    Did this last night! It was a revelation!!! My girlfriend always says that she doesn't like pistaccios so i just said that it was a different kind of pesto. Only when she was serving herself seconds that I said what it was 😅 thanks for the inspiration :) i'm going to be proud of myself for some days for managing to cook something so delicious :)

      @@frontrevolutionnairepaulVDB funny, it’s similar to Germany‘s (Frankfurt‘s) "Green Sauce" which my dad talks about a lot (he has memory issues, so he keeps repeating himself).
      Pronounced in French, "Sauce Vincent" is a good name too. I still think "Vincensauce" (which almost sounds like "Vincenzo’s") is far enough away from that. But yea, point granted.

    I made this pasta tonight. I couldn't get Pistachio's here so substituted Cashews. I messed up and added 200g of cashews instead of the 125g, but it still turned out fantastic. My wife loves it. She has not been a pasta fan but following your recipe's and techniques has changed that. We have had more pasta in the last 3 months than in the last 10 years! Thank You!

    Oh, this is beautiful, my mother and I used to make pistacchio pesto for special ocassions, but never considered fennel/lemon, gonna invite my mother, will give you a full Review in a week!

But well, good things take their time, had my mother over for dinner, just two days ago, and the dish was amazing, especially for hot summer days since the flavors are very potent but light. I took the liberty to add some dried chilli, because my mom loves spicy food and it fit like a charm (smth. like a habanero, with a lot of this fruity cherry-esque flavor). Also, since we are vegetarian, I've replaced the shrimps with some seaweed tofu marinated in the base sauce/pesto, of which I fried some bits seperately afterwards in betel leaves for garnishing.
      My mother loved it albeit she prefers her version (but well, it is borderline impossible, that she perfers something over her own treasured creations:D)

      Fresh pressed (and reduced?) orange juice could be a nice alternative to lemon juice for those lemon juice is too acidy for.

      I made this and it was awesome. I added some breadcrumbs to the second helping but I wouldn't change anything.
      Don't be afraid of the lemon! When I was making the pistachio pesto, I was surprised how naturally sweet it was. The lemon helps balance it.
      The secret hero was the fennel fronds though. Subtle but noticeable flavor. I wouldn't change anything about this.

    Such a beautiful recipe! You're using ingredients with a very delicate flavor profile that won't overpower the shrimp. Overall the recipe sounds really fresh, particularly good for a summer dish with a nice glass of prosecco! I love fennel, it has a really fresh flavor, almost like anise but more delicate, it had never occurred to me to pair it with seafood but it makes a lot of sense when paired with the lemon, it won't overpower it at all, same with the pistachio. I must try this!

    OH MY GOODNESS! This is AMAZING! Just tried this today…my daughter loved it…unfortunately some people in my family are allergic to shrimp, but I made it with chicken. I know not the best replacement…but I had to give them something.

    Use a silicone spatula to get the full ingredients out of your pots pans blenders etc. game changer, you get all of it out and so simple to clean afterwards

    That pistachio sauce reminds me of a Wonderful Mozambique sauce called Matapa. It's usually done with green vegetables, water, oil and peanuts. I can almost tell how that sauce would smell from that! Amazing Dish!

    Just made this dish, pretty amazing! I am thinking I would have liked basil a tad better, than fennel. And of course I had to top it with pecorino cheese, you sir have gotten me addicted to it.       I believe that Vincenzo didn't use Pecorino because it has shrimp in it :) You usually don't mix the ocean with cheese. @@vincenzosplate

    Love the idea of pistachio pesto! I am not a huge fan of pine nuts but I do love pistachios! I get the feeling that the lemon is an imperative, though, and that's where I stumble. I'll use wine in pasta sauce but lemon is a bit too intense for me. But I might try it! That ricotta might help!

      Just in case Vincenzo doesn't see your comment: from the look of them at 2:47, I am almost 100% positive they are raw and unsalted. I buy them all the time. It's also a good idea to use unsalted so that you can control the amount of salt in the dish. Just like using unsalted butter.

    More of the magical pistachio! I definitely need to try this, as I love everything about it. Awesome to have a non-tomato-based sauce for prawns, at last! (Don't get me wrong, I love a spicy tomato and prawn pasta, but a lemony pistachio-y pesto with prawns sounds heavenly! 😋)

    Vincenzo, I decided to try your recipe. I made it exactly as you prepared It with prawns but also made a portion with chicken ( someone was allergic to seafood)....using boneless chicken thigh, I marinated the chicken in a lemon/olive oil/s+p for a few hours b4 putting it in the pan...overall this is a simple dish to make...I do believe the pistachio sauce with the prawns needs a little seasoning...I used unsalted pistachios...the addition of fennel is wonderful...

      @@vincenzosplate I keep hoping you attempt a Lasange di mare….I know it’s really not an authentic Italian recipe but it would be exciting to put together a recipe that is not overly dependent on cheese and cream like many of the recipes online…for me they’re too rich so I’ve been experimenting on my own to find lighter alternative…so far I have found combinations of lobster, scallops and prawns in a white wine garlic and herbs give the nicest consistency with a béchamel cheese sauce using provolone/young caciocavello with limited layers of pasta (max 3) works the best…
