  • People told me there was nothing to do in Latacunga Ecuador other than drive to Cotopaxi and Quilotoa - they were wrong.
Latacunga is a beautiful small city in Ecuador with so much to do and lots of traditional Ecuadorian food. It's only an hour from Quito Ecuador and a fantastic trip.

Hi I'm Ayngelina and my full time job is my site BaconisMagic.ca it's all about the best food around the world and how to make it at home.
In 2010 I left a job in advertising, 5 year relationship and sold all my possessions to travel the world. In the last ten years I've had some crazy experiences and even owned a restaurant in Toronto at one time. And prior to 2020 I had been based in Cuba.
When the world shut down I returned to Canada and decided to teach myself video. I wanted to share more than just words and photos but to show people the adventures I have learning about food around the world.
I'm not married. I have no kids. But I do have a lot of local friends who help me discover the best local tips.

You’ve been to places in Ecuador that I’ve never been and now I want to go back to my country and enjoy everything it has to offer. I think you may be surprised. Migration and people moving back really changed Ecuador and so it's not quite like it's neighbours, there is a middle class that you don't see in different countries.

I am getting over a lower back issue right now, but when I get better, I want to go to Quenca. My question to you, do I have to be very mindful of the pandemic? I am really not to much concern, because in Texas and while living in NM I never wore a mask and never caught the virus. Even being surrounded by people with the Virus.

Thanks so much for taking the time to write a comment fellow Canuck! About Ecuadorian food I choose dishes that I know I will like or think I will like based onw hat is in them. You rarely see me eat dessert because I just don't like it so unless it's some traditional Indigenous dish I pass.
But I avoid all the tourist spots and international food in Ecuador because I know it's going to be mediocre. There are enough gringo websites, Facebook groups and CZcams channels that cover it, my goal is to get people out of their comfort zone and into Ecuadorian owned small businesses.
I did make a dedicated video about Bolon de Tere In Guayaquil only because it's so controversial at $11 for a terrible version of street food. But I don't censor the videos, I just really love the places we go.
In an upcoming video in Little India in Malaysia you will see that I didn't love a sweet snack that I tried nor did I love lunch - it was good but not as great as what I had in India - but even then when dishes move to a new country they need to adapt to local tastes so it wasn't the fault of the restaurant but my expectations.

But I'm in Asia right now where I can't place some of the flavours so on camera sometimes I think I look confused as my brain is processing things. I will say this, last night I realized that two of the common herbs served in dishes in Vietnam I absolutely detest. I'm trying to find the names of them so I can share on camera.

AJI, is the name for a hot sauce but it varies region by region. In the coast it tends to be hotter and is usually a pickled onion and vegetable base. In the Andes it is fruitier, made with tree tomato and usually not as hot. It does add spice but also an acidic element that seasons food. The tree tomato version is my favourite in the world, but it's also so interesting to travel and see how people change it around the country. Another great one is made with passionfruit aka maracuya.
