    500g chicken mince (50/50 thigh/breast)
    1 tsp salt
    1/2 tsp black pepper
    1/2 tsp sweet paprika
    1/2 tsp ground turmeric
    2 tbsp saffron water
    1 tbsp lemon juice

    Best cooking channel ever. I used to hate kababs and chicken coz they are always dry and doesn’t taste any good until I did your recipe and now I use it almost weekly!!

    Tried this recipe (didn't have sweet paprika, so replaced with same amount of smoked paprika).....my o my it was a super hit at my house.......kids want it again, and more. Thanks for sharing this super easy recipe Chef.

    Hi Henry! I really want to make some of your kebab recipes like this and Tavuk. I dont have a grill. How do I get it with good char and flavor on the Grill pan, nonstick pan, or oven?

      I would honestly use a frying pan on decent heat. Issue with an oven is it might dry it out

    Hi Henry, did you add a saffron water or oil? I know you mentioned the importance of getting the water out from the onion before adding to the mixture, but your caption has the saffron ingredient listed as water. Which should I use? Thanks!

      Saffron water for this one! The onions themselves can give a few cups worth of liquid, so it’s important to remove as much of it as possible

    salam, im persian too, when i cook koobideh, it just falls off the skewer, the coal is hot, so it cant be the heat.

      Depends on your skewer thickness etc, but on average, when I skewer I put around 170g on each one. So you’d get something like 3 skewers for 500g

    Personally i prefer the taste with the onion juice in the meat but You keep saying how we need to remove the onion juice so it sticks but you used lemon juice and safran water which is basically liquid. Doesn’t it come up to the same putting the onion juice ??( if you didn’t put the lemon and safran juice)

      The onions have way more juice in them which will stop it from being able to stick together, in comparison to small amounts of lemon juice/saffron water
