When you zest fruit, if you get the pith (the white part) it's bitter. Try not to push so much and only get the surface, unless you want the bitter? Lol
Why not just batch a normal Marg it would be easier than this and also be a margarita which is this just isn’t. Batching a margarita is incredibly easy 3/4 cup lime juice and triple sec, 1.5 cups tequila and 1/4 cup agave syrup.

1cl of lime juice in 12cl of ginger ale, add 4.5cl of a spirit of your choice if you want an alcohol version

Too much work
Use maple syrup instead of simple syrup.
