- In this video I'll show you how to spend less and still make delicious meals! With the rising price of food, everyone is looking for ways to cut their grocery bill but still feed their families. I believe food doesn't have to be pricy or come form a fancy store to be good and good for you. Food should be simple. And every meal should be made delicious by the company and conversations.
These meals are made for one but can be doubled to make for more than one person.

1) Something I always cook this time of year, but not single serving is pumpkin stew since Halloween is pumpkin season.
Core and skin a pumpkin and cut into 1 inch chunks, add to a pot with canned yellow corn, chopped onions, a stick of butter, salt and pepper, chicken broth and Spam cut into 1 inch chunks. Adjust corn, onions and Spam according to the size of the pumpkin used. Simply simmer it until the pumpkin is tender since everything else is already cooked. I make mine in a large canning pot and it only lasts for one meal after everyone gets second and third servings.
2) another budget meal I make is Spam fried rice. Dice the Spam or hotdogs into 1/4 inch pieces and fry add cooked rice and fry more, use seasoning packet and peas, or a can of seasoned peas, once toasted you can add can of Chinese vegetables or simply long sliced celery instead of bean sprouts mix. Options like scrambled egg, onions, ... Can be added if not using Chinese vegetables.
3) another budget meal is grated zucchini mixed with the crabcake recipe on most seafood seasoning, substitute zucchini for crab and spoon into cupcake pans and freeze. Once frozen, pop out of the pan and fill a Ziploc bag full and keep in freezer until hungry, pan fry while frozen and as it cooks it melts into patties, serve on crackers or roll with mustard.
4) Hobo beans. 1 lb of browned ground beef, 1 can yellow corn drained, 1 can of baked beans. all mixed in pot until hot.
I buy a lot of markdown meats and freeze until needed. One of my favorites is raw Italian sausage, after removing the casings they make good burgers and great sausage gravy. They also after browning up and mixed with ricotta cheese and egg to stuff shells or make lasagna on a budget.

I do enjoy the opportunity to share ideas about food, as I find food very bonding and enjoy the sharing, learning. I'm not the cleverest and enjoy simplistic and affordable ideas. If you don't want to use your stove oven......try investing in a toaster-oven...I use mine for almost all my baking, way less heat!

@@frugallydelicious I got a “used” toaster oven on Amazon for $29. It looked brand new. Doesn’t heat up my studio apartment. I’m in Southern Arizona, so not heating up the place is very important here!
Oh I meant to ask if you have an air fryer? I heard that they can be used instead of an oven. I don't use my oven either because it overheats my apartment. The air fryer has been nice.
As of now I don't have one, but my mom has one waiting for me to pick up the next time I go for a visit! 😜
