2 - Chicken Breasts (Combined Weight 500g-1.1lb)
1 1/2 tsp (3.5g) - Onion Powder
1 1/2 tsp (3.5g) - Garlic Powder
Tsp (5ml) - Olive Oil
2 Tbsp (28g) - Clarified Butter
1 - Small Brown (Yellow Onion), Diced
2 1/2 Tbsp (35g) - Green Peppercorns, Drained
2 - Garlic Cloves, Sliced or Minced
1/4 Cup (60ml) - White Wine or Chicken Stock
1 1/2 Cups (375ml) - Thickened Cream
450g (1lb) - Pappardelle or Pasta of Your Choice
5g (0.2oz) - Flat Leaf Parsley, Roughly Chopped

Just made this for the first time Jack & it was absolutely superb, enjoyed by all!! Just want to double check the quants, went onto the website & cooked for 3 people (750g chicken, 675g pasta, 52.5g of peppercorns) and it felt like there was enough for 6! Are these measurements correct?

The green peppercorns are slightly sweet and don’t have the same texture or flavour as when they’re dried and become black peppercorns. It makes for a delicious meal
I always let the chicken rest a bit because I didn´t want to burn my fingers while cutting it. Didn´t know it actually improves the taste.

Jack, love your recipes and videos. Quick question about the green peppercorns. Is there a big difference in taste between the green peppercorns in a brine, and the loose green peppercorns? If not, then I can make this without having to place an Amazon order. Thanks very much.
Hey Doug. Sorry for the late reply. Are you talking about fresh green peppercorns or dried ones. If fresh then they’re perfectly fine to use as they’re soft and will release their flavour into the sauce (you will have to slightly chop them). If they’re dried, they won’t soften without cooking them for a while and you’ll be chewing on lumps of hard pepper. If all else fails the canned or jarred ones are the best

I made this today and it was delicious. I had to substitute the green peppercorns with capers and I hate garlic, so I left that out. It was not a particularly quick meal as it took over an hour from beginning to end, but it was well worth it!
@Boris Russki Actually it was the same meal. Capers are a substitute when you don't have green peppercorns on hand and not everyone likes garlic. Recipes are made to suit the palate.

What do capers taste like?
@@sams517 The capers that I used are salty/lemony/olive oily. I couldn't find the green peppercorns in the grocer and this was the solution according to google. The meal turned out really nice using this substitute. I don't think that I would use them in a raw form. I think the consistency is more for cooking than raw as in a salad, but that is just my taste.

Anyone use black peppers in place of green?
Mince or put the garlic in a press and just use half the amount.
You can use the same amount, it won’t be overpowering if you mince it, it will just be slightly stronger 😊

Substitute the cream with the a little of the pasta water and add pecorino cheese. Italians generally use pecorino where the French use cream.

I love the pecorino in Italian dishes. It's absolutely divine. Mediterranean diets are pretty healthy though as a rule.

These are green peppercorns which are soft and explode with flavour once bitten. Green peppercorns are black peppercorns before they’re dried out and become solid 😊
