How to skin & bone out a deer - The Venex way!

- Steve Graf shows you how to bone out a deer, the venison processing way. Muscle groups are dissected without cutting across the muscle themselves. The footage is taken from The Graf Boys dvd - Hunting for a Living - 1997. New footage, and historic stuff like this, are loaded on to the tvwild.co.nz website, weekly.

Lost count of how many times I have watched this over the years. Proper skill and practicality. Almost 10 years old now! Bloody hell!
I've been a butcher for 15 years and this is about as good as you can get right here. Very good job!
I NEVER comment on any youtube videos...I felt so compelled to comment on this that I just had to. This is the best, most informative video I have ever seen on here. Someone that's not lazy, and actually understands the geometry and mechanics of how an living animal works when butchering. It's what I strive for as well.
Well done! I see too much waste because people can't be bothered to understand anatomy. Easier for them to hack out choice cuts and throw the rest away.
It should be a point of pride for any hunter to be able to say they respected the life they took and harvested to the best of their ability.
This is the BEST video on quartering a game animal ever! 13 minutes and you're done... without wasting anything. I'll watch this one again and again... and I did order one of those knives... : )
Except the ribs, he waisted the bone
I wish I had seen this 40 years ago. Thanks for sharing, excellent information and a whole lot easier than the way I've been doing it for over 40 years.
Well...If I could be half as quick and precise as this gentleman here...I'd be a happy camper!
Great job!
I must say, I was wanting to learn how to process a deer and once I saw your video, I feel all need to do is learn to do exactly what you show here. I don't need any other videos. You are the man!
Harvested my first deer yesterday, and this video was the one I kept referring to in my mind as I dressed it out. Super helpful!

Nice job Steve Graf. Its nice to learn new tricks. Great video.

Best video ever of skinning and boning a deer.Great job. Sharp little knife you have there. I must get one of those. I use to cut meat for a living for 25 yrs. and this was very helpful. You have a great talent. Most people don't know that "cutting meat" is an ART. Thank you.

The best video I've seen on skinning, and cutting meat on a deer so far, and I have seen many. I wish he would show how to gut the venison too.
Thanks for teaching me. I deboned one of my lambs and used your
technique. It is now my favorite method. It was surprisingly quick and
easy due to your excellent video.
Best butchering vid I've seen, love how you do the rear legs!
The cleanest skinning and de-boning video I've seen so far
ngon qua
Thanks again! Recently I have deboned 6 lambs/sheep. Age range from 5 months to 30 months. Your method is quick, and efficient.
This is the BEST and most efficient job of boning out a deer that Ive yet seen.
Excellent work.
This is the best deboning vedio I ever watched thank you for sharing

Who the hell would give this a thumbs down? Ive seen dozens beyond dozens of these and none quite this good. Must be some bush processing masters out there afraid to share thier skills. Well done !!!
Actions speak louder than words, bloody nice work and thanks for sharing mate I've learned a lot!
Nice video. No waste of meat at all.
Best skinning quick & clean.. Good Job.
Stop fking around
great job!!!!! its about time somebody puts out a youtube video that knows what he is doing. great video. from a butcher in Minnesota usa
Excellent and educational video!, I'm medical doctor, and you made me remember when I was teaching Anatomy at the Faculty of Medicine, and the dissections on the cadavers, you look like an anatomist!
Thanks for share it!
This was actually very informational.
Shouldn't you be killing Titans right now?

Great job ,dude
That was absolutely impressive. I can tell 'that was not your first time' doing this. You have some serious skill here. Thanks for showing us how to do that right. Take care of yourself out there and good luck to you.
Wow wow wow lost count of the amount of these I have watched and this is head and shoulders above anything else I've seen,no pun intended lol.Learnt so much in so little time thanks very much .
Wow! I don't think I blinked coz you were that awesome
that's one sharp knife...great video
I'm so impressed, wow! Very professional. I was worried that the knife was too small but you certainly showed me.
One of the best de-boning videos I ever seen! Way to go! Thank you!!
A Mercator knife is used. Cheers!
TheGrafBoys they still around?
Heh. Everyone keeps asking about the knife. It looked that easy because the guy is skilled at doing it, not because he was using some top quality knife. He's using a $30 folding knife (Mercator), but he's using it with skill, and doing something he's done likely hundreds, if not thousands, of times.
Correct! A good summary. Cheers.
TheGrafBoys Do you use the carbon blade or stainless?
auguzzo I was also wondering if you have a field dressing video? Would love to see your method. Thanks.
and you can easily make a 12$ knife cut through anything on an animal if you know how to use a sharpening stone
davidpkm you must be new to skinning
Awesome job. You are a great teacher and I learned a lot. Thank you, from the USA!
This is the best Deer Skinning and Meat Cutting Video I have ever seen. I always have trouble removing the Hams. Thank You for making this Video. I learned a lot from It.
Damn all I could think was how sharp that blade must be haha!

Excellent job of de-boning a deer. Would like to say also very nice size deer. How much did he weight if you know? Thanks for the video.
Hi, Larry. This deer was only a young one. About 80lb at most. This particular species is Red Deer, and was shot in New Zealand. Cheers.
TheGrafBoys It sure did look bigger for some reason. lol. You did a great job my friend. Take care.
+TheGrafBoys
It looks a lot bigger than 80 to me as well
Great video

I have watched this video countless times. So many little tricks! Cheers
A true clinic on how to skin and bone a deer. I wish I had your skill (and your knife.) We prep our deer in a similar way when It is a long "drag" to get them out of the back-country. What we do afterwards is to lace up the hide (like an American football, ) with a length of rope, attach a swivel like you would use on a dog leash, attach a pulling rope and drag the meat out that way. The bundle of meat can roll back and forth, will stay clean and be protected. This works great if you are a long way from camp and do not have an ATV or horse at your disposal. Thanks for your great video!
Man that was art
+RBGUERILLA Can you skin any Deer like this?
+mikeworld39 no way I've never even tried.
***** Is this method only used for certain type of Deer?
+mikeworld39 hou
you stack like a deer in look like a deer.
if I can't sleep, I just watch this!
Very professional. and taking care of as much meat as possible shows respect for the animal. Cheers
Thank you young man. Incredible knowledge and skill. Respectful of the life given.
What kind of knife is that? It seems to be able to cut through everything
sharp one.
It’s a Mercator
I would have taken 3 hours and about 140 stitches to do what you just did.
+Marbles McGee Yeah, me too!!!!
FATTAN SA WTF????
FATTAN SA
"and you'll messed up" .
I don't know what your first language is, but that sentence makes no sense.
FATTAN SA what were you trying to say?
I have processed many deer in my life but to see a new way to do the sane thing is always helpful Ty
Great video, thanks for taking the time to share. That wasn't the first time you've done that ah!
IF I were a hunter this would have been really helpful - great video -- where are the innards???
you typically gut it at the site to start cooling the animal.
so likely wherever they shot the deer. other animals will come and clean it up.
choizieify Just don't forget to grab the heart and liver. It's such a waste to leave them in the gut pile.
SouthernSportsman174 definitely
But the guts can go.
Dennis Choi yeah, most of it, but every time I watch an episode of "MeatEater" I seem to always find one more thing to take.
Outstanding mate. Jack-The-Ripper would have been proud to know you, maybe even would have taken some lessons from you. Could you tell us what knife you are using?
Howdy. it's a Mercator knife. A Basic, but very effective German-made knife. Cheers!

Great s/s handy knives, but watch there are knock offs out there that are poor quality, ( had a near new one the blade bent back) try find an original German made one.
Excellent job. Well done. The best I've seen on CZcams.
Great video. Thank you for posting will definatly be watching it a million times when im actually doing it for the first time
2 thumbs up
you face some of the best butcher, very good clean meat+++++
1000kalad
if you take a air tank and a foot ball needle and stick it under the skin and air it up it comes clean with no meat on the skin it literally airs up like a foot ball works on rabbits to
That's... ah, weird, but if I was crashed in a C-47 and had and oxygen tank...
Teresa , not many hunters take an air tank into forest, that would be practical if your butchering at home, but not when your in the field , and besides skinning with a knife is a lot more funner....
Still the best how to process a deer on youtube.Makes the others look like amateurs.
Thanks for teaching me. Deboned a lamb a few weeks ago with your method and it was quick and easy thanks to your excellent video.
The music at the start sounds like something out of a bad 80's porno! Glad that didn't last the whole film!

I’ve just subscribed, and that’s because of this demonstration. He’s a Master.
Very good video. Way the haunch was split up was very well executed and made to look easy.

Calvin Lam .
Does anyone know if you could use this same process on a sheep?
I deboned one of my sheep this way and it was easy, quick and worked fantastically. It is now my favorite method for processing my sheep.
I am sure yes.
You can use in sheep too
What else you do with sheep? :D
Same, we (butcher shop) just cut down sides of backbone, then from leg down followed bones so ended up with 1 piece carcass, and 1 piece meat for further processing. Quick, easy, and clean.
This video could not be better, thanks very much lads!
after a long time, finally I saw a video that really satisfy me. Good Job Man
Help us in New Zealand to stop the poisoning of deer. Spread this video clip around to raise awareness ... czcams.com/video/rkgyXF56Uvo/video.html

Yes
was that deer made by Lego?? holy crap
Very impressive, glad to see nothing go to waste. Very informational learnt a lot, GOOD WORK
I have seen many videos of this, but I think you are the world’s best!!!!best
Great vid! The only thing I do different on the hind quarters is I don't do the muscle segments separate. I debone it all at once and then separate the segments later when I process the meat. Same end results though. Good eatin :-) great info for others. Hats off to you my friend.
The skinning part is really satisfying to watch oddly enough
Extremely well done... very clean! Very good knife!
One of the better videos, thanks for posting.
Excellent knife skills and a very good understanding of anatomy...
You guys are legends. I'm learning so much. Cheers
You make it look that easy, your awsome. THANK YOU 👍🏽
Great Job, This year i am prepaired to do this. Going on Friday - wish me luck!.. Living on my own now and supermarkets are EXPENSIVE.. maybe ill stock my freezer with some venison this year!
Great video. Thanks Heaps.
Man, if I tried working that quickly I'd probably lose a finger. Admirable job, I'm definitely jealous!
nice job bud. I like how you started a cut on each muscle section on the hind quarters so you don't have to wrestle a solid chunk to get a good grab and clean cut. Def gonna do it like that next time (I've only done a single small doe myself so that's a nice tip for novice hackers) =) again awesome job dude.
What a lesson. Thanks mate!! Cheers from Colombia.
Damn Steve, you make it look so damn easy..hehe! Great job I admire your skills, sir! 2 thumbs up!!
nicely done and nicely explained. Great idea using the hide.
Nice clean demo - congrates Steve.
Thank you very much for the quality information. Greetings from Germany :)
Makes it look easy. Obviously the result of many years, and many opportunities to skin and de-bone a deer. Exceedingly well done.
This was the best video I’ve ever seen amazing technique now all I need to know is where do I catch one
Awesome vid and not a bit to waste. Even the shanks which some might relegate to a burger or sausage pile. Modernly, in my country, Osso Bucco has been a new favorite use for venison shanks.
An expert per excellent. Great video that I've ever seen on butchering of animal. Thanks man for sharing
Great work man. You make it look easy.
Dude, you make it look so easy!
Ho visto varie volte questo tuo lavoro, devo dire che quello che sei riuscito a fare con quel coltellino e' veramente professionalità. Bravo
Very nice demo.....I learnt a lot from that.
Thank you....
Great video. Thanks for sharing!
Excellent
How beautiful dissection is it !
Awesome job on that bad boy, very informative 👍👍👍
Very good to see. I do some things like that . but I just learned some more good tricks thanks
