I think you'll find what you call gristle is actually the valued outer fat that adds so much flavour to a steak..it provides natural fats that improve the taste..and is part of a good piece of quality steak..10/10 for me..👌

My son asked me how to cooks a steak medium rare. I looked
Up at him and (as I stared at him) said ‘you’re asking a vegetarian since 11 how to cook a steak??’ Yeah but how do you know when it’s done?? Something about the thumb/hand bounciness?! He looked this up And now he’s an steak expert!
It’s not actually blood. Blood just runs in veins and arteries. It’s a red protein call myoglobin that carries oxygen to the muscle tissue. The red comes from iron, so it still tastes similar to blood.

So true about 'well done'. I used to order well done every time until a waiter in Tenerife 'forced' me to try 'medium rare'. I felt such an idiot. Medium rare tastes so much better and not like the chewey flesh I imagined it to be. Please give it a try all you 'well doners'!

That looked amazing mate. I’ve been to Miller & Carter establishments twice and the meals were fantastic, albeit pricey. I usually have my steak medium/rare nowadays. I normally opt for peppercorn sauce but I need to try that beef dripping one. I love the onion loaf that comes with it. Service is always great too. I’ll go 9.5/10 mate. If it wasn’t so expensive I’d go more often but you pay for top quality which M&C’s always provide. Great review mate
My first encounter with your channel Lee ! And I too remember the amazing experience of the great value Berni Inn steakhouse...used to be a treat for me and my family as a boy when my mum would take us out for a treat every other Sunday in the late 70's early 80's ! 😊
In these very difficult times however, I have to say that it's a bit of a 'guilty' pleasure watching you single-handedly devouring a meal for one that easily costs what a (even working) family of 3 or more might spend on a whole weeks' food shopping...and that's if they can stretch to that even !
Please don't take this the wrong way my friend, and each to their own etc, but, given M&C's prices it's increasingly going to be beyond most people's budget for a family meal out, unless they run to maybe an MPs salary ! It's a great pity that the better value restaurants, many a focal part of our towns and communities, are really struggling to survive and to recruit trained staff, afford their energy and other costs, with many facing bankruptcy and closure in this grossly mismanaged economy of ours ! 😔
May well check out your other content ...I believe that you also attend and review more relatively value for money priced pub /restaurant chains also ?

Hey Lee! Gotta laugh when you said about parking as far away as you can but someone always parks next to you anyway. I’m just watching for fun today as I’m not a fan of steak. I’m afraid I’ll get some people on here frowning as I love my food well done.. Still it looked good. Big amount of chips great atmosphere. The onion loaf I’ve heard is very popular. As to answer the questions you gave us I always go for a Ribeye and have it medium rare. So yes looked very nice what you had there
You brought back some very fond memories of the Berni, don’t forget they didn’t just do steak but fish and chips which were second to none, Saturday night with a main course, a bottle of Saturn and a Irish coffee are fond memories of my younger days. I thought your meal was very expensive for a chain, but looked good . A family would find those prices in this climate non affordable.

16oz Ribeye go very well with beef dripping sauce and is my favourite. In fact I'm going to treat myself today with this cut. Im going to have 3 courses 😊

I went Miller and Carter 2 weeks ago..Normally happy with their service but I asked for my steak medium but got it well done, also my prawn cocktail was bland and hardly any sauce. Wasn't cheap either. Not happy ☹

The scallops with pancetta and lobster and prosecco sauce starter and a fillet with a porcini and black garlic sauce...would defo recommend....brilliant.
The reason it was tough to cut was you where cutting across the grain, I did notice that when you cut in.
The salad looks very refreshing.😋
For me Argentinian steaks are the ultimate steaks,the meat and the way they cook them. Find an Argentinian restaurant and see the difference you will be amazed.
Ribeyes may have more gristle than a fillet but that translates into way better flavor imo

Looked great. I prefer a filet mignon, and done medium to well done with a Greek lemon potato and a Cesar salad starter. And if I have room left; a New York plain cheesecake. I'd give your meal a 9, Lee.

Ribeye is my personal favourite - preferably rare or medium rare. I sometimes have fillet in a Ken Hom Vietnamese salad which is amazing and so easy to make. I think you and Sarah would like it - very healthy. I’ll ping you the recipe.
Medium rare , by the way when it’s rare it’s not blood you are seeing. The red colour is tissue fluid which surrounds all muscle cells and is an intermediary in the transmission of oxygen for the purpose of reacting with sugars to make muscles do the job they do.

That meal looked first class. When you cut into that steak, well the juices said it all really. Love to try that Beef Dripping sauce. All in all what you would expect to see for medium. just how i like my steak. I agree about the onion rings thing, but their version did look good as well. Price, well what would anyone expect for a 16 oz meal like that. Glad you enjoyed Lee. All the best and fair score.

I cannot remember the last time I had a steak, probably around 35 years ago. Got a Miller and Carter not far away from where I live but never been in.
I’m American, born and raised in Illinois but now in Florida. Favorite steak is ribeye, usually medium-rare (very popular doneness in much of the USA). Over the past few years I’ve taken to cooking beef sous vide, including steak, and that provides a very precise level of doneness because the meat is sealed in plastic and put in a water bath kept at an exact temperature. Many steaks will cook in an hour or two, optionally followed by a minute or so of searing on either side. Quite tough cuts cooked for as long as 36 hours can become quite tender; usually it’s 24 hours at most with 8 hours or less for some. Steak isn’t really necessary.
If I order a steak medium rare at a restaurant here it often ends up undercooked and somewhat tough, though often it’s fine. Medium is about as far as I’d go. With sous vide, medium is around 140F or 60 C, some people would say a bit higher. Medium is where beef starts losing serious amounts of water, and well-done is pretty much an insult.
