@@gianfrancocartella3598 mi sa che facciamo a non capirci, se lei avesse assaggiato questa pasta da Alfredo alla Scrofa a Roma saprebbe che il condimento è a base di parmigiano sciolto sapientemente con un pochino di acqua di cottura della pasta per poter sciogliere il formaggio e renderlo cremoso al punto giusto e questo non è così semplice come condire con del semplice burro.Non per niente è una pasta famosa anche all'estero . Io ne posso parlare avendola mangiata proprio in quel ristorante che l'ha creata e resa famosa e mi creda non ha niente a che vedere con una semplice pasta al burro...

@@somebodys7404 I have to say that it's not the case. I was pretty early for their dinner service so I couldn't see more of the mixers doing their thing (Sig. Ubaldo wasn't there when I visited) but the man who mixed the fettucine was also the waiter taking orders and whatnot. Least the one man I did see was.

OMG!!!! I am so ready to hop a plane and fly over. I had dinner at Alfredo's in 1974 and at that time someone in the family was being trained at our table. That was almost 50 years ago and I have been trying to find Fettuccine Alfredo at restaurants all over the World since. No one can make it the same and this video shows exactly why. Only in Rome where it was originaled, does it include the love of family that goes along with its original purpose. A fantastid dish that is impossible to originate. Thanks for the memories!

Not intentionally. Fruits and vegetables taste completely different here than Europe in general. I couldn't believe their spaghetti was simply tomatoes but when I tasted it I realized our tomatoes and basil taste nothing like theirs. Which is why we need to add more flavor

è una questione di marketing: usano nomi altisonanti per nascondere la pochezza del prodotto che viene venduto; se sul menù ci fosse scritto "pasta burro e parmigiano" non potrebbero venderla a 20€; invece scrivendo "fettuccine alfredo" il turista medio, che è notoriamente coglione, si immagina chi sa quale prelibatezza e paga volentieri.
Stessa per quello che gira la pasta, "maestro mantecatore" suona chic, "cameriere" un po' meno.

My mother was Roman and when we came to Rome when I was a little girl in the '60's, we would go to Alfredo's. I would always get the serving platter and the gold utensils. Such sweet memories and such wonderfully simple and tasty pasta.

Just returned from Rome a couple of weeks ago. Our last stop was at Alfredo Alla Scrofa. The Fettuccine Alfredo is simply the BEST and tastes as good as it looks in this video. It's hard to believe a dish can taste this good with so few ingredients. The restaurant is very inviting with a friendly and attentive staff. This is a MUST VISIT place if you're in Rome.
High quality Parmigiano Regano is the important factor, after using it need u wont need much help from other ingredients to enhance the flavour unlike other "fake" cheese.
as an Italian it makes me ashamed other Italian created this tourist trap . paying 20€ for something like that is a robbery, it's just a boring pasta with butter and parmisan that hospital gives you when you are Sick 😅

I've traveled to many countries , but when I went to Italy and I tried It's food ,OMG ,I got to heaven , It's another level , It's was magic . Everything , even a simple tomato had a delicious taste . Now I live in the United States , and everything tastes like plastic .

Viola Elisabeth I took a cooking class in Rome on a visit there. The chef teaching the class said that Alfredo was not an Italian dish and even jokingly said “who is Alfredo?” She that it was an American dish that we claimed was Italian. So this is actually from Rome? For real?
You can google Alfredo. He made it up for an American was pregnant and had an upset stomach. The story is online.
In my case only the current American generation of my family eats this and only rarely. The older generation of Americans in my family would never eat this (they think it’s garbage, akin to Mac & cheese) and the Italian generation never ate or mentioned this and probably had ever even heard of it.

I've been watching a lot of the videos in this channel and I love how simple many of their dishes are but the key is the freshness and origins of the ingredients and how you handle them. The respect and pride they have for the recipes and ingredients is very admirable.
Honestly I don't think this dish to be particularly good. We italians have had many recipes throughout the last 2 centuries, some have made it to the present days, some didn't, and for a good reason.
It's just a case that the Alfredos became famous among the Italian Americans (yet a completely different recipe) if you consider in Italy is almost forgotten. Usually the pasta "burro e parmigiano" is what you eat when you're constipated.

Lucio Cinieri si si per carità qui si stava perculando il fatto che non hanno inventato nulla di nuovo è una cosa che abbiamo sempre mangiato e che sia un piatto di pasta economico da fare, a loro farne 1 kg (14 porzioni) costa circa 5€ compresi tutti i costi di gestione (iva,imposte varie,manodopera,materia prima) e lo vendono a 20€ per porzione, credo sia esagerato è uno specchietto per le allodole e solo i stranieri ci potevano cascare, poi ovviamente ognuno fa il suo lavoro e loro sono stati bravi a vendere questo piatto e farlo passare come specialità al pari di una carbonara o di una cacio e pepe, cosa che noi italiani (almeno il 90%) neanche morti ci caschiamo 😊

That recipe is so simple with so few ingredients. It has really been so perverted here in the US and made so fattening. I would have never known if it werent for this video. The dish on this video surely must be the best.

Here in Italy nobody consider this a great dish, it's just the typicall pasta you get when you go to the hospital. It's not all that at all, if you go to Rome you have to try
1) carbonara
2) pasta alla gricia
3) amatriciana
4) cacio e pepe.
Those 4 are the BEST typicall Rome-born recipes of pasta. Don't loose your money and time going to this Alfredo lol.
I'm not trying to be disrespectful, but tbf, cacio e pepe is also just pasta, black pepper and cheese. And I say that while I absolutely love cacio e pepe!

ESPERIENZA PERSONALE: Ci ho mangiato, e prima di dare un giudizio, le ho volute provare. Risultato? Le mie aspettative sono state confermate: una banalissima pasta burro e parmigiano. Pasta (ok è fatta in casa), burro (che per “giustificarlo” ti dicono che è un burro particolare) e Parmigiano (il medesimo degli altri ristoranti e che avete in casa anche voi). Il sapore? Non so se vi sarà mai capitato di stare male di stomaco, ma è lo stesso sapore della pasta burro e parmigiano che mangiate in quell'occasione, solo che in questo caso la paghi all'incirca 20€. Poi, se ci vogliamo prendere per il culo con la storia della mantecatura allora è un altro conto. Tant'è che quando il cameriere mi mantecava la pasta davanti, dicendomi che il segreto per renderla speciale è proprio la mantecatura, ci siamo guardati come per dire “ok io faccio finta di dirtelo, tu fai finta di crederci” …

Praticamente, questa e' una pasta al burro, con formaggio. Se non volete incasinarvi la vita, acquistate le tagliatelle di grano duro De Cecco. Son buonissime. Parmigiano Reggiano di 24 mesi??? E' buono pure quello di 18 mesi. Grana Padano??? Ci sta pure quello. Per chi preferisce il gusto forte, na mezza grattatina di Pecorino Romano, o Sardo. Magari Ricotta Salata. Se vogliamo essere un pochino sofisticati ci grattiamo sopra il Castelmagno. Questo piatto viene etichettato comunemente, ed in tutte le Regioni d'Italia,come piatto di "pasta al burro" BUON APPETITO.

Per conoscere come si fa la salsina guardi il video dello chef romano Max Mariola ma scelga tagliatelle all'uovo fresche è sottili perché sono quelle che richiedono questo tipo di condimento. Vedrà che non si possono assolutamente paragonare a delle insipide tagliatelle al burro...

You can get away with dried pasta but, if you don't use the aged Parmigiano Ragano you'll never come close to the taste.
I grandi Chef si riconoscono dai piatti apparentemente facili. Sembra una banale fettuccina burro e parmigiano, ma non lo è affatto, ogni passaggio della preparazione trasuda una lunga esperienza e sapienza che danno al piatto di Alfredo quella particolarità che lo ha reso famoso in tutto il mondo.

It's quite exquisite to see food without garlic or any kind of spices. I'm a southeast asean where the food here are fusion between chinese, middle east and our malay ancestors make food with a lot of spices such as Pepper, nutmeg, coconut milk, star anise, corriander, cinnamon and else. They are so strong that i can not imagine how food taste without them. So its really interesting to see something different.
I am also southeast Asian (Malaysian). It must be remembered that our cuisine reflects what's available to us: lots of spices, not a lot of fresh meat unless you caught or killed it yourself. If you live away from the coast, for instance, it's not easy to get fresh fish. So it's hard to preserve delicate flavours, and spices are a means to preserve the food. These days it is easier to keep things fresh and even import things from afar, so one can appreciate the more delicate flavours of the ingredients. My parents love making fish with tons of chilli, ginger, garlic, soy sauce, cooking wine etc. I tell them it's one thing to do that with, say, a muddy river fish like tilapia or catfish; it's such a waste if you do it with a nice fresh sea fish like coral trout or snapper. Just lightly steam or grill with a bit of salt and, at most, some lemon, so you can taste the freshness. It makes so much difference. Luckily my family appreciate it but a lot of Malaysians don't like it. For them, to taste the fish at all, it is too much for them. Fish tastes "fishy", meat is "too gamey". Anything that isn't really spicy and flavoured with soy, wine, ginger and herbs is "too plain".
The other commenter made this point. In a simple dish like this alfredo, the ingredients must be 100% perfect. Nowhere to hide. Sometimes cultures that had little meat or had to preserve foods through drought, famine, flood, war, other reasons... would utilize what's local, often salt and spices, to preserve their food as part of long term survival. That flavor and style becomes part of the local culture and cuisine. It's interesting and I think there's a lot left to be discovered in international cuisine as local ingredients and utilized in other regions' cooking styles, and vice versa. Cheers from USA!

I’m a first generation American whose parents were from Italy. As a child 40+ years ago, my parents would prepare this dish for me, especially if I was getting cranky about dinner. Do you know what this dish was called at my house? “Pasta con burro e formaggio”. That’s it. There wasn’t a ceremonial dance performed like above. As my Nonna from Ferrara used to say, these folks like “a darsi delle arie”.
When I grew up in England in the 1960s, a friend of my parents' called Claude used to come and stay who cooked spaghetti with bacon and cheese, etc....Yum We always called it 'Claude's Spaghetti' until I went to Italy in 1974 and 'discovered' Spaghetti Carbonara!
