    INGREDIENTS
    ------------------
    DRY:
    220g almond flour
    1 tbsp baking powder
    sweetener of your choice ( I used 3.5 tbsp erythritol)
    A pinch of salt
    WET:
    3 flax eggs - 3 tbsp ground flaxseed + 9 tbsp water (1 egg: 1 tbsp ground flaxseed + 3 tbsp water)
    180g coconut cream (chill overnight and only use the cream part)
    1/4 cup lemon juice
    zest of 1 lemon
    vanilla extract
    FROSTING
    ---------------
    125g plant butter (use more if you want more cream)
    Sweetener (I use icing erythritol. Taste the cream to see how much you need)
    Vanilla extract
    DIRECTIONS (CUPCAKES)
    ------------------------------------
    1. Prepare ‘flax eggs’ by mixing ground flaxseed and water in a bowl. Cover and chill in the fridge for 15 minutes.
    2. Shift the almond flour and add in the remaining DRY ingredients. Mix well.
    3. Adding all the WET ingredients to the Dry ones. Add coconut cream last and adjust the quantity based on the consistency of the mixture. Gently mix all the ingredients together smoothly with a folding action.
    4. Spoon the batter in the cupcake mold/cases. Tap the tray gently to remove air bubbles.
    5. Bake in a 170C/325F preheated oven for 50-55 minutes. Check at the 40 minute mark, cover the top of the baking tray with a creased baking sheet to prevent the top of the cakes from over-browning. Bake for the remaining time (option to remove the baking sheet for the final 5 minutes)
    6. Leave to cool completely.
    DIRECTIONS (FROSTING)
    -----------------------------------
    1. Whip the plant butter (room temperature) till it is airy and light. Add in the sweetener, vanilla extract and lemon zest. Mix till silky smooth.
    2. Spread or pip on the cupcakes.
    3. Option to place a slice of lemon on each cake for decoration.

    Lemon Cupcakes

    Rind of one lemon
    1/4 cup lemon juice
    Up to 180 g chilled coconut cream
    8 cupcakes wrappers
    Bake for 50- 55 minutes at 325 degrees covering with parchment at 40 minutes if brown.

    Hello H.F. , thank you for the nice recipe. I made a cake because I don't have a cupcake tin and didn't add the frosting because I didn't have all the ingredients - and I definitely wanted to eat something sweet. 🙂 I let it cool for an hour. It is very nice and for some extra sweet taste, I spread some honey on top of the cake slice. Agave syrup is perfect too. Thank you for the lovely and easy idea! ♥️

    Making these tomorrow along with my second batch of your Lasagne style bake. Coconut cream cans are upside down in fridge as I speak!

      @@HeavenlyFan update, I made them and they are absolutely gorgeous. I tried piping the buttercream but it didn't go well....haha 2/10 for presentation but 11/10 for taste! The lemon &cinnamon ones were tasty too. Next batch will be chocolate mint. Nom.
      Lasagne bake take2 turned out well, cooked the aubergines and courgettes for longer this time and deffo made a difference.

    I think you just provided the perfect recipe for my mother-in-law’s birthday in a few weeks. Just need to decide on a flavor. Or maybe I will make several and create a rainbow. (I make square cupcakes that simply look like a single cake when placed side by side on a plate. Works well.)

    Lovely! Wish you could send me some but im in California. Wanted to tell you about my tried n true trick. If recipe calls for eggs ill use 1/4 cup sparkling water! Yes serious. Works great! 1/4 cup for 1 egg. Let me know if you try it. Love your videos!

      It calls for 3 flaxeggs so you may be able to replace it with 3 eggs. You can give it a try.

    Oooh that’s a great looking cupcake ! Especially thank you for sharing how to make a proper vegan frosting ( mine has not been great). Question please: How would I substitute the coconut cream? I’m guessing a combination of vegan butter or nut butter and plant milk or applesauce. Please advise if you can ❤ thanks and much love. Happiest holidays as well now that we’re in the season ❤

      You can replace the coconut cream with vegan yoghurt (find the thickest you can).

    Does the batter require an acid for the chocolate like apple cider vinegar or white vinegar to be lighter?

      Baking powder contains acid so you don't need vinegar. But you may need to add a bit more coconut cream to replace the liquid content.

      I use sugar alternative because I’m on keto. You can use any sweetener of your choice if carb count is not an issue.

    Is the almond flour, that you use reguargly like really almond flour (which is defatted) or just really finely ground almonds?

      Yes I think it would work. Make sure it's unsalted and unsweetened.

      You should be able to create a blend of coconut and almond flour. The texture would be slightly finer and less crumbly (if that's what you prefer). I haven't tried coconut flour only, but by all means make half a batch and see if you like the result.

      You can replace coconut cream with vegan yoghurt. But make sure the yoghurt is nice and thick.

      There are 16 tablespoons in 1 cup. 9 tablespoons is 1/2 cup plus 1 tablespoon.

      Any brand that is labelled as "almond flour" is most likely partially or fully deoiled/defatted. They should all work fine with this recipe.

      Yes it should work, but the colour of the cakes might come out slightly darker.

      @@HeavenlyFan Just wanted to update you on how it went; I used chia seeds instead, 2.5 tbsp water per tbsp of chia seed. It worked well. The cupcakes are super delicious! Almost a little too good, haha! Since I've been craving something like this for some time, I ended up eating too much :) Thanks for the recipe.

    If you either in frozen blueberries or centered the cream with a little of raspberry sauce made out of fresh raspberry mixed with erythritol on stove? Don't know but lemon and raspberry are a match made in heaven.
