I have been butchering my own deer for years and years. I still enjoy learning how others do it though and this has to be one of the best videos I have seen on the subject in a long while. I even learned one or two better cuts than I normally use! Good video.

Excellent de-boning skills shown here.This is really how to do it folks. He should have shown how to hang it up and skin it too,but for de-boning, this video is good. The fly issue can be taken care of by packing a sheet of cheese cloth,to lay over the meat. Also,a fillet knife can be used for de-boning. The meat needs to be refrigerated right away.Ice cubes in plastic bags,packed around the meat in a cooler,can work until you get it home.In Canada,its usually cold enough in deer season,we can hang it up outside in natures fridge.

What a wonderful resource of organic free-range meat we have here in New Zealand... even some of our possums can be wonderfully tender and delicious. Thanks for all you are doing to look after our wonderful hunting-gathering heritage, something all our ancestors were part of since the beginning of time. Good to see a Mercator knife in action... they poke a hole through pockets, but the steel and blade shape are excellent. I remember seeing a box of these in an old hardware store priced at only 95 cents each... should have bought the lot. Best wishes from Nelson, NZ.
Outstanding, very tidy. I've always bone saw through the spine and made T bone chops, then remove the legs for roasting, but in 16 min you made that look so easy. All done in the field, a more manageable carry to the ATV, and the old girl can't complain about any mess. I'm going to watch that again.

nice work. people can get so intense on how to butcher an animal, whether bones are left clean etc. At the end of the day, you got 98% of the meat available and pretty quickly too. I'd be rushing with the amount of flies too. What about flapping the skin over to cover the meat, suppose you could flick dirt up over the meat by doing so. Tying skin into a bag maybe. I was waiting for the weight of the other leg to pull the shin up over the branch, didn't happen ;)

The Tougher brisket neck meat etc I mince then use it as meat patties. Too good to stew IMO. Flies don't look as bad as the Kaimanawa Budgies. (Wasps eat flies :)
Ha ha. Yes, you could be right. We should have had a disclaimer ... This is how to cut up the deer, but because of the amount of 1080 poison dropped across NZ forests, we recommend not eating it!

Some of your other commenters seem to think flies/ticks don't land on live animals, before they go to the butcher,to commit suicide before they turn into what they purchase at the supermarket. Nice tutorial. Deer are not endangered. ON the contrary, they are flourishing in most parts of the world. (US, Canada, and Russia) according to land based area statistics)

What about those flies? You know how to process a deer, but I know those flies shouldn't be allowed to lay eggs/larvae all over meat like that.
