Deep Fried Turkey: To Time? Or To Temp?

- I’ve fried a a lot of turkeys since the mid 1990’s. In the past I have always fried in oil at 350°F for 3½ minutes per pound. This time I have some long 12” probes from ThermoWorks which allow me to not only measure the oil temperature but also the turkey temperature.

•ChefAlarm: This probe style thermometer has a temperature alarm and a timer. With it you can monitor the oil temp at 350°F (or 176°C) and cook your turkey for 3½ minutes per pound. I recommend getting the extra long probe too.

•Square Dot: With this device there are two inputs and you can monitor both the oil temp and the turkey temp at the same time. You will need to also purchase two extra long probes.

Extra long probes: these probes make frying the turkey much safer and convenient. The extract length can measure oil temp even before the turkey is in it. Also can measure the thermal center of the turkey at the deposit part of the beast even while frying legs up (the right way).

Whether or not you cook the turkey to time or to temp, you still need to spot check it in several locations right after you pull it from the oil. An instant read thermometer is necessary for this. Below are links to three instant read hand held thermometers that I highly recommend.

Believe it or now I've never had a good deep fried turkey. However, I've never made one. Only had it that others made and they ALWAYS over cook it! They need to see this video on HOW to do it right Big Lew! Now I want to get one just so I can deep fry it myself and see! Awesome instructions!😋👍
Nothing to it but to do it. You common sense. There are a lot of over precautious videos out there on frying safety. I think these have the opposite effect, by frightening people away from trying to fry. Yes it can be dangerous, but so is driving a car. No need to rig up elaborate pulley systems and scaffolding like Alton Brown did.

@@cornfedlife Maybe so. Deep Fried turkey originated in Church Point, Louisiana circa 1970. By the 1990’s it was very common in Louisiana. The internet spread it nation wide.
How long does it typically take to get the oil up to temp? Frying my first turkey today and trying to make sure to account for that as well.

It can be a little while maybe 20-30 minutes. Don’t panic.
