Kabob Koobideh Morgh (Ground Chicken Kabab) - Cooking with Yousef

  • Hi Friends -
    I hope you are doing well. Today, I go over a popular variation of Koobideh made with ground chicken instead of beef called "Kabob Koobideh Morgh". You can enjoy this with rice, bread or salad. You can also add a splash of lemon or lime juice when it's ready on the plate, as my wife likes to.
    Here is a link to my first video on Kabob Koobideh so that you can make both. That one also shows how to make the rice.

    2 lbs - ground chicken (1/2 breast & thigh)
    200-250 gram- onion (grind and squeezed)
    1 1/2 tsp salt
    1 1/2 tsp black pepper
    1/4 tsp chili power
    4oz- cold butter + 4oz melted butter
    Liquid Saffron

      @@harriswajma7734 garlic can burn easily, so maybe powder would be better to add in the mixture though the flavour wouldn't be the same, or a garlicy sauce could also be nice

    Just found you on this channel Yousef.....am I glad! I love Iranian Cooking but there is very little on CZcams. Your recipes are great easy to understand and to do. Reminds me of being in Tehran before the Revolution ! Thank You so much

    It looks delicious. I tried it, and the kids loved it. Question I have, what kind of skewers you're using? It's hard to stick and stay on to the regular skewers. If you don't mind sharing a dimension of skewers as well as much appreciated, if you share where can I get those?

    Thank You.. So glad to find ground chicken Kabab, as recipes only seem available for Chicken Kabab in chuncks. Couple of questions: 1. Does it make a difference if you refrigerate chicken mixture so it's cold before putting on the skewers? ouple questions. 2. When grilling, what are you brushing on the Kababs? Butter? 3. Is it possible to list the recipe at end of your written info? This would be helpful, as we have to listen several times through to write down the recipe ingredient amounts correctly. Thanks again. Can't wait to try this recipe!! :-)

      You're welcome. 1) No, it shouldn't matter but I usually do as I leave it overnight to marinate 2) Correct, butter 3) I will try, I keep forgetting :)

    Salam Yousef, love your videos! Can I ask where you find a gas powered mangal grill like that? I often like to make kebabs but end up having to always use charcoal and quick gas/propane powered would be nice plus easier to control heat

      Hi Junaid, I actually converted a charcoal grill to gas with parts from an older mangal grill I bought in Iran that was not in good shape anymore. I added cast iron flavorizer bars to the new grill. In our local Iranian stores, they sell new mangal grills and i also have found them online.

    Yousef, how did you get the liquid saffron? Did you buy it this way or make it yourself with the saffron powder?

      Hi Alex - I make it by grinding Saffron and adding hot water. I will include an example in an upcoming video but it is very easy.

      Cooking With Yousef one more quick question - I noticed when the kabobs are on the grill, you are using the brush over them...Is this the melted butter?

    hi im confused 4 ounces of butter is 112grams not 20 grams. do we use 4 ounces of butter or 20 grams of butter?

      1 stick of butter is 4oz, so it looks like 20th and is what he used

    Use glove when dealing with ground chicken because of risk of contamination with salmonella

      Lol he’ll be fine. My family has been living off the grid for 56 years and have never gotten salmonella from chicken.

    forget saffron. a bit of turmeric and a lot of msg way better
