I made the salad out of the left overs from the roasted chicken I cooked the other day. You can put whatever you have in your salad. It doesn't have to be exactly like mine.

When I worked for American Express the cafeteria had the Best Chicken salad & put it on any kind of bread you wanted. 20yrs later & I still remember that salad. It's yummy stuffed in a tomato with bacon crumbles. I have made turkey salad,too. It's yummy on toasted bread. We got a little rain from the Hurricane Beryl here in Central Ky. Indiana had tornadoes quite a bit of damage. Kentuckians have left to go help Texas after damage there. Prayers to all of them. Stay cool in this heat. Check on your elderly neighbors,please.
That was us in ky yesterday. Today promises to be the same. I was at my elderly parents yesterday and my mom was wanting a cherry pie so we baked a frozen one. Their air conditioner never caught up. It was as hot as 85⁰ and only got down to 83⁰ by the time I left at 8pm. I'm praying that it's resolved today.
I love a good chicken salad. I use a rotisserie chicken with green grapes, celery and dried cranberries. God is in control and you are so right. We will all experience valleys and mountain tops and we can overcome with God's help! Love you Miss Brenda

Miss Brenda, we live in Southeast Texas where the hurricane came. Luckily we were one of the fortunate people who did not lose electricity and lot of people around us did in my work is electricity is off right now but everything's coming back together and I pray for the people who still do not have electricity

I worked in the dietary department of our local hospital, we made chicken salad for the salad bar every week, we would boil and pull 5 whole chickens, those were such good times we those older lady's!! I didn’t want nuts in it. I had a can of water packed chestnuts, chopped those up, added them with sweet pickle relish, celery seeds, boiled eggs and the chicken, didn’t have fresh, Walmart brand, premium white meat, with mayo and 2 tsps sugar. I think that was it. The chicken was from our hurricane can food stash. Comes in handy when we don’t have the fresh. I’m going on way too long. You have a great day today and everyday. Good to see you again. Just wasn't able to watch and think about cooking. My air was out and I had to buy pre-made food, yucky!
