Bro butter chicken is two part cooking method where you cook marinated chicken in oven or grilled slightly burn , that smoky flavor give you you that nice smoke flavor in sauce..
It's a western version, I think it's fine. If it tastes good that's what matters, no one said it's authentic lol

A little tip to elevate the dish, marinate the chicken in a chicken tikka seasoning and pan fry or barbeque it. Add dried fenugreek leaves with all the masala powders he's adding.
And if you want to thicken the curry(make it richer) add cashew paste. Have fun!
PS. I don't like chicken breasts either. Dark meat all the way!

those are all good tips, i marinade in yogurt, with salt, garlic, ginger, turmeric, coriander, garam masala and a bit of cayenne(not much cuz it's hot) i wish i could get kashmiri chili powder. isn't it a lot more mild and tastier than cayenne? i never tried using it, i prefer tikka masala sauce over butter chicken. Tikka masala is my favorite. i just made a huge batch last week, i make the sauce and freeze it in batches, i always use coconut milk/cream instead of milk cream, and i always fry my onions first in half butter/coconut oil.

For it to be authentic you have to marinate the chicken in yogurt and mint and grill it first. Also you’d want chicken thigh instead of the breast so it doesn’t overcook
And there's no salt in this video and way too much turmeric.
and to be authentic you wouldn't be putting onions or using ghee in it. also he put wayyyyy to much spice, butter chicken is supposed to be a nice balanced curry, not a sweat your ass off while eating curry. But i guess he never did say it was authentic.

A little tip. If you have the issue that your paste comes bitter out of the blender, just sauté the onions and garlic for 1-2 min before they go into the blender. This stops the onion/garlic to produce a protective enzyme that produces this bitter taste while being "physically injured". It also might never happen to you, as it depends on the sort of onions/garlic you use.

I feel like they cut out a lot of stuff. Generally Matty is a bit more over-the-top, and his tangents and rants are what brought me here. It's still good, don't get me wrong, but I feel like they're pulling back.

Well just so you all know in professional kitchens we have that bowl filled with water. So the spoon or whatever gets kind of clean of the dish to use in another dish and in the end you clean all.

For most recipes measurements can just be a guideline since you can't expect all the ingredients to be consistent. How big are the onions, garlic cloves and tomatoes? How spicy is the chili? Exactly how much water will evaporate from your pots? And so on. In the end it's up to you to fine tune it to perfection.
Baking, or rather making dough, on the other hand usually has to be pretty precise.

Olive oil doesn't go with Indian food. Use a neutral oil or ghee.
Mustard oil goes well with every Indian food

You can just cook the onion, garlic, ginger and tomatoes and THEN blend them before passing it through a sieve for a velvet smooth texture.
Also, just marinate and oven bake your Chicken before tearing it and adding it to the sauce. Much faster.
Even if you cooked the chicken a day before ~ because it has dried up a bit, it will soak the sauce a lot better. Nice way to recycle left over chicken.

Though... the music feels reaaaallllyyy unfitting for Matty's style. It feels too silly. And I feel like they cut out a lot of bits from Matty that made me love his vids in the first place, this seems like watered-down Matty!

I made this but first marinated the chicken with garam masala, chilli powder , garlic and ginger paste, and some lemon juice and salt and fried it. I also toasted the spices separately. Was really good next time I’m going to add some yogurt to the marinade.
Yes you did it right and YES you must add yoghurt to the marinade. Also Don't miss to add 3-4 piches of dried Fenugreek leaves to the chicken . It'll make all the difference in the world.
