Used to work at a small family-owned restaurant called East Coast Eats in Las Vegas. One time, an English gentleman came in for our fish and chips, but was fully expecting to be disappointed, as he had yet to find a decent plate of it stateside. After setting it in front of him, I watched from behind the counter as he took the first bite, chewed, paused... and then tucked in with gusto, looking a bit misty-eyed. After, he thanked us profusely and said he'd be back. That made me happy. :)

I lived in Japan for a year and entire time I was there, I was craving my cultural food. I tried going to different Polynesian inspired places in Tokyo but I never found a place that reminded me of home. One day, my family came to Japan to meet their grandkids. My mom brought her own seasonings (😅😅) and cooked for me. I was emotional and in tears entire time I was eating. I know her recipes by heart but could never cook it the way she do

My Californian bf when we finally found real Mexican food in my small southern town. He’s the biggest food critic I know. He just looked down at his plate all quiet and teary eyed and said it tasted like home. Anytime we get Mexican now we go to that restaurant
Me and a coworker were repairing a cell tower in the middle of nowhere OK. We stopped at this little bbq place in a town with a population of maybe 500. The door was locked but as we walked away somebody opened it and asked if we were hungry. We went inside and sat down, the little old black lady that had to be around 90 told us we were getting pan fried chicken, greens, pinto beans, and banana pudding for dessert. When I say it was the best thing I have ever had I mean that chicken was 100% and still is the best thing I have ever eaten. A life altering meal. The single best meal I have ever had.

Grew up italian as my mother is first generation, grew up in the south as well so all through life I am forced to try anyone and everyone's lasagna pr country friend steak. Nothing has beat Mmy families recipes but I'll find something that comes close some time. Planning a trip to Naples to see family soon so hopefully I'll find true memories in Italy

I’m the same way with my granny’s recipes. Her buns and perogies take me back. My dad’s Chile recipe, mom’s meatballs… even making the green borscht I had while visiting Ukraine brings me back to that little cafe😊 cooking can be magical❤

@@ItzSeannyy Same😂. Although that movie must be pretty legit because it was Anthony Bourdain’s favorite film that involved cooking. He said it was the most accurate portrayal of being a chef/working in a kitchen he’s ever seen on screen. Down to the burns on the forearms of the chefs because they’re always reaching over boiling pots and stuff. After I heard how special that movie was to him, it made me love it so much more🥹🐭
I think that us italians are very emotionally passionate people when it comes to art, food, and family because it is the closest thing we can think of what love really is. Even now as I watched this video I was teary eyed because I knew what he was thinking.

These moments are why I spent soooo many years cooking for people who never knew, cared, or even though of who it may be in the back preparing their food. The kitchen is one of the most stressful and under paid places to develope amazing life skills. Most of us chefs are strictly passion driven. Looking out from beyond the line and seeing the depth of expression and joy on a guests face after all of the years of hard work is truely humbling. Though more pay, benefits, and time off would be great too!

I'm a pretty good cook. One night, a friend came home with me after the theater and we both realized that we hadn't had much for dinner. I went into the kitchen to see what I could come up with. I threw together a Quiche Lorraine and opened a bottle of white wine. He took his first bite and burst into tears. When I asked what was wrong he said that it tasted exactly like his last lunch in Paris before he boarded a plane to come back to the US, after 5 years in the military, 15 years earlier. That was the best compliment I ever got on my cooking.
Im the same way with genuine ramen, or udon. Since i grew up in japan its one of those things that just takes me back to when my dad and i would stop at the ramen shop when we were walking home from school. Its magical.

I’m a huge Udon fan. I visited Yokosuka and there was a small noodle shop. Easily the best Udon I have ever had and nothing back home has ever lived up to that

I worked at a catering company when I was younger where I would make this every two months. There was so much left over at the end of the day with all these amazing toppings and seafood and we were allowed to take as much as we wanted home.

I think these cheesy pasta dishes work better on fresh pasta which give up starch faster than cooked dried pasta and so the starches help the cheese emulsify into a sauce rather than break into a hot mess.

I had the same reaction too once while at a restaurant trying a pasta dish: I remember clearly I closed my eyes, 😊pinched my nose to the right and felt an intense pleasure and joy of life comparable to my first time loving someone. There were plenty of tears too coming down my cheeks. The joy was from the pasta, the tears from seeing the bill.

The greatest dish I’ve ever had in Italy (Florence). Watched the pasta get made from fresh and then dipped in the melted cheese of the Grana Padana.
The cost of that cheese will actually make anyone cry.

The pasta they put in there has just come out of BOILING water - it has usually been at that temperature for long enough to be completely sterile.
The restaurant probably only does this on very busy trade nights- like Saturday Nights.
So the whole wheel is used.
The rind at the end can go to making all sorts of things even a magnificent minestrone stock.

Вы очень наивны, если не думаете что туда не могла попасть шигелла(вы не увидете невооруженом глазом), ну или что другое. Сыр не стерелизуют, это просто не гигиенично, зато зрелищно.
Поэтому в нормальных ресторанах, кусочками отрезают, чтобы не испортить продукт и не отравить поситителей, а не целую головку сыра на месяц.

@@lienbijs1205 That's a bit more of a cultural difference as well as a chemical difference. Ingredients used in the US tend to be a lot more processed and also contain more salt. That's why some people who go overseas and eat at local Italian restaurants will sometimes feel like there isn't enough salt in the food, or there isn't enough flavor. Our taste buds are just more used to the increased amount of flavor from the increase in salt. Also, people who grow up eating certain types of meals will usually find the food they grew up with to be very memorable, and will feel a sense of nostalgia when eating something that tastes similar. For example, a person who grew up eating mostly Asian style cooking will tend to crave asian cuisine more than other styles of cooking. One more thing, when cooking food for yourself you have more leeway to adjust the flavor to your liking, so that could also be why you prefer your own food.

What many Americans fail to understand is that more doesn't necessarily mean better! in Italy we don't prepare pasta in a wheel of Parmesan! On the contrary, most of the typical dishes from Italy are made with excellent but poor ingredients. Italian tradition does not allow waste or exaggeration. another example are meatballs which in Italy are mixed with stale breadcrumbs and minced meat, whereas in America they are literally prepared with only meat. believe me it's not the same thing
