  • New Zealand mobile butcher. I had an unexpected opportunity to watch an expert butcher at work while visiting New Zealand. While visiting a farm nearby, I went for a morning walk and saw the trailer with "Magpie's Home Kill. Call Lee..." I immediately stopped to check it out and asked if I could watch and record? Lee said "go ahead". So I got to watch and record a master butcher at work. Not all of the conversation would be appropriate for every listener, but I enjoyed the experience very much.
    So while this topic doesn't appeal to all viewers I found it very interesting and will no doubt watch it myself several more times to improve my own butchering, skinning, and meat cutting skills.
    Among the things of interest in this video, my favorites are speed of how easily he cut the legs off, the efficient use of time and effort in every movement, how Lee had his trailer set up was fascinating and very efficient, and my introduction to Victory Knives.
    Victory Knives: My regret is that I did not visit the factory in Auckland! I have since researched more and am currently trying to figure out which knives I will be ordering from them.
    These knives are possibly the best quality in the world, and according to many butchers across the globe they ARE THE BEST!

      @@thevalleygate625 that's awesome. For myself, I was nothing more than a passerby who recognized what was happening and asked to watch and record. I had no idea that the video would become so popular. He's certainly a very skilled butcher and it was fun to watch. Apparently you and I aren't the only ones who think so!
      My trip to New Zealand was fantastic. I could hike there every day for the rest of my life. I still haven't even posted all of the longer videos of that trip yet. I'm going to pin your comment on the top of the comments because I think it's great to finally get a comment from someone who knows him.

    My uncles worked in the slaughterhouse across from the bar my mum worked in. They came in every lunch time with meat for my mum, ribs, sirlion,brisket, liver, t bones, you name it. And my mum gave them beer. We were the best fed family in Aberdeen. . Miss you mum. Great days.🙏

    My old man had three butcher shops. This bloke reminded me of him so much. The confidence with each stroke of the knife, the care of his tools, the slick movement around the carcass, yep, that was my Dad all right.

    This is one of the skills that was mostly needed during the 2020 pandemic in the US and they where starting at $60 an hour during that time. Awesome video and great job to this professional.

    I have been a hobby farmer with only 26acres in Australia for years, and we loved to care for our animals for every day of their lives. There was ONLY one bad day for them. And so it will be for us... we won't know either.
    Great skills know where your meat comes from, and don't waste any of it.

      I had the wonderful opportunity to visit Australia in 2018. Would love to return. What part are you in? I saw Sydney, Alice springs and Broome on the north west coast.

      @@lovesloudcars It's better done this way than in a mass production facility where bacterial contamination can easily occur. I know a worker in Canada who told one kill facility does 9000 animals a day. They also do the full butchering and product line in the neighboring facility with bacon, sausages, chops, tenderloin, cold cuts, etc.

    I was working on a road works site one day near Putaruru, NZ and watched a home-kill butcher in a paddock shoot, skin and quarter two cows in one hour. He had the support of a hoist on his truck so making the job easier - no bending over too much. Professional guy who knows his job. He waved when he was finished. Unbelievable. Lot of these guys have worked in meatworks throughout NZ and some are hunters who do the same to their catches - deer and pigs. You never lose the trade. My specialty is sheep but this guy just blew me away. Thanks for the video. Awesome.

      Yup. Cattle aren't some intelligent intellectual critter. Lots of folks commented about allowing cows to see that.. they're just as curious to see a balloon caught in a rose bush, and don’t have the mental capability to go any further than mindless curiosity.
      I've been around butchering my whole life. Not once have I ever witnessed something that displayed concern or emotional response because one was being butchered. Lots of folks get upset about it, but the cows don't care.

      Свиньи умнее коров, но за более чем 50 лет работы рядом с коровами и забоем животных я никогда не видел ничего, что могло бы предположить, что коровы распознают, заботятся или понимают, если кого-то забивают. Они думают, и их можно научить, а также они демонстрируют множество инстинктивных поведений, в том числе иногда реагируют, когда чувствуют запах крови. Но когда они видят, как забивают другую корову, они проявляют не больше любопытства и беспокойства, чем когда они видят пластиковый пакет, застрявший в розовом кусте.

      Luckily they aren't that smart.
      Some folks are pretty worried about that. In my 50 + years of being around cows and butchering animals I have never witnessed anything that would suggest cows recognize, care, or understand if another is being butchered. They do think and can be taught, and also do display a lot of instinctual behaviors including reacting sometimes when they smell blood. But as far as seeing another cow being butchered they are no more curious or concerned than when they see a plastic bag caught in a rose bush.

    My father owned a meat packing company in Indiana after WWII. I grew up watching Claude the butcher dress out cows & pigs in the summer when school was out. They make it look so easy. It might be easier in a controlled environment but a real challenge in the field.

      @Flawless_Victory2 well, except for the fact they're too dumb for thought or logic. The smart ones cause trouble it seems, the rest have no more thought than to stand and eat all day.
      I've had a few comments saying it's cruel to eat them, but so far it's a free world where it's OK to have different opinions on this topic unlike some others..

    Growing up in a neighborhood of mini farms. Mostly chicken, but some neighbors raised cows, pigs, sheep, ducks and rabbits. The kids in the neighborhood would gather wherever the butcher showed up, and we would get to watch this process.

    Listening to you getting a steer that dressed out at 1800lbs carcass weight is one big animal. I remember cutting one up about 40 years ago when I was a butchering, and it dressed out well over 1800lbs, took 4 of us to swing the buggers front quarter onto the saw.
    The dairy cows are called Holstein Friesian, they’re a Dutch breed.
    We were always taught to get a trade then do what ya want to do in life, I went the route of law enforcement, but always had my trade for hunting moose bear and other game.
    This fellow does a nice job with his set up.
    We used to used cleavers ( very large ones) to split veal calves.
    Really enjoyed the video brought many memories back.

      Thanks for your comment, sub and watching. I've watched a few of these guys on video before & saw them split with a huge cleaver. Makes a guy wonder which one has less bone splinters. Fast for sure. I ordered a few Victory knives after I got home & wish I'd had my brains on when I was in Auckland, it would have been cool to go to the factory.
      Trades: I have MANY thoughts plans & ideas around trades. I think the whole world revolves around the trades & somehow many people think they're not valuable..

      @@lovesloudcars those knives held a nice edge, and reasonably priced too.
      It’s also cool there made in NZ.
      I worked the retail trade then finished in a good sized abattoir.
      When I started in the early 80’s as a butcher it still was a great trade, then the business shifted to “box meat” everything broken down on an assembly line in huge meat processing plants.
      It just wasn’t the way I wanted to send 35 to 40 years working in the cold and doing the same thing over and over again.
      I was trained to do everything smoking sausage making the whole trade.
      Now they call the meat cutters, just not the same trade as it was once.
      It’s sad people look down on the trades.
      I asked at a grocery store what there cutters make a hour now, I thought was making about the same money 40 years ago as they are now.
      Not get trade it once was unfortunately.
      We used to have a bone saw that split the the carcass, it only left a wee bit of bone dust after splitting.
      I’ve seen people use axes hand saws cleavers and chainsaws to split the carcass.
      I agree with you he had a great set up on the trailer.
      He was really clean to.
      Rinsing the beef carcass after skinning is so important.
      It avoids E. coli from faeces that might have gotten on the carcass when skinning the animal.
      Did that fellow do the custom cutting to or just killing.
      There’s another fella that does the CZcams Channel from New Zealand. That does the same thing. He just has a bigger truck can’t remember his CZcams channel name.
      It would good to see the trades more respected in North America that’s for sure.

      I enjoy seeing new things as well as learning new things. My normal content is much more machinery & driving than this but a variety is nice. My wife asked "why don't you just post one topic?" - Because I do more than ONE thing!

    It was -21 when we found a deer on the roadside. Chest still warm but legs getting a bit frosty. Right next to a large apple orchard. BEST LOINS I have ever eaten.

    When i was younger back in the late 70's and early 80's, we used to butcher about 3 bulls per year to feed the 7 of us in our family! We were the only family in the area that raised our food naturally and this brings back lot's of memories! The Liver, Heart, and Tongue make a good rich meat pate"!

      I was raised pretty much the same. Middle of 7. Been around this my whole life. This was an unexpected bonus to stumble across this guy while on a morning walk visiting New Zealand. He's a craftsman as far as butchering goes, and his trailer was set up great. I ordered some Victory knives when I got home to Canada.

      @larryrunnels1190 that's his answer, but I know people who butcher bulls. Young ones that haven't been used because they grow faster than steers. Maybe that's what they were doing.

      @@larryrunnels1190 We butchered fully grown bulls for more meat because we didn't have a large herd. We carried about 30 head of Cattle and some of those were dairy and steers were sold at market for revenue. We kept 2 bulls for breeding!

      Some people are worried about that.
      In my 50 + years of being around cows and butchering animals I have never witnessed anything that would suggest cows recognize, care, or understand if another is being butchered. They do think and can be taught, and also do display a lot of instinctual behaviors including reacting sometimes when they smell blood. But as far as seeing another cow being butchered they are no more curious or concerned than when they see a plastic bag caught in a rose bush.

    First time watching a butcher at work, so im surprised by how much blood there wasn't! Had it been sitting for a while before he started working, and the blood drained out?
    Was curious how he was going to remove the inner parts without popping the stomach too! Very clean and quickly done.
    This was very informative, and one heck of a selling point for the knife used to do it!

      Well to be honest I've been around cattle and butchering my whole life and I've never witnessed anything that could be trauma or concern. I think they are genuinely curious in exactly the same way as they are if they notice a plastic bag caught on a rose bush.

    in our country the Philippines, every cow part is edible except for the skin. But they are not thrown as well but used to make leather belts.

      It is interesting how things are done differently in places. This was New Zealand, but in Canada where I live there are many different ways to do it and different families save different parts.

      The butcher was very skilled in he's works.
      With halaal meat slaughtered, often, the animal should be separated from the others before being slaughtered,
      Even the blade not visible to the animal.
      Cows do know when they are about to be slaughtered though

    That's such a good idea, it's hard enough where I live (North Carolina coast, USA) to even find a butcher willing to do a live animal nearby, much less someone to come to your farm.

    In Oklahoma,U.S.A. We love eating Chicken fried style Beef liver and onions with brown gravy + that cow hide would make a good horse blanket,what a wast, Great butcher.

    gotta agree on the victory knives. have run a few over years roo shooting. cheap but good steel, hold a scalpel sharp edge if you dont treat em wrong,(nice to see him very gentle on the steel), great wet hold handles, an important consideration with bloody hands...that whack on the bucket didnt help that 1 though lol.
    mans pride in his work showing there. beautifull clean work and job.

      Yes. I had never heard of Victory knives before then. Unfortunately I didn't have my brains on when I was in Auckland, or I could have visited the factory. I've ordered a few knives since getting home to Canada, but haven't butchered anything since.

      @@lovesloudcars one thing i particularly liked with them is even with a not razor edge ground on, they still held realy well.
      Working on roos was tough on field knives. lots of dust and sand on the skin and cutting through hair rips a fine edge down fast.
      I had 1 for super sharp work, but generally ran them with a tougher working edge that would last through a 50 roo night without too much trouble.
      you wont have any trouble liking them im sure.
      My son worked on an abattoirs slaughter line for a while here and has a kinda different feeling for them, they were issued for the job, but he was always cutting himself under speed of work pressures lol.
