Because Rang is from Phan Thiet which is far southern Vietnam, he migrated to Canada in the 80s so it is understandable he wouldn't know much about Northern Vietnamese cuisine. But nevertheless, Hugo is full of shit and knows nothing about what he's talking about anyway. 🤣
@@zoeyloco except for that part where he includes lemongrass among the spices in the broth. I strongly believe we only use something as strong in Bun Bo Hue to balance the shrimp paste, rather than in something as light and delicate as Pho.

@James Prime not the broth its self but the way of making broth, possibly was some sort of proto-pho but when the french itroduced a new technique the locals probably liked it more, the french are known for cook as the vietnamese, to think they lived together for years and they didnt rub off on echother is foolish, just like the mediteranian influences in philipino culture and food.
I'm 100 percent vietnamese and Matty is 100 percent wrong. Pho did not originate from France. Even the French guy didn't go along with Matty's theory. Yes there is a lot of food that we have that is influence by the French and I love that. But pho is 100 percent vietnamese. Matt was shooting his shot trying to sound educated on TV but without doing his research he looks stupid

I absolutely fell in love with Hanoi and the people when I got to play some music over there and once all this craziness of the pandemic dies down, it’s on my list to revisit. Had the best Pho of my life down a street alley and every concert I did had a great dinner and hospitality presented to the musicians.

Correct me if I'm wrong, but wouldn't it not be incorrect to say it's kinda like American barbecue - the various techniques were brought over with the slaves from Africa, but since then it's evolved into something entirely new.
False credit? No matter how much you try to hide it, Vietnamese food is based on French techniques and food. Of course, it's different than French food and it is your dish. But to say that the French had no involvement in Vietnamese cuisine is culturally ignorant.

I wouldn't compare to Italy but you can find a really good quality pizza in Hanoi. I tried once and I was quite surprised. Wood fire oven, nice products on the pizza.
