Cyanne Peppers but my Dad would put green tomatoes in with his hot peppers and I just loved them! They would just use Vinegar, mustard seed and garlic. Surprizeingly the tomatoes were not that hot. I just gathered up my last small green tomatoes, no peppers but my husband is going to the grocery store to get me different organic peppers! I can't wait, it will just take to me back when I was a child with my Mom & Dad! Thank you for sharing!❤

    My Moma loved the pickled cauliflower, carrots, onions and peppers. She just loved peppers. She would eat jalapeños with a bologna sandwich and pinto beans. I miss her so much.

    I love hot pickled okra with some of the hot peppers added to the jar and I also do a similar recipe with cauliflower, celery, carrots, peppers, and onions. I usually hot water bath can the "Hot Pickled Veggies" / cauliflower mix for about 5 to 10 minutes right after the jars are filled with no counter ferment time.

    Tipper Pickle Peppers… say that 5x. Lol Thanks for sharing. We had a great pepper harvest as well. Sometimes we will just save the brine from store bought pickles and throw some peppers in that for flavor. Of course not as good as fermented but a easy quick way when running short on time to process, etc. Enjoyed your video as always.

    Tipper - those do look wonderful. I do small batches of pickled items. Love pickled green tomatoes, my mom made them every year. She cut them into quarters. I like to do the small cherry size and poke a hole through from the top to bottom with a toothpick to let the brine in. I like to add pickling spice to some but often just add whole coriander seeds. To peel lots of garlic, separate into cloves, put into jar with lid and shake vigorously.

    Thank you! I have a lot of little sweet peppers left & I'm going to give this a try. I have another similar recipe that I've used to make pickled pepper rings with my banana peppers. I've never done them whole before, so this will be a fun new thing. I also have a lot of green cherry tomatoes still on the plant. I might try adding a few of those.

    Tipper, if your pickled peppers served no other purpose than beauty, you would have accomplished an award winning prize. The rewards of all those pickles will be so delicious this winter. In the past, I've made cayenne peppers using ,diluted vinegar and water, which we ate over collards and turnip greens. We called it pepper sauce. Once again, my paternal grandma made Sauerkraut, pickled green beans and green tomato pickles. All were delicious, pared with soup beans. Such wonderful memories 💖 ❤ ♥. I love your videos. I'm interested in your green tomato pickle recipe. How can I find it.

    Blessings from Chicago. I get most of my produce from the farmers markets, in the city. I thank you for your sugar free recipes. As a person fighting diabetes, I eat more savory than sweet. Most recipes are sugar heavy.❤❤ Happy new year.

    I started asking you about storing until I listen to the whole video. I’m excited to go to the farmers market today because I don’t have enough peppers. I’m going to do a small batch just to try it and keep them in the refrigerator. I hope I can get my husband to learn to love pickled peppers.

    After a couple weeks of letting my jars of pickled peppers sit they taste delicious. I don’t even like hot peppers, but these were amazing.
    I did mix up my own variation and added 1/ 4th cup of sugar and some pickling spices, celery, mustard, and dill. I also added onion, chopped cabbage, etc.. They are awesome.
    If I get a chance to make any more, I would like to add some cauliflower, and carrots with the mix.
    Okra is on my list of things to grow next year. I tried it a couple times, but I want to grow more and take a little bit more seriously.

    We char young green shishito peppers in a cast iron pan and then top them with coarse salt and lime juice as an appetizer.

    Something else you might want to try is making Navajo tacos first you make bread dough and roll it out and cook it on both sides then put your soup beans on them your veggies with cheese there delicious

    I used to pickle all kinds of veggies, but I added tons of garlic and dill to my Brian. I love dill. I saw one of your vid’s about potato salad. You used Sweet relish. I use dill relish in mine. Almost same recipes, but I do not add as many eggs as you do. Maybe I should try adding more eggs next time. I have always said Potato Salad is the “Food for Goods” well you know the Mythical Gods.
