@@duckdoan7977 I’m certainly no expert but when I get the texture just right, there are no visible bubbles at all and the milk has a glossy sheen and noticeably thicker texture. They say it’s supposed to look like white paint if u get it right, and that’s a perfect description imo
@@jacob9540barista here, this is spot on! This is what my senior barista taught me, a good milk for latte is like paint not too bubbly, that's for cappuccino not too flat for flat whites but just right in the middle for a latte.
I want to cry cause my milk doesnt do that! It just pours in and never surfaces to the top and writes like a marker. Maybe the tail end foam does but not enough to design with.
@@phyxion123 do you use pressurized porta filter? if so then ur coffee crema is to foamy to begin with..use non pressurized portafilter..even if it doesnt produce crema you can still do latte art if your milk is steamed properly..latte art is all about milk

One important thing is your espresso bean shouldn't be too old. Always keep it sealed inside a bag. Also in guessing it depends on grind size, pressure in the group and brewing temperature and most importantly how much co2 the bean contained to begin with. Also minerals in the water could be a factor...

the milk should be hot and creamy(bubbly) enough so that it floats on top of the crema surface. correct me if i'm wrong though

You sprinkle some cocoa on the espresso before pouring the milk
You use fresh beans and swirl your espresso before you pour
