I'm excited for you guys to hit more of the countryside! Definitely stop in Phong Nha if you have the time and explore a cave or two there! They're incredible and was definitely one of my favorite spots. Anther one would be The Marble Mountains just north of Hoi An! Majestic. Stoked for you dudes.

The one term I remember from Vietnam was - Oi Choi Oi: roughly the equivalent of Oh My God in Vietnam. It fits very well as an expression of astonishment or shock, useful phrase to roll out when bargaining in the local markets when price was to dear.

Crazy. I dated a girl from Nam Dinh while I was in Vietnam. She would come up on weekends and visit me in Hanoi, and we spent a week in Da Lat. I do hope you visit Da Lat. Also, regarding food, offal is pretty commonly eaten there. Not bad as long as it's cleaned well. You'll also find snails. Asians eat pretty much everything.
And as regards Ninh Binh. Don't stay in Ninh Binh, find a homestay in Tam Coc (Tam Coc is the reason people go to Ninh Binh anyway). It's cute little town set amongst rice paddies and the crazy karst rocks that make up the landscape that it is known for. People refer to it as the Ha Long Bay on land. Definitely recommend a hike up Hang Mua. Stunning views of the landscape. But if you only have time to go to one place there make it Bai Dinh Pagoda. Bit of a bike ride, but for sure one of the most stunning buddhist temples I've ever seen. Would make the sickest drone footage. And eat at Gia Minh Beer Garden. It's a family-run place, though I guess most places are, and when I was there they had the most adorable kids wanting to practice their english with me. Good papaya and tofu salad as well.

With just below 9 M people, very close to London metro, Saigon isn't one of the biggest cities in the world (Tokyo is +30 M). Don't get close to a KTV or Karaoke, unless you wanna get scammed.

Don't wear the Vietnamese t-shirt in Asia town outside of Vietnam as i did once. I got that many comments and dirty looks. I offended a refugee lady abd ended up getting a lesson on cultural insensitivity. Down south probably not a good idea to wear the flag shirt James its a different political slant. I didn't know how offensive it was. Over 30 degrees in the wet is hell on wheels.
