Take a deep breath and come prepared with an open mind because today Joseph Yoon from Brooklyn Bugs is teaching us how to eat (almost) every edible insect there is. How To Eat Every Insect | Method Mastery | Epicurious - Jak na to + styl
Thank you to everyone who took the time to watch or comment. While a personal motivation and inspiration for my work is derived from finding sustainable solutions for feeding the burgeoning population of the world, it is also really fascinating and delicious! There are over two thousand species of edible insects with wildly different flavor profiles, textures, and functionality--as a chef, think about how fun it is for me to work with so many new ingredients! Let me leave you with this thought - if even ten percent of you ate edible insects just once a week, even that would have a great impact on the environment. Respectfully yours, Chef Joseph Yoon
I am rooting for you. Will have to give your place a try when I’m in New York next. If you have a restaurant that is

In Brazil we do have some insects in our culinary, mainly the queen ant "tanajura" abdomen fried in a farofa. Actually, I tried crickets once on a research, where they were repeating the testings (us trying crickets) on different places around the world to see the acceptance of people around consuming insects. The crickets would be better with seasoning, cause without them they taste like dog food.

You say that, but I promise you've eaten something with a similar flavor profile and weren't bothered, so if you got over the mental block, you'd be fine. As for snails, I swear to you, they taste SO MUCH like clams. If you like clam chowder at all, and if someone made it with snails without telling you, you wouldn't think anything of it.

I don’t get why people say “your truth” there’s just the Truth no?
The phrase "his truth" and/or "my truth" clearly tell me that it's not actually true
So people talk about how bugs have an amazing amount of protein compared to meat or other foods, the way we ESTIMATE protein in food is by nitrogen content.
Bugs, by mass, contain a huge amount of chitin, the exoskeletons of crickets and the skin of worms and stuff, and chitin is a polysaccharide with amine groups attached, so it's got a pile of nitrogen in it. It is completely indigestible and it's NOT protein.
Some may say the people measuring protein content wouldn't make that mistake, but obviously we can't trust them to accurately represent their findings, they're the people telling you to eat boogs after all.
Incidentally, chitin is an antigen in humans, it causes an immune reaction because the body uses its presence to infer a parasite or a yeast infection, so whilst it won't inherently "give you" cancer or any other disease, eating lots of chitin would very likely reduce your immune response to other illnesses.

I’d try it. I think the main thing that’s off-putting to me isn’t that they’re bugs necessarily, it’s more the fact that you’re eating a creature whole. I like chicken, but if you just handed me a roasted chicken with all the organs and such still inside, I’d have a hard time eating it even if I knew it was fine to do so.
Haven't you had oysters, mussels, scallops, shrimp, crawfish, or anchovies? Plenty of creatures are cooked and/or eaten whole including organs, even in the "West". Try crickets - I'd rate them in taste above even things like chicken. Everything else I've tried (tarantula, silkworm, water bug, etc.) is more of an acquired taste, but crickets are genuinely delicious at first bite.
@@ehqueI personally agree with the other guy and eating things whole in general makes me feels weird, despite how delicious they are. Insects, scorpions, spiders, crabs are all arthropods but belong to different classes.
Insects - insecta
Spiders and scorpions - arachnida
Crabs and shrimps - crustacea.
Technically yes but they are still more closely related than other insects and stuff
@@anthraxmacabre5200 eh, not really. simple way to tell is that spiders and scorpions have 4 pair of legs, where adult insects only have 3 pairs, hence the group name "Hexapods"
Arthropods have mainly 4 groups
Insects (Hexapods);
Myriapods (including centipedes and millipedes);
Arachnids (including spiders, mites and scorpions);
Crustaceans (including slaters, prawn and crabs).
Spiders are not related to crabs nor other insects, if it relates to anything it relates to scorpions.

I am a bit sceptical about whole insect diet - but - your comment gave me an idea. Those would be realy great at a halloween family gathering - suprise your guests with some fried tarantua!
Imagine this at Halloween
what do you have ?
spider tempuras
oh cool, spider shaped tempura, how you did it ?
... actual spider, tempura
@@CatalinaEX he would be so good at Halloween party good food but scary
You will eat ze bugs.
i feel like he's being held at gunpoint every time he applauds his own meal
Klaus schwab when he sees this: 🤯rut-row! 🤪AWOOOGA!😍clean up on isle my pants!
Usually when someone says bugs are the protein of the future they say it in a very cynical and unhanded way.
You're the first person I've seen who has actually made bugs look appetizing
There use to be a street food stand in London (candem town) that sell all sort of food with insects ... dude the roasted insects themselves had such a nice yummy smell, like you'd never expected it. Hope they are still there.
We’re well on our way to radroach meat kebabs and mirelurk cakes
I think hes just doing that because its a "food/cooking" channel. I think when we do get to the point where we have to be eating bugs it probably wont be for taste it will be for necessity. However crickets with flavor powder on them arent the worst thing once you get over the legs in your teeth.
@@ngonzales3781 I actually got to try some of the treats he made. The one I tried was an ant chocolate and it was very good but the texture of the ant inside was bit weird. I wish I could try some of the savory stuff by him
@@HinaB358 thats because you're literally eating chocolate lol
Im not eating ze bugs, Klaus Schwab
Yes you will, what are you going to do about? Obviously you can’t stop them.
@@SpokeNyan1390let's all roll over and play dead like you then
This dude would win Fear Factor hands down 😂!
You should do a method mastery named 'How to grind every herb and spice'. It would showcase the way to grind, grate or powder the spice or herb. The tools used could include a grater, grinder, microplane and others. Then what you would use that spice for.
That could be an idea for the next episode
Please pin this we need this
This would also include what does most of the good for and how to use them. I want to add more spices and more variety in my cooking but I literally have no idea where to start and what to do with them. And I don’t wanna start throwing in random spaces and ruining food. But I also can’t seem to find any like, usable pieces of information that help me understand what kind of spices go and what kind of foods or flavors
@@dandydwi6_6 I 100% agree
Ayaan, I am the current director of Method Mastery and I have to ask. Are you psychic? That is exactly what our next episode is.
Tempura fried tarantula?
What's next, a termite burger?
Oh...
underrated comment
My lord… no…
you guessed it
Ive tried fried tarantula and would recommend it
Eating crickets is actually super common in my culture (I’m indigenous Mexican and Afro-Taino ) it’s so tasty. They taste like a nuttier version of cucumber for me. These recipes inspire me to try different variations, especially the ant guacamole!
You vil eet zee bugs and you vil be heppy!
I find that there is such a stigma against bugs that even though I want to eat them, I am compulsively disgusted by them. With that being said, I find the spread of knowledge on how to eat these bugs is unbelievably important for sustainability.
This is what I've been thinking too. It may be how the idea of being disgusted by insects are normalized, and now its hard to want to eat them even though that tarantula tempura looks amazing
Know turn them into a product that dosent show or let then know and you may have formula for success
Honestly, I genuinely wanna try all kinds of food at least once, including bugs, but coming from a poor and abusive home, bugs being in food normally means that food is bad, and when you've been forced to eat weevils or you've seen maggots all over your kitchen as a child then it gets hard to get over the idea of eating bugs and it is something that grosses me out a lot, I hope it's something I can get over in the future cuz I find this genuinely interesting
Couldn't have articulated that any better myself!
I love friend crickets but I couldn't see this being a normal food for me
Never came this close to being convinced to eat these bugs. Nice presentation and very educational. The chef's enthusiasm and talent has me rethinking my bias against eating land bugs.
He called the eggs pop rocks- help- 2:36
@@nyxthedragon7534 he called the formic acid the ants produce “pop rocks”. only queen ants produce eggs, so there wouldn’t be eggs in the ants he ate. also they’re so small anyway i don’t think you’d notice eggs inside them anyway
I will only eat locusts and a specific breed of I had to.
Every time I see someone eats an insect, it reminds me of how protein blocks were made in the snowpiercer movie
Can't wait when they start introducing human meat!
No klaus schwab, we will not eat ze boogs
Ive only eaten crickets and meal worms. Mealworms are definitely my favorite because once you get over the ‘worminess’ they are delightful
"if we eat sea bugs, why can't we just eat land bugs too?"
I'll never look at seafood without being like damn this giant cockroach is eaten as a delicacy.
I always thought this way, how did we normalize crab and being used to it but not roaches?
@@Doubl_Troubl they are not the same
@@bryantnojang709 they are pretty much the same. The one is just more normalised. Crab used to be a kind of disgusting peasant food though.
@@wetworms. That's because at the time, shellfish were eaten whole - shell and all. In medieval prisons they'd take whole crabs/lobsters, crush them up into a mush littered with shell fragments, and feed it to prisoners. Don't know whether they cooked it though.
@@Doubl_Troubl crabs, prawns, lobsters, crayfish etc are shellfish and quite delicious, while cockroaches and other bugs are just plain disgusting and lacking in flavor
a crab in a pot of boiling water is good, while an insect in the same place would have u throw the whole pot away

Even shellfish was seen historically as a desperate man's food, until recently when we learnt how to cook em right
