- This chicken salad is amazing, the combination of grapes with pecans, mixed in with a creamy mixture of mayonnaise, dijon mustard and honey go so beautiful with the perfectly juicy chicken. 3 Med/Lrg Boneless chicken breasts
3 celery ribs (diced)
3 green onions
1/2 C. dried cranberries
1/2 C. roasted pecan halves
1 heaping Cup red seedless grapes (cut in 4)
1 C. mayonnaise
2 Tbsp cream cheese (room temperature)
1 Tbsp dijon mustard
1 Tbsp honey
zest of 1/2 lemon
juice of 1/2 lemon
1/2 tsp pepper
1/2 tsp salt
1/4 tsp garlic powder
croissants
potato chips optional
ROASTED PECANS
1 tbls melted butter
1/2 C. pecan halves
pinch of salt
TO BOIL CHICKEN
3 chicken breasts
1 celery rib
small piece onion
1/3 tsp peppercorns
1 tsp salt

I have been buying chicken salad in a bowl from Costco, but now it has gone up to 14.00 for the bowl. I've been looking for a recipe that had the stuff that Costco had in it. Costco doesn't have the grapes but I think we'll like this one better. Thank you .

They'll need to be mixed through, so she sprinkles them across the bowl. So many cooks don't. Exactly. I like onions in the broth to flavor the chicken while it cooks, but raw onion is a flavor that you either love, or believe it overpowers every dish it's in.

I had my daughter young. We learned to cook together by watching videos and the cooking channel. By the time she was 12 she could cook Thanksgiving Dinner by herself. Turkey everything. Keep on learning and you will be the best cook ever😊

I worked in a high end restaurant in Atlanta and I had to make chicken salad every day. I baked the chicken breast I used to me it makes it taste better than boiling it because it maintains all its flavor.
I made this for my 80 year old mother in law along with sourdough bread and she told me my food is magical and that I’m a food magician!! She lives on a farm in snowy mn and access to town and groceries are a little more difficult. Makes me feel so good and so appreciated! Thanks for your wonderful recipes. I use your tips in all my cooking now. Things such as not overcooking chicken and take the time to chop things nicely. It adds love to the food for sure!!

We would go there every other weekend. He even has peaches 🍑 for many years. He had corn, 🌽 watermelons,🍉 peanuts,🥜 cantaloupe, 🍈 peas🌱 and as a kid I thought he raised everything. But he raised cattle, had horses, mules, donkeys but he was best known as a Dairy Farmer. He used to sell his milk 🥛 to Barbers.

We (hubby & I) made my recipe for chicken salad with grapes & pecans for lunch today. He chopped, while I made the dressing. When we went to get some more out for dinner, it looked like the dressing had been completely absorbed, so I whipped up a half batch of your dressing, and threw in a handful of dried cranberries. It was excellent! So flavorful - I'm throwing out my old, family-favorite recipe for yours, dear Rachel. So yummy!

Thank you for the recipe Rachel❤❤ I made this for my grandkids this past summer in our Hawaii vacation md they loved it so much I had to triple the recipe because all the adults wanted some too! It was so refreshing and needless to say they kept asking for me to make it until I told them I’ll show them how to make it for themselves so Mama ( me😅) can relax too. PS: The pizza casserole dish, broccoli chicken casserole were another hit too when I made them while visiting them in their homes. I was looking at your apron and thinking, "Hey, that's the same pattern I've been using to make aprons!" LOL In our family, hubby likes to cook and I like to eat - marriage made in heaven! We split the work around the house; I do most of the cleaning and all of the sewing, and he does the cooking and cleaning the kitchen. I simply love chicken salad, make it often and have others ask me to make it for an event they were having. That said, do not put pecans in it unless you want a lot of complaints.
@@sammyjo8109 When cooking for a get together, it's probably a good idea not to add nuts to anything simply because so many people seem to have nut allergies. Cooking for yourself, you could substitute the pecans with walnuts, nicely chopped up. Waldorf salads have walnuts and apples and a lot of people love this salad.

I am 70 as well. I have always enjoyed cooking..the kitchen was my ‘happy place’..my family certainly benefited from that…lol and now grandchild called tonight and has very bad cold and said Mimi…I wouldn’t be upset if to made me chicken and dumplings at my front door…that has been my children and grandchildren favorite for many years, then she said….I’m kidding..of course she was…..😉 so I pulled a frozen chicken out tonight, so guess what I’ll be stirring up in my kitchen tomorrow…❤️ watching and explaining each step. My granddaughter, when she was about 7 yrs old..we would always video ourselves cooking in my kitchen..one day months later, my husband said..do u know anything about this…my darling was video herself baking…I kept thinking..I thought I had more eggs..milk?? And a messy kitchen..I thought..dang my husband is a slob….she would add her ingredients, did the taste test, make a face..throw in the sink..start all over…clock showed 1 am..hubby asleep on sofa, me in my bedroom…aww so priceless..I will forever cherish that memory..
OMG, you CAN go home again! I am 83 and always loved my Italian kitchen in my French/Italian home. Love everything on a croissant; mostly because who needs that heavy stuff? My French grandmother was a great example of the blend of French/Italian. Thank you so much - I am so glad I found you. Some "accidents" are wonderful and bring you "home" again.
And I should thank my dear mother, too, for keeping it alive in her kitchen when I was growing up in NJ. I'll be back again; with my shopping list.
