Serves - 2
Ingredients -
Mushroom Stuffing -
3 Tbsp (42g) - Clarified Butter
200g (7oz) - Swiss Brown Mushrooms, Sliced
2 - Garlic Cloves, Minced
4 - Sprigs Of Thyme, Roughly Chopped
5g (0.2oz) - Flat Leaf Parsely, Roughly Chopped
Seasoning To Taste
Chicken -
2 - Large Chicken Breasts, Split
1/2 tsp (3g) - Garlic Salt (Can be substituted for garlic powder and salt to taste)
1/2 tsp (2g) - Onion Powder
1 tsp (5ml) - Olive Oil
3 - Bocconcini Balls, Thinly Sliced (Can be substituted for mozzarella)
Parmigiano Reggiano To Taste
Seasoning To Taste
Creamy Garlic Sauce -
2 Tbsp (28g) - Clarified Butter
3 - Garlic Cloves, Minced
250ml (1 Cup) - Thickened Cream
5g (0.2oz) - Flat Leaf Parsely, Roughly Chopped
Seasoning To Taste
Notes -
Storage -
This can be stored in the fridge for up to 3 days and I don't recommend freezing due to the chicken drying out and the sauce splitting.
Reheating -
Place the chicken back into an oven set on 180.c - 350.f for 10 minutes to warm the chicken. Place the sauce over low heat and gently stir to heat. Once the sauce is hot, add in the chicken and cook over low ensuring the chicken is hot throughout.

Can I ask what if the clarified butter was substituted with normal butter instead, or even with some vegetable oil, would the final flavours be completely different???
Thank you 🙏 I use clarified butter in sauces like this due to its high smoke point, it doesn’t burn allowing me to cook the sauces at a high heat. You can use regular unsalted or salted butter but I recommend adding a tsp of olive oil into it to help it not burn. You can also use vegetable oil if that’s all you have but you won’t have the silky texture and flavour that the butter or clarified butter gives 😊

This is perfect for our weekend lunch when the whole family is at home. hehehehe I chop the cucumbers and cherry tomatoes the same way you do. Again a question (God one day you'll hate me with all my questions) Is it ok to roast the chicken in one of these oven bags after searing them on both sides? Just widening my options here as well. Very nice! I hope you enjoy it 😊. If you’re looking at experimenting then an oven bag shouldn’t be too much of a problem. Personally I don’t use them so can’t give full detailed instructions on it but from my knowledge it could possibly steam the chicken making it a little rubbery.
@@ChefJackOvens Ok I had no idea. I once cook a whole stuffed chicken in one of these bags for 2 whole hours. It was cooked to the point of the meat being so tender and falling apart. So may be I'll increase the cooking time in the oven if I used the oven bag or if the family so hungry I'll use your way of course because it's perfect. Thanks again :-)

Hi loving this channel. Quick question, I do not like mushrooms (The texture) however I don't mind the flavour though. What would you suggest to get the sauce without the mushrooms? I thought about just chopping them really fine to get the moisture out.
How was the salad with the chicken, specifically the dressing. Did the flavors clash or complimented each other. Never thought of putting a salad next to a mushroom garlic chicken, let alone a honey mustard dressing.

The salad works very well especially with the honey mustard. It’s like a cross between honey mustard chicken and creamy garlic mushroom chicken. The two go hand in hand 😊
