INGREDIENTS

THE CAKE FINGERS
Dry ingredients:
220g almond flour (sifted) /Or 120g almond flour + 50g coconut flour
3.5 tbsp erythritol sweetener (Adjust the quantity if you use other sweetener of your choice)
1 tbsp baking powder
A pinch of salt
Wet ingredients:
180g coconut cream (we only want the cream part)
2 tbsp apple cider vinegar
Vanilla extract
“Flax Eggs”:
3 tbsp ground golden flaxseed / or regular flaxseed
9 tbsp water
THE CREAM
1-2 tins of 400ml coconut whipping cream /or regular coconut cream (we only want the cream part)
200g unroasted cashew nuts
Icing erythritol sweetener /or any sweetener of your choice
Vanilla extract
OTHER INGREDIENTS YOU NEED
Cacao powder
Sugar free dark chocolate
A few shots of strong coffee
1. Soak the cashew nuts overnight with cold water or 2-3 hours with hot water. Pop the coconut cream in the fridge to chill overnight.
2. Brew a few shots of espresso or strong strong coffee. Leave to cool to room temperature.
3. Make “Flax Eggs” by whisking the ground flaxseed and water together. Rest in the fridge for 15 minutes or overnight if you wish to prepare beforehand.
4. To make the cake. Place all DRY ingredients in a mixing bowl and mix with a spatula. Add in the “Flax Eggs” and all the WET ingredients. Combine everything together with a folding action till the mixture forms into a firm batter. Pour it over an 8x8 inch well-greased square cake tin. Even the surfaces and tap the tin on the worktop a couple of times to remove air bubbles and gaps.
Bake the cake batter in a 170-180°C/325-350°F for 35-40 initially, then cover the cake tin with a piece of creased baking sheet, bake for further 15-20 minutes. Remove the baking sheet and brown the surface of the cake with another 5-10 minutes baking time. Once cooled, cut the cake in individual ‘fingers’ and they are ready to be used.
5. Whisk the chilled coconut cream (cream only) till it reaches the whipped cream consistency. Keep it in the fridge till you are ready to use it.
6. Drain off the soaking water from the cashew nuts and blitz the nuts in a food processor till super smooth and creamy. Combine it with the whipped coconut cream, icing sweetener and vanilla extract by folding all ingredients together with a spatula.
7. Assembling the tiramisu. Dip the cake fingers in the coffee and lay them out on the bottom of your container. Leave some space in between the cake pieces. Spread half of the cream mixture on top and fill in the gaps. Dust a layer of cacao powder and sprinkle some chocolate shavings. Repeat the steps with coffee-infused cake fingers, cream, cacao powder and chocolate shavings. Your tiramisu is complete! Chill in the fridge for 2-3 hours or overnight for the best results.
Cut in portions or scoop out as you go, and enjoy x

I wish you were my friend and neighbour! I'm not a supporter of complete veganism, after 17 years of being a vegetarian, mostly on a lot of carbohydrate foods... For me, the essential change was to be in fat metabolism. I love it. It took me a little bit of time. But I certainly wouldn't resist your keto vegan offer. Not many people are keto vegans. Fat adaption took some time for me as well. But once you're there you are in a different mode.

Oh my. That looks heavenly and definitely a fan of. I am going to give it a go, just need time to make a list and find the each of the ingredients. I don't like cashews being that they are part of the Poison Ivy family so I am going to substitute it with macadamias instead. Have you ever tried Allulose for sweetener? It is my favorite sugar substitute and is a probiotic. What a scrumptious looking treat. Thank you Fan for sharing this and definitely let us know when your book is available. Macadamias could be a great alternative as it makes beautiful cream as well. I haven't tried Allulose as it's not commonly available in the UK. Thank you for your kind wishes. Happy holidays to you X

hi, I just discovered your channel and I was so excited to find a keto vegan recipe channel. Upon searching for some of your baking recipes, I noticed that most of your recipes have almond flour as an ingredient, unfortunately which I don't prefer only because it's very expensive where I live. Is it possible to create more recipes with other types of flour besides almond in the future or replace the almond flour with other types of flour that are keto-friendly? having said that, thank you very much for creating these recipes for vegans. I really appreciate all the work you do. 😊
I’ve been trying to figure out a nice anise biscotti. I like the texture of this cake and think if I flavored it with anise and cut it into fingers it would be a reasonable substitute.

Have you heard of fiber flour from company longevity in the uk? they sell the ultra fine one. If you are not scared of gluten you can make lady fingers close to the real thing in texture. Yours looked a bit too cake like to the real lady fingers but I can imagine still delicious :) Love the vegan version of this. trying to do both keto, vegan and no gluten can be a real challenge and Christmas once in a while a bit of gluten would not hurt. I don't have any issues with gluten so I use this flour all the time for my baked goods :)
We follow HF because she is gluten free. Actually gluten does hurt. It hurts your gut.
@@Killerbee67 I also follow HF and she has posted a gluten recipe here before for pasta. I love her channel. Gluten is only a real issue if you have celiac disease and for others who are more gluten sensitive. For most ppl having some foods with gluten once in a while would not cause any issues and for those who it does then stay away.
@@GAR413 when I went to my doctor in 2020 I was diagnosed with RA and was in a lot of pain. I went to another doctor who did lots of tests told me everything I was allergic to and I had leaky gut. I did the same test every 6 months ( it wasn’t cheap) the second time nothing changed he knew I was still eating gluten.. I cheated but very little… it wasn’t till The second year that I completely gave up gluten that my test came back clear. So I know this to be true… now that I gave up gluten plus all the things I was allergic too my RA test comes up negative. I know longer take meds or suffer any pain. I hope this helps….
The last time I made a heavenly fan recipe was 5/2023. for my partner and their family. Since then my partner left me and I have been depressed and sooeycidal and everything about me has changed. Physically and mentally. I look like I aged 40 years.

Macadamia nuts are great alternatives. Soak them in cold water for 2-3 hours should be good. Enjoy it! x

The recipe seemed very decadent, but I would use pure monk fruit for sweetner and no erythritol as I have heard that it leads to strokes!
I've started making this recipe, but what I don't understand is why your coconut cream is runny when you use it for the dough but then you use coconut cream again and then it's solid.
My dough got really tough because my coconut milk (the cream only) has no liquid at all. You said you mixed yours with some coconut water but it wouldn't matter.
Both times your recipe calls for 'coconut milk(the cream only)'

220g is the sifted weight. I normally add the coarse bits back in the bag to be used for other recipes.

Yes it freezes quite well.
I love your recipes but I am just curious why you are still using erythritol since they now know it clots the blood and is associated with a high risk of heart attack. I was using it but switched to allulose and monk fruit. I was sad about the research findings because I liked erythritol.
I thought cashews is not keto friendly?
I really appreciate this lady she's so knowledgeable but, as someone who's health conscious both physically AND mentally I could never understand the 'have your cake and eat it too' (pun intended) approach to dieting. You know, where you try and compensate the lack of bad eating habits with simulated bad eating habits. Keto tiramisu, keto pancakes and keto french fries fall into that category. In other diets, like the vegan diet the same weird thing happens; folks will stop eating meat for some reason but then they still try to make vegan hamburgers, meatballs and go out and buy those vegan 'meat' products.
Personally that's half-assing it ;) (I'm half joking of course but still.. imho it puts you in some weird limbo 'health' space mentally as well in terms of getting rid of bad habits and cravings)
Fair point, I agree with you. I have used sometimes those strange vegan "meat" products, they are useful for the transition to a vegan diet, when you are still learning, but I always thought at some point I should stop using them, they are not the point.
I like that she uses Whole Foods. Very few processed ingredients.
