Butter chicken curry, the best weekday meal

  • All the curries have been popping off on the channel lately so here’s another one. In this one, we're going to make the most incredible, full of flavour butter chicken that’s as close to the original as possible. This is a remake of my version of butter chicken that I made when I first started my channel but this one in my opinion is way better. The ingredients have been tested and experimented with to release more flavour and the technique is slightly different, resulting in a better overall product.     Serves - 4-6 People
    Ingredients -
    Chicken & Marinade -
    1 kg (2.2lbs) - Skinless & Boneless Chicken Thigh
    3/4 Cup (170g) - Natural Greek Yogurt
    3 - Garlic Cloves, Minced
    15g (0.5oz) - Ginger, Peeled & Minced
    1 1/2 tsp (3.5g) - Ground Cumin
    1 tsp (2g) - Ground Turmeric
    1 tsp (2g) - Red Chilli Powder (Optional)
    Sea Salt To Taste - I Used 1 1/2 tsp (7.5g)
    Tomato Gravy -
    4 Tbsp (56g) - Ghee or Clarified Butter
    2 - Brown (Yellow) Onions, Thinly Sliced
    3 - Garlic Cloves, Minced
    15g (0.5oz) - Ginger, Peeled & Minced
    2 tsp (4.5g) - Ground Cumin
    2 tsp (4g) - Ground Coriander
    1 tsp (2g) - Red Chilli Powder (Optional)
    800g (1.7lbs) - Diced Canned Tomatoes
    1/4 Cup (60ml) - Water - This is used to rinse the diced tomato can & avoid waste
    2 1/2 tsp (5g) - Garam Masala Powder
    1 1/2 Cups (375ml) - Thickened Cream (Heavy Cream/Whipping Cream)
    2 1/2 tsp (11g) - Granulated Sugar (Optional)
    Seasoning To Taste
    Rice -
    1 Cup (200g) - Basmati Rice, Washed
    2 Cups (500ml) - Cold Water
    1/2 - Cinnamon Stick (Optional)
    1 - Star Anise (Optional)
    3 - Green Cardamom Pods (Optional)
    2 - Dried Bay Leaves or 1 Fresh (Optional)

    For those who like the kasuri methi you can make it taste even better by grinding the dried methi in a pestle and mortar and then use a fine tea sieve to remove the larger bits and only add the resulting powder. The extra 2 min step takes the sauce on a whole other level. Also dont foget you really should be straining the sauce after its been purified with a blender. :)

    So, I have spent the last 30 years trying to make decent Indian curries. I thought mine was pretty good but last night I tried this recipe and it was honestly the best butter chicken I've ever made. The only thing I did differently was I stuck the chicken thighs under the grill to help get a good char. It was absolutely delicious! Thanks Jack!

    Others have said it here but I'll add my advice too. I made Butter Chicken a few times over the years, but it always tasted as though it was missing that final "thing". Then I discovered Methi (fenugreek) leaves. If I can find them in New Zealand, you can find them where you are. They are a MUST in Butter Chicken.

      Try using fenugreek powder, it's much easier to get and gives a great depth of flavour too.

    Dude, where’s the Khasoori Methi (fenugreek)? That’s THE butter chicken flavour (if it’s butter chicken, that is). Thanks for this recipe, especially the great additions to the rice! Sounds awesome.

      Yes. Especially when you don’t have a tandoor oven, the khasoori methi adds a slightly smokey flavour. It’s the magic ingredient.

      Yeah I do apologise I tried to get hold of it but really couldn’t get it anywhere for some reason, even the suppliers at my job couldn’t get it for me. It is the only missing ingredient apart from cashews which are optional. 🙏

      Khasoori Methi is just dried fenugreek leaves (not seeds). Can get in Tesco. It’ll put your recipe from excellent to mind blowing.

      @@Anael7621 It’s quite powerful. I put maybe a half a teaspoon into the marinade and maybe another half a teaspoon into the gravy.

    Chef add Fenugreek...leaves roasted a bit then crushed...add butter around 100 gms, add few cashew paste, add Garam masala 2 minutes prior serving ...all other things stand great. Like your recepies but bit improvisation...and if you want the best...add few coriander stems around 20 GM's and honey 10 GM's...🇮🇳

    Interesting choice of cooking oil - canola oil. I use canola oil daily. I think it’s heavily underrated. I think the flavour is neutral & not as powerful as olive oil. It is also a near perfect match for all sorts of cuisines. I would definitely love to see a video in the future on different types of cooking oils & its uses 👍 cheers 🍻

    Got to agree re methi and it's in the supermarkets.
    For me, a little less water in the rice, 1 1/2 cups and the rice will cook and be less sticky. Leave it to steam for 10 minutes 👍

    As a lover of curries.....love it! Keep them rolling. We appreciate you as well. No one wants rubbery thighs. I did try your previous version and excited to try this one. A request for Red pepper hummus please. Not sure if you did the falafel yet....i did see it as a request in previous posts.

    One tip always use hung yogurt it binds well with chicken and use bone chicken its better and give more flavor of its bone. I didnt see fenugreek powder so please do add in future love your recipe. Keep rising and shining brother

    Sick recipe but that would cost like 1 week worth of food ( ~$20 or ~$12 w/o chicken if not more ). Maybe I should buy less beer and make this instead :D

      idk what country/state you're living or what store you go in. But this is like a 5€ recipe for me

      @@marcelgraf5520 I just checked the pricing of everything online so based on grams everything except chicken breasts turns out to cost around 7€ ( chicken breasts usually around 4.5€ per kilo ), ofc buying it all would be like double the price because you can't buy lets say exactly 2g of chilli powder and you gotta get the pack of 20-40g etc unless you go to some specialized spice store.
      Usually I get everything from LIDL. Anyway for the price imo it's totally worth it, maybe not for a daily meal.

    Hi Jack, quick question, my son doesn't like onions at all (unless he's too drunk to realise, lol). But I was wondering, once I've blended it all, do you think he would taste the onions? Because he is pretty good at knowing most times & I really want to make this for a family dinner one night. Anybody, I love your recipes, & I almost got out of bed to make your crunchy roast potatoes at 1:30am lol but I decided to stay in bed punishing myself with hangry pains lol.       Hey! You can’t taste the onion as an individual ingredient and I’d be very impressed if your son could identify it in the final product of this recipe.     How great to make this 😁. It’s a treat. Make it and recommend it to your friends/family. I’m lucky to be able to source local (well we say this where I live 😌😁) chicken, good cream and butter. So yes imagine, it was divine. Yet would still be ok with supermarket ingredients. Added red Chili powder to the sauce as in Jack the Chef recipe, no more no less and it was medium hot not too hot. 👌 Served with rice (flavoured as in Jack‘s recipe 😋). Also served with locally grown kale - washed and chopped - on the side cooked for 3mns max in a stainless steel pan with a few drops of water as the washed leaves retain water, lid on and straight off after 2 to 3 mns depending on the amount. Really big thanks to Jack the chef for making an easy to follow recipe that is actually perfect and impressive. 👏🌟🌟🌟🌟🌟

    Jack, great recipe but I have a question.
    In the beginning of the video you said you need 6 boneless chicken thighs (2.2lb) but you ended up only using 3 (possibly 4 @ 4:58). Doesn't that change the amount of servings if the original recipe serves 4?

      The recipe cooks them in batches to avoid steaming them. He only showed 3 there but adds the full 6 to the sauce later

      @@arcaneire yeah I figured he was searing them separately, but I only saw 4 in the pot so I was so curious whether I just couldn't see the other two. Thanks!

      Thanks, Miles! I only showed me searing the initial 3 then off camera seared the remaining 3. As for when I added them into the sauce, I did the same thing. The recipe had all 6 thighs in there 😊😊

    Yes, I know there is always the vid. Thing is, my bloody stupid tablet will show the video but, not 'show more' where the ingredients list is kept! How can I get my misen plas (I aslo watch French Cooking Acadamy) (not as much as I watch Chef Jack Owens, though).

      You can but it will burn, clarified butter and or ghee has its milk solids removed which is the part that burns 😊

    Looks good, but I’m not into a base sauce that’s been whizzed up to look like curried bake beans sauce!! Sorry.. I would leave the base sauce rough and rustic, defo NO Sugar, probably bin the cream. I’ll try that modified version

      That’s completely fine, like I said in the video you don’t have to blend it. I actually agree that the rustic texture is nice. As for the sugar that’s optional but I’d definitely recommend cream, even if it’s not as much as I added. It creates a really smooth texture 😊

    Where are the cashew nuts ? 🤔
    On every butter chicken I ate in India you have cashew nuts than give you this orange color after mixed it. The cream arrive only at the end normally 🤔

      Literally the first thing that goes into the pot.. ghee is clarified butter

      @@ChefJackOvens I know what ghee is and use it too when frying the chicken, but it needs butter (makhan) in the end around the same time when you add the heavy cream imho. That is what actually makes it butter chicken, hence the name.

      Btw, I'm enjoying your videos, have favorited lots of them to try in the near future, so I'm not hating, but I'm a butter chicken addict and have tried 10 different recipes and this vid just popped up in my recommended videos so I dived in immediately and was a bit surprised by this ommission. (Lack of fenegreek is understandable). Would recommend people to serve it with naan and a good Raita as a side btw.
