It all looked fine and the price was reasonable. PS: That steak was medium-rare, not medium. Perfect for me, but not if I'd made your request. Excellent review.

what temperature do you consider medium rare and medium to be? These restaurants should really give temperatures out (as well as what they consider those temperatures to mean), you should be asked to look for a colour/photo chart but some might think it tacky or frown on it for whatever reason (esp. as people could have legit complaints!). It looked like it was done in a sous vide bath or a low oven as the colour was pretty consistent.

Medium rare expels fluid medium doesn’t hence the dry bread underneath 👍

I agree with Ian it was MR, and I also agree with Dan it looked that is was sous vide. The redness or pinkness was till the outerline of the steak which means it was not on the grill for long enough but enough to give it the maillard reaction. The whole plate looked good actually delicious.

Marco explained why he returned Michelin stars, because he strongly believes that person who earned them needs to be behind the stove and he couldn't do it anymore. I hope this answers your doubt about why he isn't there, also he owns couple of restaurants worldwide. Also, when he worked in his 3 star restaurant back in mid 90s, price of a meal per person was above 200gbp, this answers your second doubt whether it's better if he cooks it. He wants his restaurants to feed middle class people at affordable prices. I'm pretty sure he is personally training his chefs to ensure high standarsds. Thanks for the video, very nice.

I don't think your analogy of an employee chef not putting as much effort in as the owner works here for the most part. These chefs are building a reputation. Michelin stared chefs all built their reputation in other people's restaurants. I know this isn't top top end, but the principle still works here. Marco will have employed the chef, and I can almost guarantee it won't be a journeyman chef, but an up and comer.

The only fillet served en croute is usually a tornedos Rossini. It did look nice though even though they try to poncify the dish with a croute. Lovely touch with the knife. £28 for a fillet at Marco Pierre whites is not badly priced. 9/10

I remember many years ago my boss telling me he had been at a work lunch where somebody actually produced his own steak knife and fork. Alternatively you could have stood Dave against the wall and started throwing them at him a la circus performer. Seriously though food didn't look too bad but paying for the name.

Spot on and off the charts, both meals looked superb, quality food in a quality restaurant. Marco is employing good chefs for sure. Prces ok for an upmarket eatery. Nothing to fault, 9.8 out of 10. I met Marco Pierre White some years ago - 2012, he was promoting his restaurant on P&O Ship Arcadia I was on, Sydney to Southampton, he embarked in Gibraltar. Nice fellow. Good to see Marco maintains the standard.

Hey Lee! Just checked this video out as I had earlier been to the Marco Pierre White Steakhouse at Liverpool inside the Indigo Hotel. I decided to have the Fish & Chips, it was priced at £19.95 which give or take in this day and age? Is expensive, having said that however, the service was top notch, very friendly and attentive, the fish and chips itself was absolutely fantastic and very well cooked. There also was a service charge applied which worked out at about £1.95. Despite the Service Charge I definitely would recommend coming here if you are going just for the food, one of the few occasions I actually did not have a pint with a meal! 😂

This thing you have about the skin on fish… you can ask for it removed when you order but the flavour is in the skin. It’s also a traditional way to showcase what fish it is ie the colour of the line on the skin shows exactly what species of fish it is and that they are not using a cheap alternative. Cod has light silver and haddock has dark grey for example.

    • @lesliecarter8322
      @lesliecarter8322 Před 2 lety

Indeed leave the skin on, it assists in keeping the juices in the fish flesh and when crisped up, lubbly jubbly.

Food looked great and reasonably priced ,you should always serve fish with skin on as it adds to the flavour , i get fed up with all the chips shops selling skinless fish these days ( rant over lol), presentation of the food looked good. I had the pleasure of eating a menu of his aboard a P&O ship the Ventura , but missed him by a day , however a good quality chef should be able to reproduce the menu as Marco wants 👍 great vlog Lee 👍

@UKMacMaster I totally agree that as soon as I seen that steak cut open, it looked perfectly cooked. I was in a MPW in Belfast a few years ago (now closed) and it was great too. Lee, perhaps can you explain the service charge? Does this charge get passed onto the server, meaning you don't have to leave a tip, or does it go to the restaurant? I've never understood this... Got to come to NI sometime to sample the food here. 👌

Michelin starred chefs always seem to have their ups and downs when they go mainstream. What I don't get is the likes of Tom Kerridge who had great success at the hand and flowers. When he collaborated with Ryan Giggs and Gary Neville to open the bull and bear in Manchesters Stock Exchange hotel he offered tiny overpriced burgers, small portions and nothing at all like his pub menu. No wonder Manchester which is my local city struggles to get a Michelin star with that attitude.

I went to Marco's London steakhouse in Liverpool Street, we also got to expirence the top of the London Shard as part of a Day out package. Think it was £80 for 2 of us

Lee, great video as always mate, yes, the steak looked superb and yes, I agree restaurants don't always get it just right, have to say the fish didn't do so well on the looks but your mate enjoyed it so what the hell. For a bespoke chef's place the bill was pretty reasonable, so results all round. And now the obligatory true story to finish. A fella goes into a butcher's shop and says to the lad "Do you have pig's trotters ?", he answers "Off course Sir", the fella says "Smashing, give me two pies PORKY". Take care buddy and cheerio from Glasgow .

Really impressed at the pricing; as others have said, not too dissimilar to local prices (here in Rutland, you can certainly find mains pitched about the same price point). Certainly not pretentious for the name, at least.

Love the suit, was it Moss Bros? 😊 just ribbing you.
I love Marco my second favourite chef. First of course being Keith Floyd, third being Delia.
