Level 3...That's not hollandaise sauce....that's mayo with butter. Your supposed to cook the egg (not scramble) over double boil. Also that steak is raw not med rare. Sous vide is overrated. Pan, butter, garlic, fresh herbs, S/P. Sear baste sear baste, check doneness with finger, let rest 5 min or longer. Slice and eat. Done.
